CHEESY PIZZA FONDUE
While I was growing up, I would sit for hours reading cookbooks from cover to cover. I've carried that love of cooking with me through the years. I found this recipe when we lived in Wisconsin. - Julie Barwick, Mansfield, Ohio.

- In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the pizza sauce, basil and garlic powder. Reduce heat to low. Add cheeses; stir until melted. , Transfer to a small fondue pot or 1-1/2-qt. slow cooker; keep warm. Serve with breadsticks, garlic toast and green peppers.

- 1 Mix breadcrumbs and milk in a small bowl until fully moistened; set aside. 2 Combine tomato sauce and pepperoni (if using) in a small saucepan and heat to simmering. Stir in breadcrumb-milk mixture and simmer for 2 minutes, stirring constantly. 3 Remove from heat and stir in cheeses until melted. Transfer to a serving bowl and serve with warm pita triangles for dipping.

- Toss the cheeses with the flour in a bowl. Rub the inside of a saucepan with the cut sides of the garlic; discard the garlic.
- Whisk the wine, lemon juice and mustard in the saucepan and bring to a gentle simmer over medium heat. Add half of the cheese mixture and stir with a wooden spoon until melted. Add the remaining cheese mixture and stir until smooth; add the nutmeg.
- Continue to cook, stirring, 2 more minutes. Transfer to a fondue pot or slow cooker to keep warm. Serve with your choice of dippers.

In a small bowl, combine cornstarch and remaining pizza sauce until blended; stir into beef mixture. This is one of my kids' favorite meals, and it's incredibly simple and quick. You can add a little beef bouillon for a beefier taste. Serve with French bread or breadsticks. Dip bread directly into the pot or ladle into bowls to serve.

- Heat olive oil in a skillet over medium-high heat. Saute onion in hot oil until soft and translucent, 4 to 6 minutes.
- Heat a large pot over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

You don't need a fondue pot to prepare and serve this dish, but it would make for a fun and interesting conversation piece with your children at the dining table. It may also be worth it to you to dust off your old fondue pot from the basement or look for one cheaply at a second hand store. A mild cheddar cheese will work in this recipe, too and if you don't have roasted garlic on hand, just go ahead and add a small pinch of salt-free garlic powder.

- Heat the milk and the garlic in a saucepan over medium-low heat until simmering, 2 to 3 minutes.
- Toss the cheese and flour together in a bowl until the shreds are nicely floured.
- Whisk the cheese mixture into the milk a handful at a time, waiting until each handful melts before adding more. Whisk until cheese is completely melted and mixture is smooth and velvety.
- Holding the food with *fingers, a fondue fork or a regular fork, dip one or several of the options into the pot and swirl to coat with the cheese.
- I added a light sprinkle of dried parsley to the top of the fondue.
