I loved peanut butter brownies as a kid but my adult taste buds now find the available recipes overly sweet with a mild peanut flavor. This updated recipe relies on powdered peanuts to boost peanut flavor. I've reduced the sugar by about 1/3 from the typical recipes. This recipe reflects the best of three alternate variations that I attempted.

¼ cup powdered peanut butter (such as PB2®)
1 teaspoon baking powder
¼ teaspoon salt
½ cup peanut butter
⅓ cup butter
½ cup white sugar
¼ cup brown sugar
2 eggs
½ teaspoon vanilla extract
½ cup dark chocolate chips, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch baking dish.
  • Stir flour, powdered peanut butter, baking powder, and salt together in a bowl.
  • Beat peanut butter and butter together in a bowl until creamy. Gradually add white sugar and brown sugar; beat until fluffy. Add eggs and vanilla extract; beat until smooth. Stir in flour mixture and chocolate chips until incorporated into batter. Spread batter into prepared baking dish.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool on a wire rack.

2 cups white chocolate chips
Red, white and blue candy sprinkles

Steps:

  • Begin by gathering your ingredients.
  • Line a mini muffin tin with mini cupcake wrappers.
  • Place the peanut butter in a microwave-safe bowl and microwave for 30 seconds. Stir and continue to heat in 30 second intervals until melted completely.
  • Sift the powdered sugar into the bowl of peanut butter. Mix the peanut butter and sifted powdered sugar together until thoroughly combined.
  • Using a teaspoon, measure out the peanut butter filling into 20 equal portions and roll into 20 balls. Gently press down on the peanut butter balls to flatten them.
  • Microwave the white chocolate chips for 30 seconds. Stir and continue to heat in 15 second intervals until the white chocolate is smooth. (Note: Make sure your bowl and spoon are completely dry. Any wetness will cause the chocolate to seize.) Fill each mini cupcake wrapper with 1 teaspoon of melted white chocolate.
  • Place the peanut butter ball on top of the chocolate. Top with 2 additional teaspoons of melted white chocolate.
  • Immediately sprinkle red, white and blue candy sprinkles on top. Place in the refrigerator for 30 minutes to set.

2/3 cup unsalted butter
6 oz white chocolate (, use baking white chocolate not candy melts)
3/4 cup granulated sugar
1 teaspoon vanilla
1/4 teaspoon salt
2 large eggs (, room temperature)
1 and 1/4 cup all-purpose flour (, spooned & leveled)
1/3 cup white chocolate chips
1/3 cup semi-sweet chocolate chips (, or dark)

Steps:

  • Preheat the oven to 350F degrees.
  • Line an 8x8 inch baking pan with aluminium foil & spray with non-stick cooking spray and set aside.
  • In a medium sized microwave-safe bowl, melt the butter and white chocolate in short 20 second bursts. Stir after each 20 second burst.
  • After both the butter and white chocolate are melted, cool for 5 minutes.
  • Whisk in the granulated sugar, followed by the vanilla, eggs and salt.
  • Gently fold in the flour.
  • Pour/spoon the mixture into your prepared pan and bake for 20-24 minutes, or until the top is set and the sides are starting to pull away from the pan. An inserted toothpick should come out with a few moist crumbs, or clean.
  • Allow the brownies to cool fully in their pan.
  • To serve, lift the brownies out of the pan using the aluminium foil edges. Carefully peel back the sides of the foil, then cut into 9 or 12 squares.
  • In a small bowl, melt the white chocolate chips in the microwave in short 20 second bursts, stirring between each burst. Drizzle the white chocolate over each square. Repeat the process with the semi-sweet chocolate chips.

If you love peanut butter then this is for you, these are moist, rich and they bake out perfrectly, I made mine in an 11 x 7-inch baking pan but you can also bake it in a 13 x 9-inch pan and adjust the baking time slightly --- you don't need a mixer to make this everything is mixed by hand and you won't even need icing on these, just serve these topped with ice cream, yield is only estimated.

She said it originally had come from an issue of Bon Appetit magazine. She cut these into 25 very tiny cubes,because they are quite rich. You can cut them as large or small as you like- I generally get 16 small brownies out of one batch.

6 tablespoons sweet unsalted butter, at room temperature
1/2 cup peanut butter (I use creamy)
1 1/4 cups brown sugar, packed
2 large eggs

1/2-3/4 cup semi-sweet chocolate chips

2/3 cup (95g) all-purpose flour
1/3 cup (35g) unsweetened cocoa powder (I use Dutch-processed)
1/2 teaspoon salt
7 oz. (200g) bittersweet chocolate, coarsely chopped
2/3 cup (150g) unsalted butter, cut into pieces
3 large eggs
3/4 cup plus 2 tablespoons (175g) granulated sugar
7 oz. (200g) white chocolate chips or chunks

Steps:

  • Preheat oven to 350°F/180°C. Line a 9x13 inch pan with parchment paper or aluminum foil, leaving enough overhang on the sides for lifting the brownies out after baking.
  • In a small bowl sift together flour, cocoa powder, and salt. Set aside.
  • In a medium heatproof bowl, place chocolate and butter. Heat mixture in the microwave in 20- to 30-second intervals, stirring between each interval, until melted. Alternatively, you can set the bowl over a saucepan of simmering water, stirring occasionally. Set aside.
  • Using a mixer fitted with the whisk attachment, whisk eggs and sugar on high speed until thick and pale, 4-5 minutes. Turn off mixer. Slowly add in chocolate mixture and fold, using a rubber spatula, until combined. Add flour mixture and keep folding just until combined. Fold in white chocolate.
  • Pour batter into prepared pan and smooth the top. Bake for 15-18 minutes. Don't open the oven door in the first 13 minutes of baking. Mine are ready in 15 minutes, it sounds too short but these brownies aren't very thick and it's important to keep them fudgy, so be careful not to overbake. A toothpick inserted into the center of the brownies should come out moist, not dry. Let brownies cool completely on a wire rack. You can refrigerate until set for easy cutting. Lift brownies out of the pan using parchment paper and cut into bars. Slightly warm they're heavenly!
  • Store brownies at room temperature or in the fridge in an airtight container for up to 4 days. Serve warm or at room temperature. Brownies can be frozen for up to 2 months. Thaw them overnight in the fridge.
