CHEESY GARLIC-POTATO MONKEY BREAD

Cheesy Garlic-Potato Monkey Bread image

This savory monkey bread begins with a yeasted dough made with mashed potatoes, which helps make it the extra light and fluffy. Each round of dough is coated in garlic butter, cheese (Parmesan and white cheddar), and a generous dose of coarse black pepper. Think of it as cacio e pepe monkey bread. It's best served warm. The dough rises overnight in the refrigerator, which makes this recipe especially great when you're looking to plan ahead.

Time 10h30m

Yield 8 to 10 servings

Number Of Ingredients 16

4 1/2 cups/576 grams all-purpose flour, plus additional for coating
1/2 cup/60 grams finely grated Parmesan
1/4 cup/55 grams light brown sugar
1 tablespoon garlic powder
2 teaspoons instant yeast
1 1/2 teaspoons kosher salt
6 tablespoons/85 grams unsalted butter (3/4 stick), at room temperature, plus more for greasing
3/4 cup/163 grams leftover mashed potatoes or 1 small russet potato, peeled, chopped and boiled
3/4 cup/180 milliliters warm water (about 95 degrees)
1 large egg plus 1 large egg yolk
Cooking spray, for greasing
1/2 cup/113 grams unsalted butter (1 stick)
5 garlic cloves, minced
1 cup/120 grams finely grated Parmesan
1 cup plus 2 tablespoons/128 grams shredded white cheddar
1 1/2 teaspoons coarsely ground black pepper

Steps:

  • Make the dough the day before you want to make the monkey bread: In the bowl of an electric mixer fitted with the dough hook attachment, combine the flour, Parmesan, sugar, garlic powder, yeast and salt on low speed to combine, 15 to 20 seconds.
  • Add the butter, mashed potato, water, egg and egg yolk. Mix on low speed for 4 minutes, then on medium speed until the dough is smooth, about 2 minutes.
  • Transfer the dough to a lightly greased bowl and cover with plastic wrap. Let the dough rise at room temperature for 1 hour, then punch the dough down and refrigerate overnight.
  • When you're ready to make the bread, let the dough sit at room temperature for 45 minutes to 1 hour. Generously coat a 10-inch tube or Bundt pan with cooking spray.
  • Divide the dough into 24 even pieces (about 2-tablespoon-sized balls at 48 grams each). Round each piece into a ball using your hands. If the dough is too sticky to handle, use a little flour. (Try to use as little flour as possible, as it can make the dough tough.) Cover the dough with plastic wrap on your work surface, and let rest for 15 minutes while you prepare the filling.
  • Prepare the topping: In a small pot, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute. Transfer to a heatproof bowl and allow to cool for about 5 minutes.
  • In a medium bowl, toss the Parmesan, white cheddar and pepper to combine. Working with one piece of dough at a time, dip the dough into the garlic butter, then roll it in the cheese mixture to coat.
  • Transfer each ball to the prepared pan, arranging in even layers. Do not tightly pack. Drizzle the rolls with the leftover garlic butter and sprinkle with the remaining cheese.
  • Cover the pan with plastic wrap and let rise in a warm place until increased in volume, 35 to 45 minutes. (The dough won't fully double in size, but it will look puffy and risen.)
  • Toward the end of rise time, heat the oven to 375 degrees. Bake until the surface is golden-brown, 35 to 40 minutes. (It should have an internal temperature of 200 degrees. Be sure to take the temperature in the center portion of the dough.)
  • Let cool 10 to 15 minutes before unmolding. Serve warm or at room temperature.

JALAPENO CHEDDAR MONKEY BREAD

Jalapeno Cheddar Monkey Bread image

Jalapeno Cheddar Monkey Bread is a savory monkey bread stuffed with cheddar cheese, garlic, and creamy jalapeno artichoke dip.

Provided by Courtney

Categories     Appetizers

Time 1h

Number Of Ingredients 7

2 (16 oz) cans flaky buttermilk biscuits
1 container La Terra Fina Jalapeno Artichoke Cream Cheese Spread
2 jalapenos, seeded and sliced thin
1/2 cup (1 stick) butter, melted
1/2 teaspoon garlic powder
2 cups shredded cheddar cheese
2 Tablespoons dried parsley

Steps:

  • Preheat a 350 degree oven and generously butter a bundt pan.
  • Cut the biscuits into quarters. Smash them down a bit with your hand and place a small spoonful of cream cheese spread in each one. Pull the edges of the biscuit together and seal. This part is a bit messy. It's ok if the biscuits aren't sealed completely around the filling.
  • In a measuring cup, whisk together the butter and garlic powder.
  • Place half the stuffed biscuits in the bottom of the bundt pan. Top with half the cheese and half the jalapeno. Pour half the melted butter over the top. Then sprinkle half the parsley on top of that. Repeat the layers with the remaining biscuits, cheese, jalapenos, and butter.
  • Bake in the preheated oven for 30-35 minutes or until golden brown on top. Remove and allow to cool slightly then invert on to a plate. Serve immediately.

QUICK HERB AND CHEESE MONKEY BREAD

Quick Herb and Cheese Monkey Bread image

Prepared biscuit dough is the base for this pull-apart loaf, which is formed by rolling the dough in olive oil and herbs before piling in a bundt pan, which helps turn the loaf crispy and golden brown. Our tasters called them the Southern version of pizza-shop garlic knots.

Categories     side-dish

Time 1h5m

Yield 8 to 10 servings

Number Of Ingredients 8

Cooking spray
1 cup finely grated Parmesan
1 teaspoon dried oregano
1/4 teaspoon granulated garlic
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
2 packages prepared biscuits (about 16 biscuits), each biscuit cut in half
1/2 cup extra-virgin olive oil

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Spray a bundt or tube pan lightly with cooking spray.
  • Toss the Parmesan, oregano, garlic, rosemary and thyme in a small bowl until well mixed. Roll each biscuit half into a ball. Put 8 of the balls in a medium bowl and drizzle with 2 tablespoons of the oil, tossing until well coated. Transfer each ball to the Parmesan mixture to coat, then place in the prepared pan. Working in batches of 8, repeat with the remaining dough balls, overlapping in the pan as necessary.
  • Bake until the dough is puffed and browned, about 50 minutes; check halfway through the baking time and tent with foil if the bread is browning too quickly.
  • Let the bread cool 10 minutes. Loosen the bread from the sides of the pan with a thin spatula. Invert the pan onto a baking sheet, then flip the bread (decorative-side up) onto a serving plate.

HERB AND CHEESE MONKEY BREAD

Herb and Cheese Monkey Bread image

Makes 1 (10-inch) bread

Number Of Ingredients 19

Dough:
2 cups warm water (105°F to 110°F)
¼ cup (50 grams) granulated sugar
2 (0.25-ounce) packages (14 grams) active dry yeast
5 cups (625 grams) all-purpose flour
1 tablespoon (9 grams) kosher salt
¼ cup (57 grams) unsalted butter, melted
Topping:
½ cup chopped green onion
¼ cup chopped fresh parsley
3 tablespoons chopped fresh dill
⅓ cup whipped cream cheese
¾ cup (170 grams) unsalted butter, melted and divided
1 cup freshly grated Parmesan cheese
1 teaspoon (3 grams) garlic salt
¼ teaspoon (.5 grams) garlic powder
1 cup shredded sharp Cheddar cheese
⅓ cup (47 grams) sesame seeds
¼ cup (36 grams) poppy seeds

Steps:

  • For dough: In a medium bowl, combine 2 cups warm water, sugar, and yeast. Let stand until mixture is foamy, about 10 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, stir together flour and salt. Add yeast mixture and melted butter, and beat at low speed just until combined. Switch to the dough hook attachment. Beat at medium speed until dough is smooth and elastic, about 4 minutes. Spray a large bowl with cooking spray. Place dough in bowl, turning to grease top. Loosely cover and let rise in a warm, draft-free place (75°F) until doubled in size, about 1 hour.
  • On a lightly floured surface, turn out dough. Punch dough down, and gently shape into a ball. Cover and let rest for 10 minutes. Using kitchen shears, snip dough into 1-inch (25-gram) pieces. Shape into 48 dough balls.
  • Preheat oven to 325°F. Spray a 15-cup tube pan with baking spray with flour.
  • For topping: In a medium bowl, combine green onion, parsley, and dill. With your thumb, create a hole in the center of 12 pieces of dough. Spoon a heaping teaspoon of cream cheese into each hole, pressing dough edges together to seal. Dip filled dough balls in ½ cup (113 grams) melted butter, and roll in herb mixture.
  • In a small bowl, combine Parmesan, garlic salt, and garlic powder. Dip another 12 dough balls in same melted butter, and roll in Parmesan mixture.
  • In another small bowl, combine Cheddar and sesame seeds. Dip another 12 dough balls in melted butter, and roll in Cheddar mixture.
  • Dip remaining 12 dough balls in melted butter, and roll in poppy seeds.
  • Place dough balls in prepared pan, alternating flavor types, and pour remaining ¼ cup (57 grams) melted butter over dough.
  • Bake until a thermometer inserted near center registers 190°F, 50 to 55 minutes, loosely covering with foil halfway through baking to prevent excess browning, if necessary. Let cool in pan for 30 minutes. Remove from pan, and serve warm.

  • Preheat oven to 350F degrees. Very generously grease a 9- or 10-inch Bundt pan with butter. I used a dark non-stick Bundt pan and 350F degrees was perfect, so don't feel you need to lower the temperature unless your oven runs hot.
  • Place your desired herbs and cheeses into small dipping bowls. I used about 1/2 cup of each. Again, see below for tips and ideas for delicious herb and cheese options.
  • Stir minced garlic into melted butter. Cut each biscuit in half and roll into a ball. Complete this step before you start dipping in butter because if your hands are greasy, the rolls won't stay intact.
  • Dip each biscuit ball in butter and garlic mixture. Some of the garlic should adhere to the rolls as you do this. As you start to run low on the butter, more of the garlic will stick, so don't worry if it doesn't as much at the beginning. Roll each ball in desired coating and arrange the biscuits in the pan so the various coatings are alternated.
