CREAM CHEESE COFFEE CAKE
I've been making this for a long time. I got the recipe from a monthly newsletter decades ago! It is our favorite coffee cake. The kids and grandkids love it! It doesn't look fancy but the cream cheese makes it special.

Steps:

- Cream butter, cream cheese and sugar until light and fluffy.
- Add eggs and vanilla, beat well.
- Sift together dry ingredients and add to creamed mixture alternately with milk.
- Beat until smooth after each addition.
- Spread into greased 13x9 inch pan.
- topping:.
- Combine topping ingredients to make struesel and sprinkle over cake.
- Bake at 350 degrees for 30-35 minutes.

- Preheat oven to 350°F Coat a 9-inch square baking pan with cooking spray.
- To prepare the streusel, combine flour, granulated sugar and brown sugar. Cut in butter with a pastry blender or two knives until crumbly. Stir in almonds.
- To prepare the cream cheese, combine cream cheese and granulated sugar; stir until smooth.
- To prepare the cake, beat butter, granulated sugar, egg, and vanilla and almond extracts until evenly blended. Turn to low speed, add flour, baking powder and salt alternately with milk; beat until blended. Pour into prepared pan. Top with small spoonfuls of cheese mixture. Top with cherries and sprinkle with streusel.
- Bake 50 minutes or until cake begins to pull away from sides of pan. Cool on wire rack. Serve warm.

Another Pampered Chef favorite of mine. Whenever I make this, I never have leftovers. I have had people insist it must be from a bakery. I say of course it is, MINE!! The extra effort into the presentation makes all the difference!

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, combine crean cheese, 1/3 cup powdered sugar, egg yolk, and vanilla; mix until smooth.
- Unrool crescent rolls and reserve four triangles for decoration.
- Separate remaining dough into 12 triangles and arrange on a 15" round baking sheet (Baking stone preferably) with points toward the center.
- Roll dough into a 14" circle to seal the seams.
- Cut the center out with a glass and discard.
- Spread cream cheese mixture over dough to within 1/2 inch of the edges; top with pie filling.
- Roll remaining dogh into a rectangle; 6" wide and 7" long.
- Cut lengthwise into 12 strips.
- Twist strips and place in a spoke-like fashion over filling.
- Press ends to seal at center and outer edges.
- Brush strips with lightly beaten egg white.
- Bake 25-30 minutes or until golden brown; cool slightly.
- For Glaze: Mix remaining powdered sugar and milk until smooth.
- Drizzle over coffee cake.

- Preheat oven to 350°F.
- For cake:.
- Combine flour and sugar.
- Cut in butter until crumbly.
- Reserve 3/4 cup of crumble mixture.
- With remaining crumble mixture, add baking soda, baking powder, and salt.
- Stir in egg, sour cream, and almond extract until blended.
- Press into the bottom and 1" up the sides of an ungreased springform 9" pan with a removable bottom.
- Prepare filling:.
- In a large bowl, beat cream cheese and sugar one minute.
- Add egg, mix well.
- Spread over cake in bottom of pan.
- Carefully top with cherry pie filling.
- Sprinkle with almonds and reserved crumble mixture.
- Bake for 50-60 minutes or until center is set.
- Cool on a rack 15-20 minutes.
- Carefully run a knife around the edge of the pan to loosen.
- Remove bottom and slide cake out of pan.

This is a light, moist cake that's delicious with any fruit, but cherries are my dad's favorite!

- Preheat oven to 325 degrees F (165 degrees C). Grease and lightly flour a 10 inch tube pan. Place cherries in a bowl and toss gently with 2 tablespoons flour. Set aside.
- Stir together the flour, salt, baking powder, and cinnamon in a medium bowl. Beat together the oil, eggs, sugar, vanilla extract, and milk until smooth in a large mixing bowl. Stir in the flour mixture until smooth. Fold in the cherries. Pour batter into prepared pan.
- Bake in preheated oven until toothpick inserted into cake comes out clean, about 60 minutes. Cool in pan 10 minutes, then turn out onto a serving plate or wire rack.

- Preheat oven to 325 degrees F (165 degrees C).
- Cream the cream cheese, butter or margarine, sugar, and vanilla together until smooth. Beat in eggs one at a time. Sift together 2 1/4 cup flour, baking powder, and salt; fold into cream cheese mixture. Dredge cherries in 1/4 cup flour, and fold into batter.
- Sprinkle pecans over the bottom of an ungreased 10 inch angel food tube pan. Bottom should be completely covered. Add a few more pecans if necessary. Spoon batter into pan on top of nuts.
- Bake for about 75 minutes, or until an inserted wooden pick comes out clean. Allow cake to cool in pan. Run knife around outside edge and center tube. Ease cake out of pan, and onto plate.
