1 ½ cups shredded Cheddar cheese
1 teaspoon margarine
salt and pepper to taste

Steps:

  • Layer the potatoes, onion, cheese, salt and pepper into a microwave safe casserole dish. Once finished layering, place 1 teaspoon of margarine on the top of the uppermost layer. Cover and cook in the microwave oven on HIGH for 10 minutes.
  • Remove the dish from the microwave and stir before cooking for another 10 minutes or until done. Stir well and serve.

  • Heat oven to 350°F.
  • Mix soup and sour cream in large bowl until blended. Add potatoes and cheese; mix well.

6 russet potatoes
olive oil

10 slices bacon, cooked and crumbled
3 cups sour cream
4 cups shredded cheddar cheese
fresh chive, for garnish

Steps:

  • Place potatoes on a baking sheet and poke holes in two sides with a fork.
  • Coat potatoes with olive oil, and sprinkle with salt and pepper.
  • Bake for at 425°F (220°C) for 45 minutes.
  • Remove potatoes from oven, and let cool. Chop into 1-inch (2 ½ cm) pieces.
  • Lay half of the potatoes on the bottom of a greased 9x13 inch (23x33 cm) baking dish.
  • Sprinkle on half of the bacon, spread half of the sour cream, and sprinkle on half of the cheese.
  • Repeat for a second layer.
  • Bake for 20 minutes at reduced temp of 350°F (180°C), or until cheese is golden brown and the edges start crisping up.
  • Sprinkle with chives.

30 ounce bag hash browns ( (diced or shredded, thawed))
16 ounces sour cream
10.5 ounce can cream of chicken ((or celery or mushroom))
1/4 cup melted butter
1 bunch green onions ((or can sub 1/2 teaspoon onion powder))
1 teaspoon Kosher salt
1/2 teaspoon pepper
1 1/2 cups shredded cheddar cheese ((more if desired))
1-2 cups crushed cornflakes ((or ritz crackers or panko crumbs, optional))
1/4 cup melted butter

Steps:

  • Preheat oven to 350°F and butter a 9×13" baking dish. Set aside. Make sure your potatoes are mostly thawed and drain any excess water.
  • In a medium-sized bowl, combine potatoes, sour cream, cream of chicken, green onions (or onion powder), salt, pepper, 1/4 cup melted butter and shredded cheese. Stir until combined. Then spread into the baking dish. Top with extra cheese if desired.
  • Top with crushed cornflakes or crumbs. Drizzle remaining melted butter on top. Bake for 30-40 minutes, or until golden brown and bubbling hot. If using cubed potatoes instead of shredded hash browns, bake for about 40 minutes.

Steps:

  • Preheat oven to 375 degrees and grease a 9 x 13 inch baking dish.
  • Add the potatoes to a large pot of cold water. Bring the mixture to a boil and cook for 10-12 minutes or until fork tender., then drain and add to the baking dish

Thinly sliced russet potatoes are layered with cheddar cheese and the BEST creamy, flavorful sauce. It all bakes together into this magical, melt-in-your-mouth experience, with an ultra crispy cheddar cheese topping! You can even make them ahead of time.

1/4 cup butter ((1/2 stick))
1 onion (thinly sliced)
1 tablespoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon dried thyme
5 cloves garlic (smashed and minced)
6 tablespoons flour
4 cups heavy cream*
1/2 cup parmesan cheese (shredded)
4 pounds russet potatoes** (peeled and sliced to 1/8 inch)
3 cups sharp cheddar cheese (shredded and divided in half)

Steps:

  • Preheat your oven to 400 degrees F. Grease the bottom and sides of a 9x13 inch casserole dish with a little butter, or use nonstick spray. Set aside.
  • Melt 1/4 cup butter over medium heat in a large pot. Thinly slice 1 onion and add to the butter. Saute for 4-6 minutes until the onion is translucent.
  • While it's cooking, add 1 tablespoon kosher salt (use less if all you have is table salt), 1/4 teaspoon black pepper, 1/4 teaspoon cayenne pepper (this adds flavor not heat), and 1/4 teaspoon dried thyme.
  • After sautéing for 4-6 minutes, add 5 cloves of smashed and minced garlic. Let cook for about 30 seconds, until fragrant.
  • Gradually sprinkle in 6 tablespoons of flour, adding about a tablespoon at a time and stirring in between. It will form a thick paste with all the onions. Cook the flour for about 30 seconds to cook out the "raw flour" taste.
  • Use a whisk to SLOWLY stir in 4 cups of cream. The process of adding the cream should take at least 2-3 minutes. Your burner should still be at medium heat. Add a little bit of cream, whisk it in completely, then add a little more. The goal is to form a smooth sauce; if you add the cream all at once, you will have flour lumps.
  • Once all of the cream is added, stir in 1/2 cup parmesan cheese, sprinkling it in a little at a time so that it melts nicely.
  • (If your potatoes are not prepped and ready, remove the sauce from heat and set aside.)
  • Peel 4 pounds of russet potatoes** and slice thinly into 1/8 inch rounds with a sharp knife, mandolin, or food processor. See photos. If you have a food processor, I highly recommend using it. The slicer attachment cuts them to exactly the 1/8 inch size you need, and it's so much faster. If there is any lag time in between when you slice the potatoes and when you add them to the sauce, place them in a large bowl of water to prevent browning. Drain well.
  • Add the sliced potatoes to the pot of sauce with the heat set to medium. Use a rubber spatula to stir the potatoes into the sauce, separating any slices that stick together to make sure they are all coated in sauce. Let the mixture come to a low bowl over medium heat, then reduce heat to medium low and cook for 10 minutes, stirring occasionally. Be gentle when stirring your potatoes; you don't want to break them all into pieces. A rubber spatula is better than a wooden spoon.
  • After the cream and potato mixture has bubbled for about 10 minutes, turn off the heat.
  • Pour or spoon half of the mixture into the greased 9x13 inch pan. Sprinkle the first layer with 1 and 1/2 cups sharp cheddar cheese.
  • Top the cheese with the rest of the potato and cream mixture and spread to the edges. Sprinkle the top with 1 and 1/2 cups cheddar cheese.
  • Bake in the oven at 400 degrees for about 40 minutes.
  • You will know the potatoes are done when the mixture is very bubbly, the cheese has started to brown, and a butter knife inserted into the potatoes slides through easily. If your cheese is browning but the potatoes are not tender, cover with foil and bake another 10 minutes.
  • Let stand for 10 minutes before serving.
  • Store leftovers covered in the fridge. Leftovers will keep in the fridge for about a week. Reheat in the microwave for lunches. Or if you have enough leftover that you want to serve it for dinner again, sprinkle a little extra cheese on top and bake at 400 for 20 minutes, to recreate that perfect crispy topping.

1/2 yellow onion, finely diced
Kosher salt
2 cloves garlic, smashed and finely chopped
1/2 cup all-purpose flour
1 quart milk
1/4 cup Dijon mustard
2 cups grated Gruyere
1 cup grated Parmigiano
3 pounds Yukon gold potatoes, unpeeled, cut into 1/4-inch slices

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a large saucepan over medium heat. Add the onions, then season with salt and cook until the onions are soft and very aromatic, 5 to 7 minutes. Add the garlic and cook for another 2 to 3 minutes. Whisk in the flour and cook until the roux is the consistency of wet sand, 3 to 4 minutes. Whisk in the milk, bring to a boil and cook for 5 to 6 minutes. Turn off the heat and whisk in the mustard and cheeses. Season with salt to taste to make sure it is delicious!
  • Place a quarter of the potatoes in the bottom of a 9-by-13-inch baking dish. Ladle a quarter of the cheese sauce evenly over the potatoes. Repeat this process 3 or 4 more times with the remaining potatoes and sauce, pushing down the potatoes between each layer and topping with the sauce. Place the baking dish on a sheet tray lined with foil. Bake, rotating the dish halfway through, until the potatoes are soft when poked with a fork, 50 to 60 minutes. Tent with foil if the top is getting too brown.
  • Let sit for 15 to 20 minutes before serving.
  • Hot cheesy potatoes!

3 pounds russet potatoes (about 5 medium or 4 large, scrubbed)
8 tablespoons butter (one standard cube)
6 green onions (chopped)
1 teaspoon salt
1/2 teaspoon pepper
2 cups sour cream
8 ounces cheddar cheese (grated)

Steps:

  • If your potatoes are large, cut them in half crosswise. Place scrubbed potatoes in a large pot and add enough cold water to cover. Bring to boil over high heat. Reduce heat and keep at a low boil for 15 minutes. Drain and set aside until just cool enough to handle (easier to peel while still warm).
  • Meanwhile, preheat oven to 350˚F. Butter a 13 x 9-inch baking dish.
  • Peel partially boiled potatoes with the help of a paring knife, most of the peel should slide off easily. Shred potatoes by hand or with a food processor fitted with the shredding disc. If using a food processor, empty the bowl at least once as you go to prevent the potato peels from compressing together. Transfer to a large bowl.
  • Melt butter in a small sauce pan. Add green onions, salt and pepper; stir to combine. Remove from heat.
  • In a medium bowl combine sour cream and butter mixture, stirring until smooth. Add cheese and stir to combine.
  • Add cheese mixture to shredded potatoes. With a wooden spoon or rubber spatula, stir thoroughly until cheese mixture is evenly distributed, coating each potato shred. Transfer mixture to prepared baking dish, spreading with a spoon or spatula to an even layer.
  • Bake 45-50 minutes until bubbly with lightly browned edges. Serve.

1 1/2 cups sour cream
2 10 oz cans condensed cream of chicken soup (or homemade version)
2 cups shredded cheddar cheese
32 ounces frozen diced hash brown potatoes ((still frozen))
2 cups corn flakes cereal
8 tablespoons unsalted butter (melted)

Steps:

  • Preheat your oven to 350 degrees. Spray a 9 by 13 inch baking dish with cooking spray and set aside.
  • In a large bowl mix together the sour cream, cream of chicken soup, and shredded cheddar cheese. Set aside.
  • Pour the potatoes into the bottom of the baking dish. Top with the sour cream mixture. Bake uncovered for 30 minutes.
  • Pull the casserole out of the oven and top with corn flakes. Pour the melted butter over the top. Bake for another 30 minutes uncovered.
  • Serve and enjoy.

3 pounds diced potatoes (or 30 ounces country style hash browns)
¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

8 tbsp butter (melted)
1 10 oz can cream of onion soup
1 1/3 cups sour cream (not low fat)
12 oz extra sharp cheddar cheese (grated and divided)
1 tsp salt
1/2 tsp black pepper
1 32 oz bag frozen diced hash brown potatoes
1 cup crushed kettle cooked potato chips

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9x13 glass baking dish and set aside.
  • In a very large bowl, whisk together the melted butter and cream of onion soup. Then whisk in the sour cream, 8 oz (2 cups) of the shredded extra sharp cheddar cheese and the salt and pepper.
  • Fold in the diced hash brown potatoes.
  • Spread the potato mixture evenly into the prepared baking dish. Top with the remaining 1 cup of shredded cheddar cheese.
  • Then top the cheese layer evenly with the crushed potato chips.
  • Cover the dish with foil and bake for 45 - 50 minutes.
  • Remove the foil and continue baking until the cheesy top of the casserole is bubbly, about 15 minutes more. Remove and allow to set for about 5 minutes before serving.

1 (2 lb.) package frozen hash browns, thawed
1/2 c. chopped onion
1 (10.5 oz.) can cream of chicken soup
2 c. (16 oz.) sour cream
2 c. grated mild or medium cheddar cheese
1/2 c. butter, melted
1 T. salt
1/4 tsp. pepper
1 c. lightly crushed Corn Flakes
1/4 c. butter, melted

Steps:

  • In a large bowl, combine thawed hash brown potatoes, chopped onion, cream of chicken soup, sour cream, shredded cheese, the 1/2 cup melted butter, salt, and pepper. Stir together until well combined.
  • Spoon mixture into a lightly greased 9x13-inch baking dish.
  • In a small bowl, combine crushed Corn Flakes and the 1/4 melted butter. Toss to coat all the Corn Flakes in butter. Sprinkle evenly over potato mixture.
  • Bake at 350℉ for 45 minutes, until heated through and bubbly around the edges.
  • For make-ahead prep, assemble potato mixture and refrigerate, leaving off the Corn Flakes topping. At baking time, remove from refrigerator and allow to stand at room temperature for 30 minutes before baking. Top with Corn Flakes topping just before baking, and increase baking time a few minutes, if needed.

  • Preheat oven to 190C/fan 170C/gas 5.
  • Peel the potatoes, slice thinly, rinse under cold water.
  • Choose a pan large enough for all of the ingredients, then add the creme fraiche, bay leaf, pinch of salt, ground pepper and nutmeg. Bring to the boil, then reduce to a simmer. Add the drained potatoes and simmer for 5 minutes.
  • Rub the base and sides of a large gratin dish with the garlic before adding the potato mixture, then smoothing the surface.
  • Finally add the Gruyere and bake for about 1 hour. Check that the potatoes are cooked through then serve hot.

  • Preheat oven to 375 degrees
  • Extract frozen hasbrowns from your freezer and place on counter whilst gathering your soup, sour cream, the cheese blend and minced onion, which works better if bought pre-packaged at the store, and take the 1/2 cup of onion and place it in a measuring glass and soak it in 1/3 cup of warm water. After that's taken care of, get a glass dish which should be at least 2-3 inches deep and 9x13 inches in diameter and lightly grease the bottom and sides with butter/margarine, the sprays even nonstick ones give it a weird taste.
  • Now open the package of hasbrowns and place in a large mixing bowl, mix in soup, pre-soaked minced onion, sour creme and cheese, mix thoroughly for about 5 minutes.
  • Now pour all of the ingredients into the greased dish after being mixed, if you'd like, you can sprinkle an extra ounce of cheese on top to give it a bit more flavor. Now put it in the oven and bake for approximately 50 minutes.
  • Once the time is up, turn off the oven and take it out carefully, let it sit for about 5-10 minutes and enjoy.

My mom's famous cheesy potatoes are absolutely insane. Like a cozy, comforting potato casserole straight out of the 90s, these are a huge crowd pleaser and perfect for parties and holidays.

2 pounds frozen diced potatoes, (like Ore Ida, thawed)
8 tablespoons salted butter
16 ounces sour cream
1 (10.5 oz) can cream of chicken soup
kosher salt and pepper
1 teaspoon dried parsley
8 ounces sharp cheddar cheese, (freshly grated)
2 cups crushed potato chips, (I like to use kettle cooked chips)

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9x13 baking dish with nonstick spray. To thaw the potatoes, I just stick the bags in the fridge overnight. Be sure to drain any liquid from thawing.
  • Melt the butter in a large bowl - you can do this in the microwave or on the stovetop. Let it cool slightly.
  • Whisk the sour cream and the soup into the melted butter until combined. Add a big pinch of salt and pepper. You can also add a sprinkle of dried parsley if you wish.
  • Fold in the thawed potatoes. Fold and stir until the potatoes are completely incorporated and evenly distributed.
  • Spread the mixture in the baking dish. Top with the grated cheddar. At this point, you can stick the dish (covered) in the fridge until you're ready to bake, or you can bake right away.
  • If baking right away, sprinkle the top with the crushed potato chips.
  • Bake for 60 minutes. Let stand for 10 to 15 minutes before serving. Scoop to serve!
  • This freezes great! Once you spread the mixture in the baking dish, seal it tightly with plastic wrap and foil, then freeze. To bake, let it thaw completely, then top with the cheddar and potato chips.
  • Leftovers of this are also delicious - maybe even better than when it's freshly made!
