No skillet-or stovetop-required for quick, decadent French toast. Waffling creates two textures: thin and crunchy and thick and fluffy, for variation in every forkful.

1 1/2 cups milk
3 tablespoons sugar
1 teaspoon pure vanilla extract
Pinch salt
5 large eggs
Four 1 1/2-inch-thick slices brioche or challah bread
Melted unsalted butter, for brushing waffle iron
Maple syrup, raspberries and confectioners' sugar, for topping
Special equipment: waffle iron (preferably Belgian style)

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the milk, sugar, vanilla, salt and eggs in a bowl or baking dish. Soak a piece of bread in the mixture for 2 minutes per side.
  • Lightly brush the top and bottom of the waffle iron with butter. Place the soaked bread on the waffle iron and close gently (don't push down). Cook until golden brown and dry underneath when you lift a corner, 5 to 6 minutes. Keep the warm in the oven or covered with foil on a plate. Repeat with the remaining bread.
  • Top the French toast with syrup, raspberries and confectioners' sugar.

2 cups 2% milk
1/2 cup sugar
1 teaspoon vanilla extract

Maple syrup

Steps:

  • In a large bowl, whisk the first 6 ingredients until blended. Dip both sides of bread in egg mixture. Place in a preheated waffle iron; bake until golden brown, 4-5 minutes. If desired, cut waffles into thirds. Serve with syrup. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in freezer containers. Reheat frozen waffles in a toaster on medium setting.

4 -6 slices thick-sliced bread (I use 'Texas Toast' bread)
2 eggs, beaten
1/4 cup milk
2 tablespoons butter, melted
1/4 teaspoon vanilla
1/4 teaspoon cinnamon (optional)

Steps:

  • Preheat waffle iron.
  • Allow 2 to 3 slices of bread per serving.
  • Trim bread, if necessary, to fit your waffle iron.
  • Beat the eggs, milk, butter, vanilla and cinnamon in a shallow bowl or pie plate.
  • Dip bread in egg mixture, coating both sides.
  • Cook in hot waffle iron until golden brown.
  • Watch closely so it doesn't get too brown-- it doesn't have to cook as long as waffles do.

Peanut Butter French Toast

4 large eggs
3/4 cups whole milk
2 tablespoons sugar
1/2 teaspoon vanilla extract
Pinch of salt
8 slices good quality sliced white or wheat bread, crusts removed
Nonstick cooking spray or melted butter
4 tablespoons smooth peanut butter
Confectioners' sugar, for garnish
Fresh mixed berries, for garnish
Sliced ripe bananas, for garnish
Fresh mint sprigs, for garnish
Mixed Berry Syrup, for garnish, recipe follows
1 pint fresh strawberries
1/2 pint fresh blackberries
1/2 pint fresh raspberries
1/4 cup granulated sugar
1/4 cup water
2 heaping tablespoons seedless raspberry preserves
1 tablespoon fresh lemon juice

Steps:

  • Crack the eggs into a medium baking dish and whisk lightly. Add the milk, sugar, vanilla and salt and whisk until smooth.
  • Press down on bread slices to flatten slightly. Soak the bread in the egg mixture until completely soaked through, about 4 to 5 minutes per side.
  • Heat a square 4 slot waffle maker according to the manufacturer's directions. Spray the top and bottom grates liberally with nonstick spray or melted butter. Remove the French toast from the eggs using a slotted spatula, allowing excess egg mixture to drip off. Make 2 at a time on the diagonal of the grates. Press down gently at first, then add a little pressure to the cover and press until the cover is completely closed. Cook until golden brown, about 3 minutes. Repeat with the remaining 6. Carefully remove each French toast waffle to a plate.
  • Schmear each waffle with peanut butter. Dust with confectioners' sugar and drizzle with some of the mixed berry syrup. Garnish with fresh mixed berries, berry syrup, banana slices and mint sprig.
  • Mixed berry sauce:
  • Combine the strawberries, blackberries, raspberries, sugar and 1/4 cup water in a medium saucepan, bring to boil and cook, stirring occasionally, until the berries are soft, about 10 minutes. Remove from the heat and let cool for 5 minutes.
  • Transfer the berry mixture to a blender or food processor, add the raspberry preserves and lemon juice and blend until smooth. Transfer to a bowl and let cool to room temperature. The sauce will keep in the refrigerator stored in a container with a tight fitting lid for 1 week.
