CHILI-GARLIC SHRIMP WITH GINGER RICE

Chili-Garlic Shrimp With Ginger Rice image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 10

4 thin slices peeled fresh ginger, plus 2 tablespoons minced
1 1/2 cups jasmine rice
1/2 cup low-sodium chicken broth
1/3 cup ketchup
2 tablespoons chili-garlic sauce
1 tablespoon plus 2 teaspoons oyster sauce
1 tablespoon cornstarch
1/4 cup vegetable oil
1 1/4 pounds large shrimp, peeled and deveined
1 12-ounce bag broccoli florets (about 6 cups)

Steps:

  • Bring 2 1/4 cups water and the ginger slices to a boil in a medium saucepan over high heat. Stir in the rice and return to a boil. Cover, reduce the heat to low and cook until the water is absorbed and the rice is tender, about 18 minutes. Fluff with a fork, cover and set aside.
  • Meanwhile, mix the chicken broth, ketchup, chili-garlic sauce, oyster sauce, cornstarch and 1/2 cup water in a measuring cup; set aside. Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the shrimp in two batches and cook until no longer translucent, 1 to 2 minutes per side; remove to a large bowl.
  • Add the broccoli and 1/2 cup water to the skillet and cook, stirring occasionally, until crisp-tender and the water has evaporated, about 3 minutes. Add to the bowl with the shrimp.
  • Add the remaining 2 tablespoons vegetable oil to the skillet. Add the minced ginger and stir-fry until golden, 30 seconds to 1 minute. Pour in the prepared sauce and simmer until thickened, about 2 minutes. Add the shrimp and broccoli and toss to coat, adding a splash of water to loosen, if needed. Serve with the rice.

SWEET CHILI CHICKEN WITH RICE

Sweet Chili Chicken With Rice image

This is a super simple meal that has wonderful flavour and can either be made for a main meal or as a light meal depending on the amount of rice cooked. As we are trying not to eat too many carbs at the moment and this was for a main meal I served ours with less rice and some sauced bok choy which paired really well. As you can only buy lemon grass in such large quantities here I have found a brand that is already made into a paste. I used to always use fresh but ended up throwing half of it away before I could use it, so I asked at my local Asian grocery store once what she had and she told me about the paste. It tastes just as good but to me it is more concentrated than fresh so I used 1 Teaspoon in this recipe, I would use 1 Tablespoon if using fresh.

CHILI WITH RICE

Chili With Rice image

I didn't know what to call this recipe because it is one I have made up. Or maybe I adapted it from something many years ago. This is a nice spicy chili dish that is prepared in one large skillet. Very tasty and good comfort food.

Provided by Reggies Mom

Categories     One Dish Meal

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 12

1/2 cup onion, chopped
1 lb lean ground beef
1 (11 ounce) can corn
1 (28 ounce) can tomatoes
1 cup long grain rice
1 1/2-2 cups water
1 -2 Oxo beef cube
chili powder
salt
pepper
1 teaspoon oil
2 cups boiling water

Steps:

  • Chop onion and begin browning in large skillet in the oil for a couple of minutes. Add the ground beef and brown.
  • While the meat and onions are browning, bring a pot of water to a boil and add the long grain rice. (This is just to pre-cook the rice) Keep on a gentle boil for approximately 15 minutes, drain.
  • To the skillet with the browned meat.
  • Add the entire can of tomatoes including the juice, breaking up the large pieces. Add the can of corn which has been drained and add the partially cooked rice.
  • Add approximately one cup of the beef stock. Season with the chili powder, salt and pepper to taste.
  • You should have a fairly runny mixture at this point. Don't worry, the rice will soak up the liquid as it finishes cooking.
  • Cover the skillet and allow to simmer for about 1/2 hour or until the rice is cooked through.
  • I like to taste it and add more chili powder to suit my taste.

Time 1h10m

Yield 8 servings

Number Of Ingredients 17

3 teaspoons olive oil
1 medium onion, diced
1/2 red pepper, diced

1 clove garlic, minced
1/2 tablespoon chili powder
1 teaspoon ground cumin
1 (15-ounce) can whole or chopped tomatoes
1 cup broth (vegetable, chicken, tomato juice or water)
1 (28-ounce) can black beans
1 ear corn, kernels removed
Coarse salt and freshly ground black pepper
Perfect Microwaveable Rice, recipe follows
2 cups long grain rice
3 1/2 cups water or stock
1 1/2 teaspoons butter or oil
Salt and freshly ground black pepper

Steps:

  • In a large pot, heat the olive oil over medium high heat. Add the onions, peppers, carrot, and garlic, cook stirring often, until vegetables are tender, about 5 minutes. Add chili powder and cumin, and cook 1 to 2 minutes more or until they smell delicious.
  • Add the tomatoes, broth, black beans and corn to the pot with the vegetables. Bring to a boil, reduce to a simmer. Cook 10 to 20 minutes, until flavors are well combined. Taste and adjust seasonings with salt and pepper.
  • Serve over rice.

Microwave on high, uncovered, for 10 minutes. Microwave on medium-low, uncovered, for 15 minutes. Do not stir the rice at any time during the cooking process. Season with salt and fluff with a fork just before serving.

CROCKPOT VEGETARIAN CHILI WITH BEANS AND BROWN RICE

Crockpot Vegetarian Chili With Beans and Brown Rice image

Somewhere between chili and borracho beans. Delicious, easy to prepare, nutritious, great for week lunches. Cooking beans in a crock pot turns out perfectly cooked, creamy beans every time. Servings are just a guess-sorry! It filled a medium size crock pot (curry cooker in the Middle East). Add more chipotles in adobo if you like spicier food.

Provided by Papagayita

Categories     One Dish Meal

Time 8h15m

Yield 12 serving(s)

Number Of Ingredients 13

2 cups dry mixed beans (I used a mix of pinto and cranberry)
1 large onion, coarsely diced
3 garlic cloves, smashed (more or less to preference)
1 chicken bouillon cube (ham seasoning if you have it! sub veg bouillon if vegetarian)
6 cups water
1/4 cup tomato paste
1 tablespoon turmeric
1 tablespoon ground cumin
1 tablespoon paprika
2 tablespoons chipotle chiles in adobo, diced (~2 chiles)
1/2-1 cup diced tomato
1 cup cilantro, coarsely chopped
1 cup brown rice, cooked

Steps:

  • 1. Combine beans, onions, garlic, bouillon, and water in crock pot. Cook on LOW for 6 hours (or more-I cooked the beans overnight).
  • 2. Add remaining ingredients except rice, continue to cook on low for 1-2 hours. Add more water if needed, you want it to be pretty soupy since the rice will absorb a lot of liquid.
  • 3. Just before serving, add brown rice and stir to combine.
  • 4. Garnish with chopped cilantro, a sprinkle of sharp cheddar, diced green onions.

  • Cut the chicken into ½-inch sized cubes, then coat them in the potato starch and dust off any excess starch. Heat all but a tablespoon of the oil in a wok or large frying pan over medium-high heat, and carefully add the chicken and fry until golden brown (fry in batches if needed). Remove the chicken and carefully strain the oil into a heatproof jar through a mesh strainer or cheesecloth, to reserve the oil for future use.
  • Using the same pan, add the remaining tablespoon of oil and heat over medium-high heat. Add the onions, chilis and the garlic and stir-fry until fragrant, then add the chicken back to the pan.
  • (*If using the pre-made Yueh Tung Hakka Chili Chicken sauce (see headnote), add the sauce and stir-fry well to coat the chicken and to heat the sauce, garnish with the reserved chilies and serve with rice. Otherwise, continue with the recipe.)
  • Add the cooking wine and stir to deglaze the pan. Then add the light and dark soy sauce, chili sauce and salt, and stir-fry until the chicken is well coated with all of the ingredients. Add the cup of water and when the mixture comes to a light simmer, add in the slurry (make sure that the slurry is well-mixed first to avoid any lumps), stirring the bottom of the mixture as it’s poured in so that it doesn’t coagulate. Stir fry for a minute more, then serve, garnished with the reserved chillies (if using), and rice.
