1 cup quick-cooking grits
3/4 teaspoon salt, divided
2 pounds bulk pork sausage, cooked and drained
2 cups shredded cheddar cheese, divided
3 large eggs
1-1/2 cups whole milk
2 tablespoons butter, melted
Pepper to taste

Steps:

  • In a saucepan, bring water to a boil. Slowly whisk in the grits and 1/2 teaspoon salt. Reduce heat; cover and simmer for 5 minutes, stirring occasionally., In a large bowl, combine grits, sausage and 1-1/2 cups cheese. Beat the eggs and milk; stir into grits mixture. Add the butter, pepper and remaining salt., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, about 1 hour. Sprinkle with remaining cheese; bake 15 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.

1 teaspoon salt
1 cup quick-cooking grits
1 (16 ounce) package sharp cheddar cheese
1/4 cup butter, melted
2 eggs, slightly beaten

Steps:

  • Heat water and salt to boiling.
  • Gradually add grits and return to boiling.
  • Reduce heat.
  • Simmer uncovered, stirring for 5 minutes.
  • Remove from heat and allow to cool, slightly.
  • Add cheese, butter and eggs, mix well to ensure all of the grits are incorporated.
  • Bake at 350 degrees until a light golden brown, about 50 minutes.

1 pound ground breakfast sausage
3 cups lowfat (2 percent) milk
1 cup quick-cooking grits
3 cups grated Cheddar
4 large eggs
1 tablespoon hot sauce
4 scallions, white and light green parts, thinly sliced, dark green tops reserved for garnish
4 scallions, white and light green parts, thinly sliced, dark green tops reserved for garnish
1 jalapeno, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • In a 10-inch cast-iron skillet over medium heat, cook the sausage until browned and the fat is rendered, about 10 minutes, breaking up the chunks of sausage with the back of a wooden spoon. Remove the sausage to a bowl and set aside.
  • Add 2 cups of the milk and 2 cups water to the skillet and bring to a boil. Whisk in the grits slowly until smooth and no lumps remain. Reduce the heat and continue to cook, whisking, until very thick, about 5 minutes. Remove from the heat and stir in about half of the grated cheese.
  • In a medium bowl, whisk together the eggs with the hot sauce and remaining 1 cup milk. Slowly stream the egg mixture into the skillet with the grits while continuously whisking. Fold in the cooked sausage, scallions and jalapeno and season with salt and pepper. Top with the remaining cheese and bake until a knife inserted in the center comes out mostly clean, 50 minutes to 1 hour.
  • Slice the reserved scallion tops and sprinkle on top just before serving.

2 cups whole milk
1 cup stone-ground grits
Coarse salt and freshly ground black pepper
12 ounces mild pork or turkey sausage
1 cup grated sharp Cheddar (about 4 ounces)
1 tablespoon unsalted butter, plus more for the dish
1/4 teaspoon cayenne pepper
4 large eggs, lightly beaten
2 green onions, white and green parts, chopped
1 jalapeno chile, seeded and finely chopped

Steps:

  • In a large heavy-bottomed saucepan, combine 2 cups water and the milk and bring to a boil over medium-high heat. Stir in the grits and return to a boil. Season with 1 teaspoon of salt and pepper. Decrease the heat to low and simmer, stirring occasionally, until creamy and thick, 45 to 60 minutes.
  • Meanwhile, heat a medium skillet over medium heat. Add the sausage and cook, stirring occasionally to break up the sausage, until no longer pink and the meat is cooked through, 5 to 7 minutes. Remove with a slotted spoon to a paper-towel-lined plate to drain and cool slightly.
  • Remove the grits from the heat and add the cheese and butter. Taste and adjust for seasoning with salt and pepper and stir to combine. Add the reserved sausage, cayenne, eggs, green onions and jalapenos and stir until well incorporated.
  • Butter a large (9-by-13-inch) casserole dish. Spoon the mixture into the prepared dish. At this point, the casserole can be covered and refrigerated overnight (bring to room temperature before baking), or baked immediately.
  • Bake at 350 degrees F from room temperature until bubbly and golden brown, about 1 hour. Remove to a rack to cool slightly before serving.

4 tablespoons butter
4 tablespoons flour

1 # skinless smoked sausage

Steps:

  • Cut sausage in half, lengthwise, and then chop into 1/2" pieces. Cook in a frying pan for about 10 minutes, turning frequently to slightly brown. Put cooked and diced potatoes in a 2 quart casserole dish, add the meat and give it a gentle toss. Mix all remaining ingredients (except for shredded Cheddar cheese & paprika)in a medium saucepan over a medium heat until warm, melted and smooth, use a whisk and stir constantly. Pour cheese sauce over the potatoes and meat. Sprinkle with the Cheddar cheese and then the paprika. Bake in a preheated oven at 350°F for 35 to 45 minutes.

4 - 4 1/2 c water
1 c quick cooking white hominy grits
1/2 tsp salt
2 - 3 Tbsp butter
1 c shredded, sharp cheddar cheese
1 c shredded, monterey jack cheese
3 beaten eggs
1/2 c milk
1 tsp oil
4 - 5 links, beddar cheddar smoked sausage ( cut lengthwise then cut into bite sized pieces) or your favorite sausage
can add some onion with the sausage - i didn't this time , gives great flavor
1 clove minced garlic is great also, to cook in with the sausage

Steps:

  • 1. Preheat your oven to 350 degree F. Spray a 3 quart casserole dish with nonstick cooking spray or grease. Set aside. Saute the sausage in 1 tsp oil just till it starts to get some caramelization as it's already cooked. If using raw sausage cook until no longer pink, and starting to brown. Drain if needed.
  • 2. In a large saucepan, bring the 4 cups water to a boil. Stir in the grits and salt, reduce heat to medium. Cook for 2 1/2 - 5 minutes; stirring frequently, until nice and creamy.
  • 3. Stir in the cheddar cheese and butter until cheese is melted.
  • 4. Now, stir in the beaten eggs, milk and sausage. Pour into prepared baking dish.
  • 5. Sprinkle evenly with Monterey Jack cheese. Place in oven and bake for 25 - 30 minutes or until set and cheese is turning golden.
  • 6. Enjoy!

  • In a sauce pan cook grits with 4 cups of salted water until thick. While grits are cooking crumble and cook sausage. When sausage is done add onion and cook for a few minutes more to soften onions. Drain.
  • When grits are done add egg, butter and 1 cup of the cheese to the grits. Combine the sausage and grits and pour into a 13x9 baking dish. Top with 1 cup of cheese and sprinkle with paprika. Bake in preheated 325 degree oven until bubbling and cheese is starting to brown. About 45 mins.

1/4 cup of crumbled bacon or bacon bits to garnish (optional)

Steps:

  • Preheat the oven to 350. Spray a 1-1/2 quart baking dish with nonstick cooking spray.
  • Boil the grits in 3 cups of salted water on medium-high heat until thickened.
  • Turn the heat down to medium-low. Add the butter and 3/4 cup of the cheese. Stir frequently until the cheese and butter melt.
  • Remove the mixture from the heat and cool until it is lukewarm.
  • In a medium bowl, beat the eggs. Stir the eggs into the grits and cheese. Mix well.
  • Pour the grits, cheese, and egg mixture into the baking dish.
  • Sprinkle the remaining cheese over the top of the mixture.
  • Put the casserole in the oven.
  • Bake for 40 minutes.

I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a.
