STRAWBERRY VINEGAR
I first discovered homemade fruit-infused vinegars years ago and have been hooked every since! Strawberry is my favorite, however you can play around with different fruit combinations. Warming the vinegar draws out even more flavor from the fruit and speeds along the infusion process. Store in a cool, dark place for up to 3 months. Refrigeration is highly recommended and can extend the freshness and quality for up to 6 months.

Steps:
- Heat vinegar and sugar in a small saucepan to just below boiling. Stir until sugar is dissolved.
- Place strawberries in a sterilized pint jar and lightly press with a muddler or the back of a spoon to release a bit of juice. Pour in vinegar and wipe the rim with a clean cloth. Seal and let sit in a cool, dark place until flavors develop, about 3 days. Shake jar gently once a day. Infuse longer for a more concentrated flavor.
- Strain the infused vinegar into a sterile bottle or jar through a cheesecloth or coffee filter. Seal.

- In a large bowl, combine strawberries and vinegar. Cover and let stand for 1 hour. Transfer to a large saucepan. Stir in sugar. Bring to a boil, stirring occasionally. Reduce heat; cover and simmer 10 minutes. Remove from the heat; cool completely., Strain and discard pulp. Pour liquid into sterilized jars and cover. Store in a cool dark place.

Steps:
- Slice tops of strawberries off. Place strawberries in a colander and wash off any debris. Pat dry and slice.
- Pour vinegar into a sealable jar. Add strawberries to the vinegar. Allow the fruit to infuse at room temperature for 2 days.
- Transfer mixture to a sealable bottle. Strain strawberries from the vinegar if desired.

- Toss the strawberries, balsamic vinegar, sugar, and freshly ground black pepper to taste, in a mixing bowl. Divide the berries among martini glasses and serve immediately.

Steps:
- Combine 1 pound strawberries, hulled, quartered, 1 cup white wine vinegar, 1/2 cup unseasoned rice vinegar, and 1/4 cup sugar in a large glass jar. Cover and chill 1-2 days. Strain through a sieve lined with cheesecloth or a coffee filter into a clean glass jar. Cover and chill.

- Strawberry vinegar can be made 3 months ahead. Keep chilled.
STRAWBERRIES WITH BALSAMIC VINEGAR
This "officially" serves 4-6, but two people could easily finish it off. If you're serving a group, serving the strawberries over mascarpone cheese (my favorite way) or vanilla ice cream adds some excellent complementary flavors. This recipe comes from Mark Bittman's "How To Cook Everything."

I love this recipe! It is from the "Frugal Gourmet Whole Family Cookbook" by Jeff Smith. I've made this simple recipe for many years. People are always impressed but... I never tell them how easy it is to make. Some recipes are best kept secret. But I will share this one...

- Hull the strawberries and cut them into quarters lengthwise.
- Place in a bowl and toss with the vinegar and sugar.
- Cover and allow to rest on the counter for about an hour so that the berries will "juice" then chill in the fridge for another hour.
- Toss again before serving.
- (I like a little more vinegar sprinkled on before serving but do this to your own taste.
- I should mention that these strawberries do not keep well so they should be prepared and eaten the same day. If made more than a few hours ahead of time they are mushy and texturally unappealing. Just thought I should mention that.

- Fill a large jar with rinsed strawberries (do not hull). Cover with vinegar and seal. Refrigerate for 10 days. Strain and measure vinegar; discard berries. For each pint of vinegar, add 3 cups of sugar. Bring mixture to a boil; boil 2 minutes. Cool. Pour into sterile bottles or jars; seal.
