Simply Cheesy Italian Mini Meatloaf and Green Beans in 30 Minutes image

Preheat oven to 375°. Prepare muffin tin with non stick olive oil spray. Set aside. Reserve ⅓ cup pasta sauce. Combine remaining ingredients in a large mixing

1 lb extra lean ground turkey (99% lean)
4 wedges spreadable low calorie cheese, garlic and herb flavor (I used Laughing Cow)
¼ cup Italian bread crumbs
¼ cup shredded Parmesan cheese (.5-oz)
4 garlic cloves, pressed or minced
1 Tbsp dried Italian seasoning
1 tsp onion powder
1 tsp kosher salt
½ tsp fresh ground black pepper
1 cup roasted garlic and onion pasta sauce (divided)
Non stick olive oil spray
½ cup shredded Parmesan cheese, for serving (optional)
1 lb green beans, stems snapped off
4 garlic cloves, sliced
½ tsp kosher salt
¼ cup water
½ lemon

Steps:

  • Preheat oven to 375°. Prepare muffin tin with non stick olive oil spray. Set aside. Reserve ⅓ cup pasta sauce. Combine remaining ingredients in a large mixing bowl. Mix well with hands. Portion mixture into muffin tin, filling 8 cups with mixture. Gently press down on meatloaf. Spread reserved sauce over top of the meatloafs. Bake for 20 minutes, or until meatloaves are cooked through. Remove from oven and sprinkle with Parmesan cheese. Serve and enjoy. Once mini meatloaves are in the oven begin preparing Garlic and Lemon Green Beans. In a large skillet over medium high heat, add olive oil. Slice garlic cloves and add to the pan. Stir and allow garlic to cook for about 30 seconds-1 minute. Add green beans, sprinkle with salt and cook for 2 minutes, stirring occasionally. Add water. Cover and cook for 5 minutes. Remove cover squeeze in juice of ½ lemon and stir. Allow to cook until liquid is nearly evaporated, about 3-5 minutes. Remove from skillet and place beans in a serving dish. Serve and enjoy!

30-Minute Mini Meatloaves with Whipped Cauliflower & Green Beans image

Comfort food but make it fast! This recipe incorporates a number of pantry ingredients and shortcuts like frozen cauliflower and steam-in-the-bag green beans to cut way down on prep time. Baking the meatloaf in a muffin tin reduces cook time by more than half and makes portion control easy.

1 tablespoon ketchup
1 teaspoon packed light brown sugar
½ teaspoon cider vinegar
⅓ cup whole-wheat panko breadcrumbs
¼ cup nonfat plain Greek yogurt
1 large egg, beaten
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
¼ teaspoon salt
¼ teaspoon ground pepper
1 pound 93%-lean ground beef
20 ounces frozen cauliflower florets
¼ cup nonfat plain Greek yogurt
½ teaspoon salt, divided
1 tablespoon chopped fresh chives
1 16-ounce package steam-in-bag fresh green beans
2 teaspoons extra-virgin olive oil
1 teaspoon lemon zest

Steps:

  • To prepare meatloaves: Preheat oven to 400°F. Lightly coat 8 muffin-tin cups with cooking spray. Stir ketchup, brown sugar and vinegar together in a small bowl; set aside.
  • Combine panko, yogurt, egg, Worcestershire, garlic powder, onion powder, paprika and 1/4 teaspoon each salt and pepper in a large bowl. Add beef and gently mix until just combined. Divide the mixture between the prepared muffin cups (avoid packing too tightly). Brush the top of each mini meatloaf with some of the ketchup mixture. Bake until an instant-read thermometer inserted in the center registers 160°F, 18 to 20 minutes.
  • Meanwhile, prepare whipped cauliflower & green beans: Bring about 1 inch of water to a boil in a large saucepan fitted with a steamer basket. Add cauliflower and steam until very tender, 10 to 12 minutes. Drain and return to the pot. Add yogurt and 1/4 teaspoon salt. Using an immersion blender (or food processor), puree until smooth. Sprinkle with chives.
  • Steam green beans in the microwave according to package directions. Drain well and transfer to a bowl. Add oil, lemon zest and the remaining 1/4 teaspoon salt; toss to coat.
  • Serve the meatloaves with the beans and cauliflower.

1 ounce fresh breadcrumbs or 1/2 cup fresh breadcrumb
cooking spray
1 cup chopped onion
2 garlic cloves, chopped
1/4 cup ketchup
1/4 cup chopped fresh parsley
2 tablespoons grated fresh parmesan cheese
1 tablespoon prepared horseradish
1 tablespoon Dijon mustard
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 ounces white cheddar cheese, diced small
1 1/2 lbs ground sirloin
1 large egg, lightly beaten
1 tablespoon brown sugar
2 tablespoons ketchup
1/8 teaspoon ground ginger
1/8 teaspoon cumin

Steps:

  • Preheat oven to 425 degrees.
  • Heat a skillet over medium high heat. Add fresh breadcrumbs, cook 3 minutes or until toasted, stirring frequently.
  • While the breadcrumbs cook, heat a large skillet over medium high heat. Coat the pan with cooking spray. Add the onion and garlic; saute 3 minutes.
  • Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients. Shape into 6 (4x2 inch) loaves; place on a broiler pan coated with cooking spray. Bake for 15 minutes at 425 degrees. After 15 minutes, spoon the glaze evenly over each meatloaf. Bake an additional 10 minutes until done.

This is a nice twist on the normal meatloaf recipes.. 8 mini meatloaves with a yummy sauce!! I have made this several times and recently added fresh mushrooms to meat mixture before shaping into loaves and it was fantastic... endless possibilities!

1 cup cheddar cheese
1 egg
1/2 cup quick oats
1 medium onion, finely chopped
3/4 cup milk
1 teaspoon salt & pepper
3/4 cup ketchup
1/2 cup brown sugar
1 tablespoon yellow mustard

Steps:

  • Preheat oven to 350 degrees.
  • Beat egg and milk together.
  • Add cheese, oats, onion, salt, & pepper to milk/egg mixture.
  • Mix in ground beef with your hands until all ingredients are incorporated well.
  • Shape into 8 loaves and place into a greased 9x13 pan.
  • Mix all sauce ingredients together and spoon over loaves.
  • You may want to make extra sauce for after its done cooking!
  • Place in 350 degree oven, uncovered, for 45 minutes.
