2/3 cup sugar
1 tablespoon lemon juice
1/8 teaspoon fine sea salt
2 tablespoons cornstarch**
2 tablespoons Grand Marnier or brandy

Steps:

  • Heat cherries, sugar, lemon juice, fine sea salt and cornstarch in a heavy bottom sauce pan over medium heat.
  • Continue to simmer and stir until sauce starts to thicken and becomes sticky, approximately 15 minutes.
  • Remove from heat.
  • If adding liquor, stir in now.

4 cups sweet cherries ((fresh or frozen), pitted* )
1/4 to 1/3 cup water
1 Tbsp cornstarch
1 Tbsp lemon juice
2 Tbsp sugar

Steps:

  • In a medium saucepan (off the heat), add water (use 1/3 cup for fresh cherries and 1/4 cup water for frozen cherries). Whisk in 1 Tbsp cornstarch, 1 Tbsp lemon juice, and 2 Tbsp sugar.
  • Place over medium heat and whisk constantly until the mixture starts to thicken.
  • Add cherries and cook stirring occasionally until sauce is at a light boil (about 6-10 minutes for fresh cherries and 12-15 minutes for frozen). The sauce should be thickened and uniformly bubbling, not just at the edges, then remove from heat.
  • Cool to room temperature then cover and store in the refrigerator in a glass mason jar or Tupperware container until ready to use. It will thicken more as it stands.

3 large eggs
1½ cup milk
1 teaspoon pure vanilla extract
3 cups all purpose flour
1 cup granulated white sugar
2½ teaspoons baking powder
pinch of salt
⅛ teaspoon ground cinnamon (optional)
½ cup cold unsalted butter, cut into small chunks
2 cups (one dry pint) pitted fresh or frozen cherries (if using frozen, do not thaw)
1 teaspoon freshly grated lemon zest
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 375°F. Lightly grease a standard 12-cup muffin tin; or line the tin with papers, and grease the papers.
  • For Muffins
  • In a medium sized bowl whisk the eggs with the milk and vanilla extract.
  • In a large mixing bowl, whisk the flour with the sugar, baking powder, salt, and ground cinnamon. Cut the butter into the flour mixture with a pastry blender or your fingertips. (The mixture should look like coarse crumbs.)
  • Remove one cup of the mixture and set aside in a separate bowl to make the streusel topping.
  • Gently fold cherries and lemon zest in the remaining muffin batter.
  • Add the milk and egg mixture to the flour mixture. Stir just until combined.
  • Fill each muffin cup about ¾ full with the batter, using two spoons or an ice cream scoop.
  • Streusel Topping
  • Melt the remaining 2 tablespoons butter and stir into the reserved one cup of flour mixture until it is crumbly and looks like coarse meal. Sprinkle about 1 tablespoon of the streusel on top of each muffin.
  • Bake the muffins for about 20-25 minutes, until they're light golden brown on top, and a toothpick inserted into the middle of one of the center muffins comes out clean.
  • Remove the muffins from the oven, loosen their edges from the pan, and after about 5 minutes transfer them to a rack to cool.
  • Yield: 12 muffins.
  • * If using fresh cherries, dust them lightly with flour; this helps prevent the cherries from "bleeding" into the muffins. If using frozen cherries, add them frozen to the batter; this will help prevent them from "bleeding" our their juices.

1/2 cup sugar
1/2 cup lemon juice
1 tablespoon powdered gelatin
20 graham crackers
10 tablespoons butter, melted; plus more, room temperature, for the pans
3 tablespoons sugar
Pinch coarse salt
3 1/2 pounds (seven 8-ounce packages) cream cheese, room temperature
2 1/4 cups sugar
1/2 cup all-purpose flour
1 cup sour cream, room temperature
1 1/2 teaspoons pure vanilla extract
5 large eggs, room temperature

Steps:

  • Preheat the oven to 350 degrees. Butter the sides of 12 4-inch springform pans. Wrap exterior of pans (including base) in a double layer of foil.
  • To make crust, process graham crackers in food processor until fine. Add butter, sugar, and salt; pulse until combined. Divide mixture evenly among pans and pat into an even layer using the bottom of a measuring cup or mallet. Place pans on a baking sheet. Bake until the crust is firm to the touch and deeply golden brown, about 15 minutes. Transfer pans to a wire rack to cool completely.
  • Make the cheesecake batter: In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until fluffy, about 3 minutes, scraping down sides as needed.
  • In a large bowl, whisk together sugar and flour. With mixer on low speed, gradually add sugar mixture to cream cheese; mix until smooth. Add sour cream and vanilla; mix until smooth. Add eggs, one at a time, beating until just combined; do not overmix.
  • Pour cream cheese filling into the prepared pans. Set pans inside two large, shallow roasting pans. Carefully ladle boiling water into roasting pans to reach halfway up sides of springform pans.
  • Bake until cakes are set but still slightly wobbly in the center, 15 to 20 minutes. Turn off oven; leave cakes in oven with the door slightly ajar, 1 hour. Transfer pans to a wire rack; let cakes cool completely. Refrigerate, uncovered, at least 6 hours or overnight.
  • Make the cherry topping: Pit cherries and place a pound of them in food processor; pulse with sugar and lemon. Blend until smooth, then strain mixture through fine-mesh sieve.
  • Pour 1 cup cherry puree into a small saucepan. Sprinkle with gelatin and let sit for 10 minutes. When gelatin is bloomed, place over medium to high heat and stir until dissolved.
  • Combine cherry gelatin mixture, reserved cherry puree, and whole cherries. Spoon mixture over mini cheesecakes, about 5 or 6 cherries on each cheesecake and 2 to 3 tablespoons of liquid. Chill until firm, at least 2 hours.

  • Preheat oven to 325F and grease the sides of a 9″ springform pan.

3 egg yolks
1/4 c corn starch

1/2 cup granulated sugar
1/2 cup water
1 tablespoon cornstarch
1 tablespoon lemon juice (fresh)

Steps:

  • Gather the ingredients.
  • If working with fresh cherries, wash them thoroughly and carefully remove all the stems and pits.
  • In a medium saucepan, place the cherries (fresh or frozen), sugar, and water. If using frozen cherries, add just half the amount of water to begin with. Bring to a boil over medium-high heat, stirring often.
  • In a small bowl, stir the lemon juice and cornstarch together until smooth.
  • Whisk the cornstarch mixture into the boiling cherry mixture.
  • If working with frozen cherries, check on the texture of the mixture and add one tablespoon of water at a time if too thick.

  • For shortcake biscuits: Preheat oven to 350F and set rack in middle of oven; combine all dry ingredients in a large bowl until blended; rub butter into flour mixture with your fingertips until mixture resembles coarse meal; in a small bowl, whisk egg yolks with buttermilk to blend; add to flour mixture and stir just until evenly moistened; turn dough out onto a floured board and, with lightly floured hands, knead just until it comes together (if the dough is very sticky, sprinkle on some additional all purpose flour); pat out to about 1 1/4 inches thick and cut into rounds with a 3 inch cutter; gather dough scraps and pat out again to make remaining shortcake biscuits; set 2 inches apart on a large baking sheet; bake biscuits for approximately 25 minutes, or until golden-brown, and transfer to a rack to cool completely.
