BEST-EVER OATMEAL COOKIES RECIPE
Chewy, tasty, and healthier than a lot of other options, my Best-Ever Oatmeal Cookies will knock your socks off!

Steps:
- Preheat your oven to 375°F (190°C). Then line to large cookie sheets with parchment paper and set aside.
- In a medium bowl combine the dry ingredients, apart from the sugars. Set aside.
- In a large bowl cream together the butter, white and brown sugar. Once light and fluffy add the egg and the vanilla and whip until combined
- Add the dry ingredients into the wet and mix with a spatula until the flour has just absorbed, do not over mix.
- Lastly, fold in the oats and the raisins.
- using a tablespoon measure scoop heaped tablespoons of the cookie dough onto your lined cookie sheet, leaving about 1 1/2 to 2 inches between the cookies.
- Bake for about 9-10 minutes or until the cookies are golden brown and slightly risen. Don't be tempted to bake for longer or you will lose the gooey center.
- Allow the cookies to cool slightly before transferring onto a wire rack to cool fully. Enjoy!
- Store in an airtight container for up to 3 days at room temperature.

Chill for 30 minutes. , Shape into two 1-1/2 in. rolls; wrap tightly in waxed paper. Chill for 2 hours or until firm. , Cut into 1/2-in. slices and place 2 in. apart on greased baking sheets. THE BESTEST BUTTER COOKIES (ROLLED)
My mother in law has been making these for Christmas for years and years. I make them for all holidays, using different cookie cutters for whatever occasion. They are the best when they are frosted, but sometimes I just sprinkle on colored sugar before baking. I call them "Play Dough" cookies because that's what the dough smells like to me! (Don't worry, they don't taste like Play Dough :) Chilling time is not included.

- Add egg and vanilla and beat well.
- Combine baking powder and flour.
- Add gradually to creamed mixture.
- Chill until firm.
- Preheat oven to 400 degrees.

- Bake for 6 to 8 minutes.
- When cool, decorate with frosting or icing if desired.

- Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
- Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
- Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
