SIMPLE CHOCOLATE FONDUE
If you opt for a more traditional chocolate fondue with vanilla instead of peppermint, serve with any of the dipping items below, plus banana slices, pineapple chunks or whole strawberries. If you opt for the peppermint flavor, garnish with chopped peppermint candies just before serving. Serves 12.

- Fill a medium-size pot 1/3 full with water and bring to a low boil. Once boiling, turn the heat to medium-low and place a metal mixing bowl on top of the pot. Pour the heavy cream into the bowl.
- If using whole chocolate, chop it into even, small pieces. It's easiest to do this with a serrated bread knife. Once the cream is warm, add the chocolate and whisk until smooth. Then, whisk in the peppermint extract or vanilla extract, depending which you prefer.
- Carefully transfer the melted chocolate mixture into a fondue pot. Light the flame underneath the pot to keep it warm.
CHOCOLATE FONDUE
Steps:
- Combine the condensed milk, chocolate chips, vanilla and a pinch of salt in a fondue pot with a lighted burner. Stir until the chocolate is just melted and warm. Place offerings such as strawberries, marshmallows, mini pretzels and pound cake cubes on a platter around the fondue pot for guests to choose from. Have fondue forks available for dipping and plates and flatware available for the dipped items (eating right from the fondue fork is bad fondue party etiquette!).

- Heat the heavy cream and the salt in a saucepan, over medium heat, until steaming.
- Remove from heat and add the chocolate. Let it stand for a couple of minutes, then whisk or stir until melted.
- Stir in the vanilla extract and, if using, the cognac.
- Adjust the texture by adding more heavy cream or chocolate if needed. Heavy cream will thin it out and chocolate will thicken.
- Pour into a fondue pot and serve with your favorite dippers!

- Place chocolate pieces in double boiler. Heat on low over a stovetop until chocolate is mostly melted.
- Add cream and stir completely.
- Heat mixture on low until it is smooth and even consistency, about 10 minutes.
- Add Amaretto nnd stir briefly for 1 minute.
- Remove immediately from stovetop. Place pot over fondue warmer if you have a one.
- Dip fruit in fondue using fondue forks or toothpicks.

- In a microwave-safe bowl, mix the sugar, heavy cream, chocolate, and butter together and microwave for 2 minutes.
- Take out of microwave and give it a quick whisk. Add wine and whisk again. Transfer to a fondue pot with a flame underneath. Serve with pound cake cubes, strawberries, and biscotti bits on the side, for dipping.
