Whenever a dish looks so impressive, tastes so good and is so easy to make, we call it a win. These Southwest-flavored peppers, stuffed with cheesy chicken and rice, and topped with crunchy tortilla chips, will make you feel like a dinnertime champ.

1 cup Old El Paso™ Thick 'n Chunky medium salsa (from 16-oz jar)
5 large red bell peppers
2 tablespoons olive oil
1/2 cup chopped onion
1 medium poblano chile, seeded and chopped
1 serrano chile, seeded and chopped
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1/4 teaspoon salt
3/4 cup uncooked instant white rice
1 1/4 cups shredded cooked chicken
1 1/4 cups shredded Cheddar cheese (5 oz)
1/2 cup crushed tortilla chips
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) baking dish with cooking spray; spread salsa in baking dish.
  • Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add onion, poblano chile and serrano chile. Cook 6 to 8 minutes, stirring occasionally, until vegetables are softened. Stir in taco seasoning mix, tomatoes, broth and salt. Heat to simmering. Stir in rice; remove from heat. Let stand 2 minutes to allow rice to absorb most of the moisture. Add chicken and cheese.
  • Stuff peppers with chicken and rice mixture. Stand peppers upright in baking dish.
  • Cover tightly with foil. Bake 20 minutes. Uncover; sprinkle tops of peppers generously with crushed tortilla chips. Bake uncovered 15 to 20 minutes longer or until peppers are tender and tops are lightly browned. Let stand 10 minutes before serving. Serve with sour cream.

2/3 cup chopped sweet red pepper
1/2 cup chopped onion
2 garlic cloves, minced
1-3/4 cups chopped seeded tomatoes, divided
4 teaspoons chili powder
1 teaspoon cornstarch
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1-1/2 cups water, divided
4 medium green peppers
2 tablespoons sour cream
2 tablespoons shredded cheddar cheese
2 green onions, chopped
4 grape tomatoes, halved, optional

Steps:

  • In a large skillet, cook the beef, red pepper and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in 1/2 cup tomatoes, chili powder, cornstarch, cumin, oregano and cayenne. Gradually stir in 1/2 cup water. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes. , Meanwhile, cut green peppers in half lengthwise; remove seeds. Place in an ungreased shallow 3-qt. microwave-safe dish; add remaining water. Cover and microwave on high for 8-10 minutes or until crisp tender. Drain; fill each pepper half with 1/3 cup beef mixture. , Top with the remaining tomatoes. Garnish with sour cream, cheese, green onions and grape tomatoes if desired.

2 boneless skinless chicken breasts, cut in 1-inch cubes
1/2 cup Italian dressing (Kraft Roasted Red Pepper Italian with Parmesan recommended)
4 large square bell peppers
1 teaspoon garlic powder
1 teaspoon paprika
1 roma tomato, diced
8 ounces shredded muenster cheese
4 slices cheddar cheese

Steps:

  • Preheat oven to 375°F.
  • Place chicken pieces in a bowl and pour the dressing over them. Mix well.
  • Let marinate at room temperature 10 minutes.
  • Meanwhile, cut tops off peppers. Do not discard.
  • Remove seeds and membranes from peppers. Set peppers aside.
  • Heat a large skillet over medium-high heat.
  • Add chicken and marinade and cook, stirring, until marinade comes to a boil and chicken is lightly colored.
  • Stir in garlic, paprika and tomato, and cook, stirring, for 1 minute.
  • Reduce heat to medium-low and stir in shredded Muenster.
  • Cook, stirring, just until cheese melts.
  • Remove from heat and let cool slightly.
  • Spray a baking dish with cooking spray. Stand peppers upright in dish.
  • Spoon chicken mixture into peppers. Pour any leftover sauce over and around them.
  • Replace tops on peppers.
  • Bake for 30-40 minutes, or until chicken is cooked through and peppers begin to soften.
  • Remove dish from oven and remove pepper tops.
  • Place a slice of cheddar on each pepper. Replace tops.
  • Return to oven and bake just until cheddar melts, about 5 minutes.

2 (7 ounce) skinless, boneless chicken breasts
¼ cup olive oil, divided
salt and ground black pepper to taste
3 ½ cups water
1 (10 ounce) bag yellow rice
1 medium onion, chopped
1 medium red bell pepper, chopped
2 medium carrots, shredded
2 cloves garlic, chopped
2 cups shredded Monterey Jack cheese, divided
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chile peppers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chicken in a small baking dish and drizzle with 1 tablespoon olive oil, turning to coat. Season with salt and pepper.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut into strips or cubes when cool enough to handle. Leave the oven on.
  • While the chicken bakes, bring water and 2 tablespoons olive oil to a boil in a saucepan. Stir in rice. Cover, reduce heat, and simmer for 20 minutes. Fluff lightly with fork.
  • While the rice cooks, heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Saute onion, bell pepper, carrots, and garlic until tender, about 10 minutes.
  • Grease a 9x13-inch baking dish.
  • Place rice, vegetable mixture, chicken, 1 1/2 cups Monterey Jack cheese, beans, and tomatoes in a large bowl and stir until well combined. Spoon into the prepared baking dish and sprinkle with remaining cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 minutes longer.

2 cups beef stock (or chicken)
1/2 cup brown rice
2 teaspoons vegetable oil
1 cup diced onion
1 cup canned corn, drained
1/2 lb lean ground beef
1 1/2 cups canned red kidney beans, drained and rinsed
1 1/2 teaspoons chili powder
1/2 teaspoon dried basil
1/2 teaspoon ground cumin
1 pinch salt and pepper
1/2 cup medium salsa
3/4 cup shredded aged cheddar cheese
1/3 cup low-fat sour cream
1/3 cup chopped cilantro or 1/3 cup parsley
4 medium bell peppers (any color)

Steps:

  • Preheat the oven to 375°f. Line a baking sheet with foil and lightly coat with cooking spray.
  • In small saucepan, bring the stock and rice to a boil. Reduce the heat to low, then cover and simmer for 25 minutes or until the rice is tender. Drain any excess stock.
  • Lightly coat a large saucepan with cooking spray, add the oil and set over medium-high heat. Add the onion and sauté for 3 minutes. Add the corn and sauté another 5 minutes or until the corn starts to brown. Add the ground beef and sauté until no longer pink, about 3 minutes.
  • Add the cooked rice, beans, chili powder, basil, cumin, salt, pepper and salsa and cook for 1 minute. Remove from the heat and add ½ cup of the cheese, along with the sour cream and cilantro or parsley.
  • Carefully remove and discard the top from each of the peppers. Remove the ribs and seeds and discard. Place the peppers on the baking sheet and fill them with the beef stuffing. Bake for 25 minutes.
  • Sprinkle with the remaining cheese and bake for another 2 minutes or just until the cheese melts.
