½ cup all-purpose flour
1 tablespoon curry powder
2 teaspoons white sugar
1 teaspoon brown sugar
1 teaspoon baking powder
1 teaspoon ground cumin
¾ teaspoon salt
½ teaspoon cayenne pepper
¼ teaspoon black pepper
2 eggs, lightly beaten
½ cup milk
4 cups peeled, shredded sweet potato
2 cups oil for frying, or as needed

Steps:

  • Combine flour, curry powder, white sugar, brown sugar, baking powder, cumin, salt, cayenne pepper, and black pepper in a bowl.
  • Whisk together eggs and milk in a separate bowl. Pour into flour mixture and stir until well blended and batter has no lumps. Stir in sweet potatoes until fully combined.
  • Heat enough oil to cover the bottom of a heavy skillet over medium heat. Drop batter by tablespoonfuls into hot oil, using spatula to flatten. Fry until well browned, about 3 to 5 minutes per side.
  • Drain on paper towels and serve hot.

1 lb sweet potatoes, peeled and coarsely grated
2 scallions, finely chopped
1/3 cup all-purpose flour
2 large eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup vegetable oil

Steps:

  • Stir together potatoes, scallions, flour, eggs, salt, and pepper.
  • Heat oil in a deep 12-inch nonstick skillet over moderately high heat until hot but not smoking. Working in batches of 4, spoon 1/8 cup potato mixture per latke into oil and flatten to 3-inch diameter with a slotted spatula. Reduce heat to moderate and cook until golden, about 1 1/2 minutes on each side. Transfer latkes with spatula to paper towels to drain.

1 pound sweet potatoes, peeled
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon brown sugar
1 teaspoon baking powder
1/2 teaspoon cayenne powder
2 teaspoons curry powder
1 teaspoon cumin
Salt and freshly ground pepper to taste
2 large eggs, beaten
1/2 cup milk (approximately)
Peanut oil for frying

Steps:

  • 1. Grate the sweet potatoes coarsely. In a separate bowl mix the flour, sugar, brown sugar, baking powder, cayenne pepper, curry powder, cumin, and salt and pepper.
  • 2. Add the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny; if too stiff, add more milk.
  • 3. Heat 1/4 inch of peanut oil in a frying pan until it is barely smoking. Drop in the batter by tablespoons and flatten. Fry over medium-high heat several minutes on each side until golden. Drain on paper towels and serve.

Steps:

  • Whisk together flour, curry powder, brown sugar, granulated sugar, baking powder, red pepper, cumin, and paprika in a large bowl; stir eggs into dry ingredients to make thick batter; add sweet potatoes and salt and black pepper to taste, mix well Heat oil in a large, heavy skillet over medium-high heat; drop enough batter into hot oil to form 4-inch latkes when pressed down, do not crowd skillet.
  • Fry in batches until golden, about 4 minutes per side.
  • Drain on paper towels.

These are addictive. The recipe calls for peanut oil but any good quality cooking oil will do. I got this recipe from a homeschooling list that I'm on. Make them one batch at a time. Can be an appetizer or main course depending on the size you make them. Adjust spices as your prefer. Some like these with hot curry powder.

1/2 cup flour
2 teaspoons sugar
1 teaspoon brown sugar
1 teaspoon baking powder
1/2 teaspoon cayenne powder (I use less)
2 teaspoons curry powder, of your choice mild to hot
1 teaspoon cumin
salt and pepper, to taste
2 large eggs, beaten
1 -2 tablespoon milk, enough to make a stiff batter
1 lb sweet potato, peeled and coarsely grated
peanut oil (for frying)

Steps:

  • Mix the first eight ingredients together then add in the rest.
  • If batter is too stiff, add a little more milk a tablespoon at a time.
  • Preheat your frying pan. You can use a stove top or electric frying pan.
  • Test the heat of your pan by cooking a single latke. When you have determined the right temperature for your pan then drop by spoonfuls into the heated frying pan with 1/4 inch of peanut or other good quality cooking oil.
  • Flatten with back of spatula.
  • Cook on each side until golden, and drain on paper towels.

The method for these latkes is what makes them stand apart from ordinary potato or potato zucchini latkes. These are so fabulous they even taste great cold!

6 large potatoes, peeled
2 large zucchini, unpeeled
1 medium onion
1 tablespoon kosher salt
2 teaspoons blended herb seasoning mix or 2 teaspoons monterey style seasoning
6 eggs
1 2/3 cups flour
1/4 cup parsley
1/4 cup cooking oil

Steps:

  • Finely shred potatoes. Soak potatoes in cold water to remove starch. (A flour sack towel works well for this- place towel in a bowl with edges hanging over the sides. Put the potatoes in the bowl and cover them with cold water.) After 10-15 minutes squeeze out potatoes, rinse bowl, and repeat the soaking process one or two more times as needed to remove all the "pink," or "white" starch which sinks to the bottom of the bowl.
  • While potatoes are soaking finely chop the parsley, and finely shred the zucchini and onion. Put onion and zucchini in a colander to drain off excess juice. You can carefully press out even more juice. The key to the success of these latkes is washing the starch from the potatoes and removing any excess liquid from the vegetables.
  • After the final soak, squeeze out as much water as possible from the potatoes. If using a towel, then twist the top of the towel continuously, squeezing the potatoes into a ball, and wringing out all the fluid. Combine potatoes, zucchini, onion, parsley, salt, herb seasoning, eggs and flour in a large bowl and mix well.
  • Heat oil in a medium skillet until the surface is shimmering. Add large spoonfuls of latke batter to the oil and shape them into pancakes about 1/4 inch thick. Fry until golden brown (approximately 6 minutes each side).

1 1/2 lbs sweet potatoes, peeled and shredded (~4 small)
1 small onion, grated (70 g)
1/2 cup raisins
2/3 cup flour
3 eggs, beaten
2 teaspoons curry powder
1 teaspoon kosher salt
2 tablespoons olive oil
1/2 cup sour cream (optional)

Steps:

  • Preheat oven to 200 degrees F.
  • Transfer sweet potatoes to a large bowl. Add onion, raisins and flour.
  • In a small bowl, combine eggs with curry powder and salt.
  • Add egg mixture to potato mixture and mix with your hands.
  • In a large skillet over medium-high heat, warm 2 tablespoons olive oil.
  • For each latke, drop 1/3 cup of mixture into skillet and fry, pressing with a spatula to flatten. Cook until golden brown, 2-3 minutes per side.
  • Keep warm in 200F oven until ready to serve.
  • Serve with sour cream, if desired.
