WARM BEEF TRI-TIP SALAD

Steps:
- In a medium bowl, combine the beef, soy sauce, chile flakes, garlic and 1 tablespoon minced shallots. Marinate for 1 hour at room temperature.
- Preheat the oven to 375 degrees F. Put a baking sheet in the hot oven 30 minutes prior to using.
- When the baking sheet is hot, carefully remove it and place it on your stove top. Drizzle some olive oil on the baking sheet and toss with the beef and 1 cup sliced shallots. Return it to the oven and roast until the meat is medium rare, about 8 minutes.
- Season the spinach and radicchio with olive oil, salt and pepper and spread on a serving platter in a single layer. Place the beef and caramelized shallots on and around the leaves.
- Add the red wine vinegar to the baking sheet and scrape off the bits from the bottom. Add the extra-virgin olive oil and whisk the liquids together. Drizzle the salad with the vinaigrette and top with the blue cheese and Pecorino Romano.
CHEF BEORN'S TRI-TIP SALAD
I normally shy away from salads, but I wanted to create one that a "meat and potatoes" guy might like.

Steps:
- Season your steaks with salt, pepper and garlic.
- Drizzle 1-2 teaspoons of Canoloa Oil on a sizzle platter or sheet pan.
- While this is happening, Go and preheat your oven to 350 degrees.
- Place steak in saute pan and sear for about 4 minutes
- Lower heat to medium.
- Sear other side for 1-2 mins and then with an oven mitt, carefully place the saute pan into the oven for about 4 minutes
- Remove from oven and allow to rest 5 minutes.
- In the meantime, Let's put the salad together.
- Go ahead and put the salad in the bowls.
- Now, in a saucepan, bring the coconut milk to a boil.
- Add the cous cous and a pinch of salt.
- Stir until liquid starts to get absorbed. Check for tenderness.
- Strain and reserve the cous cous.
- Reserve the coconut milk too.
- Mix mint, kaffir lime leaves, and coconut milk in a bowl and whisk.
- Strain and toss with cous cous.
- Sprinkle cous cous over salad.
- Mix dressing by combining olive oil, balsamic vinegar, and parmesan in a bowl and whisk.
- Drizzle a little over each salad.
- Now let's get back to the steaks.
- Slice each steak diagonally across the grain (the striations you see on top of the steak).
- Lay the slices over the top of each salad.
- Just before serving, garnish with bell pepper (Red and Green) and red onion.

- Tear the lettuce into bite-sized pieces and put into a large mixing bowl. Season with salt and pepper to taste and toss with 1/2 cup of the dressing. Divide the lettuce among 4 large individual serving bowls. Arrange the cheese, meats, eggs, and avocado, like the spokes of a wheel, on top of each salad. Scatter the tomatoes, cucumbers, and croutons on top. Season with salt and pepper to taste. Serve and pass the remaining dressing at the table.
THE BEST BEEF TRI-TIP
I received a food wish for roast beef recently, which can be done with many different cuts. I ended up deciding on beef tri-tip, since it's affordable, flavorful, great for parties, and, using this low-temp roasting technique, nearly fool-proof. No marinating, no searing, no nothing; just rub on some salt and spices and pop it into the oven until it reaches the doneness you want. Plate it up with a Romano bean salad or enjoy as a roast beef sandwich!

- Preheat the oven to 225 degrees F (110 degrees C).
- Mix salt, pepper, paprika, garlic powder, cayenne, dried rosemary, and fresh rosemary together in a small bowl.
- Place tri-tip in a baking pan. Season generously with the spice rub until both sides are completely covered.
- Bake in the preheated oven until an instant-read thermometer inserted into the thickest part reads 130 degrees F (54 degrees C) for medium-rare, or until desired doneness, 1 1/2 to 2 hours. Flip meat over halfway.
- Cover pan with aluminum foil and let meat rest for 20 minutes. Remove tri-tip to a cutting board and cut into 2 pieces along where the grain changes direction. Slice meat across the grain and transfer to serving plates.
- Mix beef broth in with the pan drippings and drizzle over the slices.

PEPPERY BEEF TRI-TIP ROAST
From Nathalie Dupree, a very simple way to make this very tasty cut of beef. Cut from the bottom triangle of the sirloin, the tri-tip is an irregular triangle that provides well done meat at the ends of its triangle, with more rare pieces on the thicker point. If only one temperature of meat is desired, the bottom points may be tied together making a thicker roast that has all parts cook more evenly. It is important to remove it from the oven ten minutes before carving to enable the temperature to rise and for the roast to rest and let its juices redistribute. You can also use rosemary or other herbs or combinations of hearbs in the rub.

- Preheat oven to 425 degrees F.
- Combine olive oil, packed brown sugar, cracked black pepper, garlic, salt.
- and thyme. Rub this seasoning mixture onto the beef roast.
- Transfer to an oiled baking pan and bake uncovered, until internal temperature reaches 135 degrees for rare, 140°F for medium rare; 155°F for medium, approximately 20-30 minutes depending on thickness.
- Tent loosely with aluminum foil; let stand 10 minutes.

THAI-DIPPED BEEF TRI TIP
I enjoy beef satay way more than I do skewering small pieces of beef. Besides, I've never made satay, and not stuck a bamboo skewer into my finger at some point in the process. Not only did this involve less labor, but you can cook this in any number of ways.

- Place garlic, lemon grass (bruised and chopped--see note), grated gingerroot, grated onion, fish sauce, rice vinegar, soy sauce, coriander, cumin, turmeric, cayenne pepper, brown sugar, and vegetable oil in a large mixing bowl. Whisk until ingredients are thoroughly mixed.
- Transfer tri tip roast to marinade. Poke both sides of the roast numerous times with the tines of a fork to get the marinade into the roast. Cover with plastic wrap. Refrigerate 2 to 12 hours. During the marinade time, remove the meat from the fridge occasionally to turn and poke some more with a fork.
- Transfer roast to a paper-towel-lined tray to drain briefly. Reserve marinade.
- Preheat covered grill to 325 degrees F (165 degrees C). Lightly oil the grate.
- Cook roast covered, over indirect heat, basting with marinade and turning occasionally. Cook about 35 to 45 minutes, depending on how hot your grill is. An instant-read thermometer inserted into the center should read 130 to 135 degrees F (54 degrees C). Transfer roast to a cutting board and let rest at least 20 minutes before slicing.
- Place any remaining marinade in a saucepan; bring to a boil. Simmer for 1 or 2 minutes. You can use this as a serving sauce.

- Set aside to rest at least 10 minutes before carving. Slice it thin, across the grain, holding the knife at a slight angle to make wider slices.
