Chilean Meat Pie image

This pie is a little different there is no crust the binding is the corn pureed. It has a little bit of a kick to it but very good a flavorful.

1 lb ground beef
1 tablespoon olive oil
1 large onion (chopped )
1 large dried crushed aji panca chile (or new mexican )
1/2 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon oregano
10 large black olives (sliced )
2 cups corn
1 tablespoon milk
1 teaspoon sugar
1 tablespoon olive oil

Steps:

  • In heavy skillet, brown the meat drain off the fat and remove.
  • to a 3 - 4 quart casserole dish and set aside.
  • Add oil to the skillet and saute onion, chile, cumin, paprika, salt, pepper and oregano.
  • Add the sauteed mixture to the meat and mix.
  • Arrange the olives over the top.
  • Put corn, milk, and sugar in blender and puree.
  • Heat a bit of oil in a skillet, add pureed corn and simmer until the corn mixture starts to thicken.
  • Pour this mixture over the meat mixture.
  • Bake in 350 degree oven for 45 to 60 minutes or until top is brown.
  • Remove from oven and let sit for 10 minutes before serving.

This is a variation of Chilean empanadas that I made to simplify my husband's favorite recipe from his home country. The meat filling is a harmonious mix of beef, raisins, and olives that will make your tongue tingle when you take your first bite. And don't be surprised when you've eaten more of the pie than you had planned.

¼ cup vegetable oil
2 onions, chopped
1 pound ground beef
1 tablespoon paprika
1 ½ teaspoons white sugar
1 cube beef bouillon
½ cup hot water
1 teaspoon dried oregano
salt and ground black pepper to taste
1 cup black olives
½ cup raisins
2 cups all-purpose flour
1 teaspoon salt
1 pinch white sugar
⅔ cup shortening (such as Crisco®)
6 tablespoons cold water, or as needed
3 eggs, beaten

Steps:

  • Heat oil in a skillet over medium heat; fry onions until transparent, about 5 minutes. Add ground beef, paprika, and 1 1/2 teaspoons sugar. Cook and stir until beef is browned, about 5 minutes more.
  • Dissolve bouillon cube in hot water; stir into beef mixture. Add oregano, salt, and pepper. Simmer over low heat until flavors combine, 5 to 10 minutes. Stir in olives and raisins; remove from heat and let cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Sift flour, 1 teaspoon salt, and 1 pinch sugar together in a bowl. Cut in shortening with 2 knives or a pastry blender until the mixture resembles coarse crumbs. Add cold water, 1 tablespoon at a time, mixing until dough sticks together. Shape dough into 2 equal balls. Roll out crusts to fit a 9-inch pie pan. Place bottom crust in pie pan.
  • Spoon filling into pie crust; use a slotted spoon to avoid transferring oil. Pour in beaten eggs; cover with top crust. Pinch edges together; cut 4 slits in the top for vents.
  • Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C); bake until golden, 35 to 40 minutes more.

1 1/2 lbs rabbit or 1 1/2 lbs venison steak
1 cup grated cheese
1/2 cup currants (or any other dried fruit) or 1/2 cup raisins (or any other dried fruit)
4 egg yolks
1/2 teaspoon ground cardamom
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon black pepper
1/2-1 cup broth (whatever most of the meat is)
1 dash cooking wine
9 inches pie shells (with lid)

Steps:

  • Broil the meat till very rare, but cooked through.
  • Cut it into small cubes.
  • Mix with all other ingredients except the pie shell.
  • For the broth, just add enough to make the mixture a little wetter.
  • Put the mixture into the pie shell.
  • Be sure the shell lid is sealed, and punch some holes in the top with a knife.
  • Bake at 350 F for 45 minutes to an hour, till the shell is golden brown.
  • Makes 6-8 slices, and can be served any temperature.
  • It's easiest to cut when cold.

5 cups potatoes, peeled and cubed
2 tablespoons butter, or to taste
salt to taste
2 eggs, beaten
½ cup vegetable oil
1 clove garlic, minced
1 onion, diced
2 tomatoes, diced
1 tablespoon tomato paste
1 pound ground beef
2 tablespoons shredded panquehue cheese
½ teaspoon chopped fresh parsley
salt and black pepper to taste
1 pinch cayenne pepper

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Place the potatoes into a large pot and cover with salted water. Bring to a boil; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the hot potatoes with butter and salt. Let cool until just warm; stir in the beaten egg until smooth.
  • Meanwhile, heat the oil in a large skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes and tomato paste; continue cooking until the tomatoes soften and begin to lose their shape. Add the ground beef and cook until browned, about 10 minutes. Stir in the panquehue cheese and parsley; season to taste with salt, black pepper, and cayenne pepper.
  • Spread half of the mashed potato mixture into the prepared baking dish. Cover with the ground beef mixture, then spread the remaining mashed potatoes over the beef to completely cover.
  • Bake in the preheated oven until the potatoes are hot and the top is lightly browned, about 40 minutes.
