BLONDIES FROM AMERICAS TEST KITCHEN
Adding white chocolate chips plus semisweet chocolate chips gives ATK's blondies a rich, full flavor.

Steps:
- Adjust oven rack to middle position and heat oven to 350 degrees. Make foil sling for 13x9 inch baking pan (or simply use parchment paper). Spray with non-stick baking spray or grease with butter.
- Whisk flour, baking powder and salt together in a bowl. In medium bowl, whisk sugar and melted butter together until combined. Whisk in eggs and vanilla. Using rubber spatula, fold in flour mixture until just combined. Fold in pecans and semisweet and white chocolate chips.
- Scrape batter into prepared pan and smooth top. Bake until top is shiny and cracked and feels firm to touch, for about 25 to 30 minutes, rotating the pan halfway through baking.
- Let blondies cool completely, for about 2 hours. Using foil overhang or parchment overhang, lift blondies from pan. Cut into bars and serve.

- Preheat the oven to 350F degrees. Line a 9x13 inch pan with parchment paper, or aluminum foil and lightly grease.
- In a large bowl, whisk together the melted butter and sugar (or beat with an electric mixer.
- Whisk in the eggs and vanilla extract. You don't want the butter to look like it's melting out at this point.
- Stir in the flour, cornstarch and salt, ensuring that there are no flour clumps.
- Fold in the chocolate chips/ mix-ins.
- Spoon the batter into the prepared pan and smooth the top.
- Bake in the preheated oven for 24-28 minutes, or until the top looks set and shiny and an inserted toothpick comes out clean or with a few damp crumbs.*
- Cool fully before slicing.

- 1. Grease and flour a 9x13 baking pan. Preheat oven to 350 degrees. Sift together flour, baking powder, baking soda and salt in a medium bowl and set aside.
- 2. In a microwave safe large bowl, add 2 sticks butter and brown sugar. Microwave on high. Remove from microwave and stir until butter and sugar are melted and gooey. Cool to room temperature.
- 3. Slightly beat eggs and stir into brown sugar and butter. Add in vanilla. Add the flour mixture into this mixture all at once and stir rapidly with a large spoon or spatula just until blended. Do not over stir. Fold in butterscotch chips and nuts.
- 4. Spoon and smooth into prepared baking pan. Bake in a preheated 350 degree oven for 35-40 minutes or until toothpick tests clean. Cool in pan.
- 5. Cream Cheese Icing: In a medium bowl with mixer at meduim speed,beat together cream cheese and butter until light and fluffy. Gradually add the powdered sugar and vanilla. Beat for one minute or until frosting is of desired consistency.
- 6. Frost the top of cooled blondies with cream cheese icing and sprinkle top with chopped nuts. Cut into small squares. Tightly wrap and refrigerate leftovers.
