I don't like eating soup seating the summer months, so I created this stuffed chicken breast to satisfy a craving for broccoli and cheese soup.

1 ½ cups finely chopped broccoli
4 ounces sharp Cheddar cheese, cubed

1 tablespoon tropical poultry rub (such as Savory Spice® Gold Coast Poultry Rub)

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8-inch square casserole dish with cooking spray.
  • Combine broccoli, Cheddar cheese, rice, and onion in a medium bowl. Add salt and garlic granules; mix well.
  • Cut a deep pocket into each chicken breast with a sharp knife. Stuff each breast with broccoli-cheese mixture, place in the prepared casserole, and sprinkle with poultry rub. Cover casserole with aluminum foil.
  • Place in the preheated oven and bake for 25 minutes. Remove foil and cook until chicken is no longer pink in the center and the juices run clear, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

3 jalapeños (chopped (remove seeds for milder))
3 oz 1/3 less fat cream cheese (softened)
4 oz reduced fat shredded cheddar jack (Sargento)
2 tbsp chopped scallions
8 thin sliced skinless chicken breast cutlets (3 oz each)
1/2 cup Italian seasoned whole wheat breadcrumbs (or GF crumbs)
1 1/2 juicy limes (juice of)
1 tbsp olive oil
salt and fresh pepper
olive oil non-stick spray

Steps:

  • Wash and dry chicken cutlets, season with salt and pepper. Preheat oven to 450°F.
  • Lightly spray a baking dish with non-stick spray.
  • Combine cream cheese, cheddar, scallions, jalapeño and bacon crumbles in a medium bowl.
  • Lay chicken cutlets on a working surface and spread 2 tbsp of cream cheese mixture on each cutlet.
  • Loosely roll each one, secure the ends with toothpicks to prevent the cheese from oozing out.
  • Place breadcrumbs in a bowl; in a second bowl combine olive oil, lime juice, salt and pepper.
  • Dip chicken in lime-oil mixture, then in breadcrumbs and place seam side down on a baking dish. Repeat with the remaining chicken.

Steps:

  • Preheat oven to 350 and grease a baking dish.
  • In a small mixing bowl, combine cream cheese, jalapeno peppers and 1/4 cup of the shredded cheese. Set aside.
  • Place 1 chicken breast between a folded piece of plastic wrap. Use a meat tenderizer to flatten the breast to 1/2" thickness.
  • Remove the plastic wrap and spread 1/4 of the cream cheese mixture onto the center of the chicken breast.
  • Roll the chicken breast and place into the crushed breading, evenly coating. If necessary, use toothpicks to keep the chicken breast rolled up.

Steps:

4 (5-6 oz.) boneless, skinless chicken breasts
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

3 medium jalapeños, seeds and membranes removed, finely diced
2 cloves garlic, minced

1 lime (sliced)
3 1/2 Tbsp vegetable oil (divided)
3 boneless skinless chicken breasts (cut in half and pounded to be 1/2 inch thick)
1 tsp chili powder
1 tsp dried oregano
3/4 tsp kosher salt
1/2 tsp ground cumin
1/2 tsp black pepper
1/2 tsp dried minced onion
1/4 tsp ancho chile powder
1/2 cup all-purpose flour
1 1/2 - 2 cups frozen corn kernels, thawed ((fresh corn works as well))
2 jalapeños (seeds removed and sliced lengthwise into strips)
2 cloves garlic (minced)
3 Tbsp lime juice ((juice of 2-3 limes))
1/2 cup water
1 - 1 1/2 cups shredded Mexican blend cheese ((or any cheese you prefer))
minced fresh cilantro, for garnish
extra lime wedges, for garnish

Steps:

  • To a mixing bowl, add chicken, chili powder, oregano, kosher salt, ground cumin, black pepper, dried minced onion, and ancho chile powder. Toss and massage spice mixture into all sides of chicken.
  • Add flour to a shallow bowl or plate and lightly dredge chicken in flour. Let chicken sit while you heat up your pan.
  • Heat large oven-safe skillet over MED-HIGH heat. Add lime slices to pan and char for 1-2 minutes per side, until charred and brown, as desired. Remove to a plate.
