1 teaspoon salt
1 teaspoon dried parsley flakes
1 teaspoon dried basil
3 large ears fresh corn on the cob, cut into 3-inch pieces
2 medium zucchini, cut into 1/4-inch slices
1 medium yellow summer squash, cut into 1/4-inch slices
1 medium sweet onion, sliced
1 large green pepper, diced
10 cherry tomatoes
1 jar (4-1/2 ounces) whole mushrooms, drained
1/4 cup butter

Steps:

  • In a large bowl, combine the oil, salt, parsley and basil. Add vegetables and toss to coat. Place on a double thickness of heavy-duty foil (about 28 in. x 18 in.). Dot with butter. Fold foil around vegetables and seal tightly. , Grill, covered, over medium heat for 20-25 minutes or until corn is tender, turning once. Open carefully to allow steam to escape.

¼ cup olive oil
2 large sweet potatoes, sliced
4 red potatoes, cubed
1 large onion, sliced into rings
1 teaspoon minced garlic
2 green bell peppers, sliced
2 red bell peppers, sliced
2 carrots, shredded
¼ cup Italian-style seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the bottom of a 9x13 inch baking dish with oil. Spread sweet potatoes on the bottom, then top with red potatoes, onion, garlic, green bell peppers, red bell peppers and carrots. Sprinkle seasoning generously over all and cover dish with aluminum foil.
  • Bake at 350 degrees F 1 1/2 hours or until potatoes are cooked through and tender; remove foil cover and stir.
  • Change oven temperature to 425 degrees F (220 degrees C) and bake mixture in oven for another 1/2 hour, or until browned on top.

This is a very simple yet tasty side dish. It is a Semi-cooked hot vegetable that gives a totally different taste and texture to cooked zucchini. I created this dish years ago because I did not care for the taste and texture of soft cooked zucchini. This has been a family favorite ever since. I am giving the ingredients for one serving and you can simply multiply it for the number you wish to make.

1 small baby zucchini (approx. 8 inch , not the big fat ones)
1 teaspoon melted butter or 1 teaspoon olive oil
1 tablespoon grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
1 pinch sweet paprika

Steps:

  • Wash off zucchini, cut off ends and split lengthwise.
  • Lay the split pieces of zucchini cut side up in a lightly greased baking dish.
  • Pour over the butter or oil.
  • Sprinkle the cheese evenly over the cut edge.
  • Sprinkle with spices.
  • Broil just until the zucchini slices get a lovely light brown on the top.
  • Remove from the broiler, it will be cooked ala-dente' with about half of the crunch still in it.
  • It is easiest to eat with a sharp knife handy to cut into small chunks for each bite -- but make sure you get some of the spices and cheese with each bite -- hm-m-m-m.

2 tablespoons vegetable oil or 2 tablespoons olive oil
1 large zucchini
1 large tomatoes
1/2 cup fresh green beans
2 chopped fresh garlic cloves
1 dash salt
green peppers or red pepper
yellow squash

Steps:

  • Put oil in large pan.
  • Warm pan while dicing veggies.
  • Dice the tomatoes, halve the green beans, slice the zucchini diagonally (makes it look fun!), and chop the garlic.
  • Keep the pan on a medium temp, you want the juices to blend slowly.
  • Throw the garlic and zucchini in warmed pan first, then add the rest.
  • Throw dash of salt on the veggies to bring out the juices.
  • The tomatoes will cook down almost completely, but the color they add is essential!
  • Cook over medium heat until either Al Dente or soft, whatever you prefer!

  • Transfer the vegetables to a serving dish, add the celery seed and toss well. Set aside.

2 Tbsp olive oil, light , or butter
1 clove garlic minced
1 medium onion sliced thinly and seperated into rings
4-6 small redskinned potatoes cut into quarters
2 medium zucchini cut lengthwise into quarters , then into 1 inch pieces
1 Tbsp fresh chopped thyme, rosemary and oregano
1/4 c freshly grated parmesean cheese
salt and freshly ground pepper to taste

Steps:

  • 1. par boil the potatoes over medium high heat till just tender - about 5-6 minutes. set aside to cool
  • 2. heat oil in a medium saucepan over medium heat, add garlic, rosemary, thyme and oregano, Add the zucchini, onion, and potatoes and saute till light golden brown - (about 12 minutes or so) tossing gently to make sure all the veggies get coated with the herbs
  • 3. preheat the broiler, and line a baking sheet with foil. Spread the vegetables out and sprinkle with salt,cracked black pepper, and parmesean cheese and put under the broiler about 4 minutes or till cheese is golden and bubbly. Enjoy!
  • 4. * if you want a little extra "flavor" you can substitute butter for the olive oil. My husband and I love it both ways.

1/2 lb cold fresh zucchini
1/2 lb cold fresh yellow squash
1/4 lb cold red pepper, 1/4 inch julienne cut strips
1/4 lb cold carrot, 4 inch x 1/4 inch sticks
1/4 lb cold red onion, 1/4 inch julienne cut strips
1 small cold corn, cob (1-6 "wheel" cut)
3 tablespoons cold butter or 3 tablespoons margarine
1 teaspoon salt
1/2 teaspoon garlic granules
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
2 teaspoons fresh parsley or 2 teaspoons dried parsley
1/2 teaspoon granulated sugar

Steps:

  • Rinse and wash all vegetables under cold water.
  • Cut the ends off of the zucchini and squash, then down the center lengthwise.
  • Using knife, cut into 1/4 inch bias half moons.
  • Slice red pepper in half and remove the stem, core and remove seeds.
  • Cut each half in half, then slice lengthwise into 1/4" julienne strips.
  • Slice both ends of red onion off, remove peel and core.
  • Slice lengthwise for a 1/4 inch julienne cut.
  • Peel carrots.
  • Trim top end of carrot and narrow bottom end to result in a 4 inch length of (somewhat) uniform width.
  • Cut each piece in half lengthwise, then cut the halves into quarters, result should be approximately 1/4 inch x 4 inch sticks.
  • Heat butter or margarine in a sauté pan over medium heat taking caution not to scorch.
  • Add salt, sugar and garlic.
  • Add vegetables (start with carrots and work back up the list- denser vegetables take longer to heat) and cook until hot and crisp/tender.
  • When vegetables are all in pan and cooking, add Worcestershire sauce, soy sauce and parsley.
  • Mix thoroughly and serve.

These are vegetables that I already had so luckily I didn't have to go out to get anything. the only thing with this recipe is that the each vegetable is cut differently.

1 medium yellow onion, cut into half rings
1 small rutabaga, cut into desired chunks
2 large carrots, cut into large chunks
1 large green pepper, cut into sticks
1 medium zucchini, cut into thin strips
3 cups mushrooms, sliced
1 1/2 tablespoons olive oil
1 tablespoon red wine vinegar
1 1/2 teaspoons garlic powder
salt and pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Put all vegetables into large baking pan (I use a large disposable pan, but have lost the cover that gave the dimensions for it. Use one that fits all the vegetables at once).
  • Add olive oil and red wine vinegar and coat all vegetables using your hands.
