LEMON HERB MEDITERRANEAN PASTA SALAD

Lemon Herb Mediterranean Pasta Salad is loaded with so many Mediterranean salad ingredients, and drizzled an incredible Lemon Herb dressing!

12 ounces | 350 grams dry pasta ((Penne))
1/3 cup olive oil
2 tablespoons fresh squeezed lemon juice
2 tablespoons red wine vinegar
2 tablespoons water
2 tablespoons finely chopped fresh parsley
2 teaspoons garlic (, minced)
2 teaspoons dried oregano (, minced)
1 teaspoon dried basil
1/2 teaspoon salt
Cracked pepper (, to taste)
4 cups Romaine ((or cos) lettuce leaves, washed and dried)
1 large cucumber (, diced)
1 avocado (, peeled, pitted and chopped)
1/2 of a large red pepper ((or capsicum), deseeded and cut into thin strips)
9 ounces (250 grams) grape or cherry tomatoes, halved
1/2 a red onion (, thinly sliced)
½ cup pitted kalamata olives (, sliced)
1/3 cup sun-dried tomatoes packed in oil (, drained)
5-6 tablespoons crumbled feta cheese

Steps:

  • Boil the pasta in a large pot of salted water until al dente. Drain in a colander or strainer, then rinse under cold water to take the heat out. Transfer the pasta to a large mixing bowl.
  • While pasta is boiling, prepare your dressing. Whisk together all of the marinade/dressing ingredients in a large jug.
  • Add all of the salad ingredients into the salad bowl along with the pasta, and drizzle with the dressing. Toss all of the ingredients together until everything is coated evenly in dressing. Season with extra salt and pepper, if desired.
  • Serve immediately.

2 tablespoons olive oil, divided
2 pints cherry or grape tomatoes
Salt and pepper
2 garlic cloves, minced
1 tablespoon minced fresh basil

Steps:

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

2 large lemons
1 tablespoon sugar
1 lb cherry or grape tomatoes (3 cups), halved or, if large, quartered
3 tablespoons chopped fresh chives
2 teaspoons extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Finely grate enough zest from 1 lemon to measure 2 teaspoons. Trim ends of both lemons, then stand lemons on a cut side and cut peel, including all white pith, from lemons with a sharp paring knife (discard peel). Cut segments free from membranes, then cut segments crosswise into 1/4-inch pieces. Toss lemon segments gently with sugar in a bowl.
  • Stir in remaining ingredients and zest, then let stand, covered, at room temperature 15 minutes (to allow flavors to develop).

2 cups cherry tomatoes
1/2 cup fresh lemon juice
1/4 cup snipped fresh basil leaf
3/4 cup extra virgin olive oil
salt
fresh ground black pepper

Steps:

  • Prick each tomato all over with a toothpick.
  • Mix lemon juice and basil. Pour oil over mixture, whisking until liquids are completely blended. Season to taste with salt and pepper.
  • Place tomatoes in a shallow glass dish and cover with lemon oil dressing. Chill for several hours, tossing occasionally. Enjoy!
