GIANT BOURBON-CHERRY TOASTER TART PIE

Giant Bourbon-Cherry Toaster Tart Pie image

Provided by Damaris Phillips

Categories     dessert

Time 1h45m

Yield 8 servings

Number Of Ingredients 11

1/2 cup granulated sugar
2 tablespoons cornstarch
Juice of 1 lemon
2 tablespoons plus 2 teaspoons bourbon
1 pound pitted cherries, preferably tart
Two 9-inch frozen pie crust rolls, thawed
1 cup confectioners' sugar
2 teaspoons half-and-half
1 teaspoon vanilla extract
2 tablespoons raw sugar
1 teaspoon nonpareils, optional

Steps:

  • Adjust an oven rack to the bottom position. Preheat the oven to 400 degrees F.
  • Whisk the granulated sugar and cornstarch in a medium nonreactive saucepan. Add the lemon juice and 2 tablespoons of the bourbon; whisk until well blended. Stir in the cherries and cook over medium-high heat, stirring, until the mixture boils and thickens, and the cherries are nice and soft, about 12 minutes. Remove from the heat and let cool to room temperature, about 20 minutes.
  • Place one of the pie crusts on a parchment-lined baking sheet. Dock the center of the crust a few times with a fork. Add 1 cup of the cherry jam to the center of the crust and spread it evenly, leaving a 1-inch border. (Cover and refrigerate the remaining jam for up to 1 week.) Place the second pie crust on top, seal the edges, and dock the center three times with a fork. Bake until golden brown, 35 to 40 minutes. Let cool for 15 minutes.
  • While the tart is cooling, make the icing. Add the confectioners' sugar, half-and-half, vanilla and the remaining 2 teaspoons bourbon to a medium bowl. Whisk until thick and smooth. Using a rubber spatula, add the icing to the center of the cooling tart and spread it nearly to the edges. Sprinkle with the raw sugar and nonpareils, if using. Cut the tart into wedges and enjoy!

Provided by Cheri

Categories     Desserts     Pies     Tarts     Fruit Tart Recipes

Time 3h45m

Yield 18

Number Of Ingredients 11

12 wooden pop sticks
1 cup pitted tart red cherries, chopped
3 tablespoons white sugar
2 tablespoons cornstarch
2 tablespoons water
½ teaspoon almond extract
1 (15 ounce) package prepared pie crusts
½ cup confectioners' sugar
1 tablespoon milk, or as needed
¼ teaspoon vanilla extract
1 teaspoon multicolored candy sprinkles

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Soak wooden pop sticks in water.
  • Place the cherries into a saucepan, and stir in white sugar, cornstarch, water, and almond extract. Stirring constantly, bring the mixture to a boil over medium heat, and cook until thick, about 2 minutes. Remove from heat and let cool.
  • On a floured surface, unroll the pie crusts, and roll each crust out to an 11-inch circle. Cut each crust into 18 rectangles about 1 1/2-inch by 2 inches.
  • Place 18 squares onto the prepared baking sheet about 1 inch apart, and place a wooden pop stick onto each square so that about 1 inch of the stick is on the dough rectangle. Spoon about 1 teaspoon of the cherry filling into center of each dough rectangle. Top each tart with a second rectangle of dough, and crimp the edges of the little tarts with a fork. Press dough around stick to help hold the stick in place.
  • Bake in the preheated oven until the tarts are lightly browned at the edges, 10 to 12 minutes. Allow to cool.
  • Make the glaze by stirring confectioners' sugar with milk and vanilla extract until smooth and pourable (not thin). Spread a coating of glaze over each tart, and sprinkle the tarts with candy sprinkles. Allow the glaze to set for several hours before serving.

CHERRY TART

Categories     Dessert     Bake     Cherry     Spring     Bon Appétit     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes 8 to 10 servings

Number Of Ingredients 16

Crust
2 cups all purpose flour
1/2 cup sugar
1 teaspoon salt
1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
1 large egg
Filling
1 cup cherry preserves
1/2 cup chopped dried Bing (sweet) cherries (about 2 1/2 ounces)
1/2 teaspoon grated lemon peel
1/4 teaspoon almond extract
1/4 cup unsalted natural pistachios, chopped
Glaze
1 large egg
2 tablespoons whole milk
2 tablespoons sugar

Steps:

  • For crust:
  • Combine flour, sugar, and salt in processor; blend 5 seconds. Add butter and cut in, using on/off turns, until mixture resembles fine meal. Add egg and process just until moist clumps form. Gather dough into ball; divide in half. Flatten each half into disk. Wrap in plastic and chill until firm enough to roll, about 1 hour. (Can be prepared 1 day ahead. Keep chilled.)
  • For filling:
  • Position rack in bottom third of oven and preheat to 325°F. Mix preserves, chopped cherries, peel, and almond extract in medium bowl.
  • Roll out 1 dough disk on lightly floured surface to 11-inch round. Transfer round to 9-inch-diameter tart pan with removable bottom. Press dough gently into pan; trim overhang even with top of pan sides. Spread filling in crust; sprinkle with pistachios. Roll out second dough disk on lightly floured surface to 11-inch round; cut into 3/4-inch-wide strips. Arrange several strips, spaced 3/4 inch apart, over filling. Top with more strips at slight angle, forming lattice. Press strip ends to edge of pan, trimming overhang.
  • For glaze:
  • Beat egg and whole milk in small bowl to blend. Brush some of glaze over lattice crust; sprinkle with 2 tablespoons sugar.
  • Bake tart until crust is golden brown and cherry filling is bubbling thickly, about 1 hour 5 minutes. Cool tart completely in pan on rack. (Tart can be prepared 1 day ahead. Cover and store at room temperature.)

  • In a food processor, sift your flour, salt and powdered sugar. Add cold cubes of butter. Pulse until the mixture is like a coarse sand, with a few bigger chunks of butter. Add 6 tablespoons of ice cold water and pulse until the dough starts clumping together, not more than that. If it doesn't start coming together, then add another tablespoon of ice cold water. When it's done, it should still be crumbly - that's fine, because we want to combine it together with our hands.
  • Transfer the dough onto a lightly floured surface and using your hands knead it a little bit (just a little!) until it forms a homogenous dough. Divide the dough into two, form into a disk, wrap in cling film and leave it in the fridge for at least an hour or up to three days.
  • In a small saucepan combine frozen cherries and sugar and bring to boil over medium heat. Simmer for a few minutes. Dilute the cornstarch with 1 tablespoon of water and pour over the cherries mixing constantly with a large wooden spoon until everything is incorporated. Bring the mixture to a boil and cook for a few minutes.
