Steps:
- Put the cherries, sugar and lemon zest and juice in a large skillet and stir to combine. Cover and cook over medium heat until the sugar dissolves, about 4 minutes. Uncover and cook until the cherries get juicy, about 5 minutes more.
- Mix together the rum and kirschwasser in a measuring cup, then add to the cherries. Ignite the alcohol with a long match and swirl the pan slightly until the flames subside, about 30 seconds. Serve the warm cherries and their juices over ice cream.

- Add reserved cherry juice and cinnamon stick pieces. Continue cooking, stirring occasionally, 1-2 minutes or until mixture is reduced by half.
- Add cherries, vanilla and lemon zest. Bring mixture to a boil; stir in cherry liqueur. Add brandy. Shake pan to ignite brandy; continue cooking until flames subside. (If using electric stove or preparing table side, ignite brandy in pan with a long match.)
- Place ice cream into individual bowls. For each serving, spoon generous 2 tablespoons of cherries and sauce over ice cream.

- Evenly scoop the ice cream into 4 dishes or decorative glasses and put in the freezer until ready to serve (this can be done up to 4 hours ahead).
- Wash and pit the cherries. Put the cherries and sugar in a large skillet. Peel 2 strips of zest from the lemon in wide strips with a peeler and add to the cherries. Squeeze the juice of half the lemon over the top. Stir to combine evenly. Cover and cook the cherries over medium-low heat until the sugar dissolves, about 4 minutes. Uncover and cook over medium-high until cherries get juicy, about 5 minutes more.
- To flambe the rum: If cooking over a gas flame, pull the pan off the heat and add the rum. Ignite the alcohol with a long match or one held with tongs. Swirl the pan slightly until the flames subside, about 30 seconds.
- If cooking over an electric stove, put the rum in a small saucepan. Warm it over medium-low heat and carefully light it with a long match or one held with tongs. Pour the lit rum over the cherries, and swirl the pan lightly until the flames subside, about 30 seconds.
- Ladle the cherries and their juices over prepared ice cream scoops. Serve immediately.

- Place sieve over bowl. Add thawed cherries; let drain. Pour drained juices into heavy medium skillet (set cherries aside). Mix 2 cups cherry juice, dried cherries and sugar into same skillet. Scrape in seeds from vanilla bean; add bean. Boil sauce until reduced to 1 1/2 cups, stirring occasionally, about 12 minutes. Mix arrowroot with remaining 1 tablespoon juice in small bowl. - In a large sauce pan, over medium heat, melt the butter. Stir in the sugar and cook for about 2 minutes, or until the sugar dissolves. Add the cherries, orange juice and orange zest. Saute for 2 to 3 minutes. In a small cup, stir the cornstarch and water together, for a slurry. Stir the slurry into the cherry mixture and cook for 1 minute. CREPES WITH CHERRIES AND MASCARPONE CREAM
Steps:
- 1. In a medium sized mixing bowl, combine flour, water, milk, eggs, melted butter, salt and sugar by whisking until well combined.
- 2. Allow mixture to rest for 20 minutes.
- 3. Heat a 9 inch non stick pan up, with heat on Medium to low. Add 1/4 tsp butter to the pan. When the butter turns brown it is ready to cook the crepes.
- 4. Use a ladle to scoop, one scoop of crepe mixture on the pan. Immediately, roll the pan around so the crepe batter fully covers the bottom of the pan, continue to roll the pan around until the crepe mixture is just set. Allow to cook for about 1 min and 30 seconds.
- 5. Using a plastic pancake spatula, loosen the edges of the crepe all the way around before scooping and flipping the crepe onto the other side. I sometimes have to use a rubber scraper and a pancake spatula together to make this work.
- 6. Allow the crepe to cook an additional minute to minute and a half on the other side.
- 7. Add wax paper to a plate, and then slide the crepe off on to the crepe
- 8. This recipe makes about 12 crepes
- 9. Repeat steps 3-7 for the remaining batter.
- Lay the crepe out on a plate.
- Add the fillings about 1 inch from one side of the crepe rather than in the middle.
- Add 1 ½ Tsp of Mascarpone Cream to the crepe in a line.
- Sprinkle ¼ cup of sliced pitted cherries over the top of the cream.
- Sprinkle 1 tsp of brown sugar over the Cherries.
- Roll the crepe starting with the side with the filling.
- Garnish with more Mascarpone cream, powdered sugar, and more cherries.

- For crepes, blend all ingredients until smooth.
- Refrigerate at least 2 hours or overnight.
- Heat a 7 or 8" skillet.
- Brush with butter.
- Pour a scan 1/4 cup batter into the pan.
- Tilt pan to coat evenly.

- Turn crepe and cook the other side.
- Turn crepe out on plate, keep warm.

- When ready to serve, fill crepes with custard and roll. Place seam side down in an oven proof baking dish. Pat a little butter on top of each crepe and warm in a 350 degree oven. Heat cherry mixture. Heat some additional brandy, flame and pour into cherry mixture. Pour some of the cherry mixture over each crepe to serve.
