1 package (16 ounces) rigatoni or large tube pasta
2 tablespoons butter
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups whole milk
1/4 cup water
4 large eggs, lightly beaten
2 cans (8 ounces each) tomato sauce
2 cups shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375°. In a 6-qt. stockpot, cook pasta according to package directions. Drain; return to pot. Cool slightly., Meanwhile, in a small saucepan, melt butter over low heat. Stir in flour and salt until smooth; gradually whisk in milk and water. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove from heat., Add eggs to pasta, tossing to coat. Divide mixture between two greased 8-in. square baking dishes. Layer each dish with one can tomato sauce, 1 cup mozzarella cheese and half of the white sauce; sprinkle with Parmesan cheese. Bake, uncovered, until a thermometer reads 160°, 30-35 minutes. Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Cover casserole with foil; bake 40 minutes. Uncover; bake until a thermometer inserted in center reads 165°, 7-10 minutes.

One Pot Cheesy Chicken Rigatoni image

Number Of Ingredients 7

1 box Barilla Rigatoni
15 oz Galbani Ricotta
1 cup Galbani Mozzarella, shredded
2 24 oz jars of Barilla Marinara sauce
3 cups water
12 oz frozen precooked diced frozen chicken
1 tablespoon olive oil

Steps:

  • Preheat oven to 350 F degrees.
  • In a dutch oven, drizzle a tablespoon of olive oil over medium high heat.
  • Add the precooked chicken and saute until it's no longer frozen.
  • Raise the fire to high heat and add the jars of sauce and the water.
  • Wait until it comes to a boil and add the rigatoni.
  • Stir occasionally.
  • In a medium bowl, grate about 1 cup of mozzarella cheese.
  • Add the 15 oz ricotta cheese to the mozzarella and stir until well mixed. Set aside.
  • When the sauce has cooked down so it's no longer soupy and the pasta is al dente, turn off the heat.
  • Add ice cream scoops of the ricotta/mozzarella mixture to the top of the pasta.
  • Pop it in the oven for 35 minutes.
  • When the timer is up, turn the broiler on for just 3-4 minutes, watching carefully, to add a little brown to the cheese.
  • Remove from the oven and let it sit for about 10-15 minutes before serving.

2 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1/2 cup barbecue sauce
1 cup grated Cheddar cheese
1/4 cup chopped fresh cilantro

Steps:

  • Heat oil in deep 10- to 12-inch skillet over medium heat.
  • Cook chicken, bacon, 1/4 cup of the onion and the garlic in oil 2 minutes, stirring occasionally.
  • Add pasta and chicken broth; heat to boiling. Cover and cook 10 to 15 minutes, stirring occasionally, until pasta is tender.
  • Stir in 1/4 cup of the barbecue sauce and the cheese. Continue cooking 1 minute to melt cheese.
  • Serve topped with remaining 1/4 cup onion, 1/4 cup barbecue sauce drizzled over top, and cilantro.

12- oz Rigatoni ((4-1/2 cups dry))
4 cups cooked chopped chicken
1 (10.75-oz) can cream of chicken soup
1 cup shredded mozzarella cheese
¼ cup parmesan cheese
1 (10.75-oz) can cheese soup
1 (5-oz) can evaporated milk
1¼ cup heavy cream
2 tsp minced garlic
1 cup shredded mozzarella cheese
½ cup parmesan cheese
¼ tsp black pepper

Steps:

  • Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
  • Cook pasta according to package directions. Drain.
  • In a large saucepan, combine cheese soup, evaporated milk, heavy cream and garlic. Cook over medium-high heat until sauce comes to a boil. Reduce heat and simmer 5 to 7 minutes, until sauce thickens. Remove from heat. Stir in mozzarella cheese, parmesan cheese and pepper.
  • In a large bowl combine cooked pasta, cooked chicken, cream of chicken soup and cheese sauce.

1 pound rigatoni
1 onion, finely diced
2 tablespoons olive oil
1 1/2 pounds Italian sausage
1 teaspoon crushed red pepper flakes
Two 25-ounce jars marinara sauce
Two 8-ounce balls fresh mozzarella, cut into large cubes
1/2 cup grated Parmesan
Minced fresh parsley, for garnish

Steps:

  • Bring a large pot of water to a boil. Cook the rigatoni according to the package instructions; drain and set aside to cool.
  • Saute the onions in the olive oil in a skillet over medium heat until golden, 3 to 4 minutes. Crumble in the sausage, add the crushed red pepper and cook for a couple of minutes. Add the marinara sauce, mix everything together and cook for 5 to 7 minutes. Set aside to cool.
  • To assemble, add about 2 spoonfuls of the sauce--just enough to coat the bottom--to a baking dish. Then layer half of the cooled noodles, half of the mozzarella cubes and half of the remaining sauce. Repeat the process: layer the remaining noodles, mozzarella and sauce, then top with the Parmesan. Cover and put in the fridge or freezer until ready to cook.
  • When ready to cook, preheat the oven to 350 degrees F. Cook the rigatoni until heated through and bubbling, 25 minutes straight from the fridge, or 2 hours straight from the freezer. Garnish with minced parsley before serving.

1 pint heavy cream

1 pound high-quality rigatoni - cooked just over halfway
2 cups mozzarella
2-3 cups lightly steamed broccoli
3 cups cooked chicken, cubed or shredded

Steps:

  • Melt butter over medium-low heat. Add garlic and cook for about 30 seconds, or until fragrant. Add heavy cream. Keep heat on medium-low, stirring frequently, until lightly bubbling.
  • Slowly add cheese while stirring. Turn heat down a bit and continue to cook until desired thickness is reached.
  • Preheat your oven to 325 degrees. Boil your noodles until they are about 1/2 to 2/3 done, and then drain well. Place noodles, broccoli, and chicken into an oven-safe 9x13 casserole dish that's been lightly sprayed with cooking spray. Pour sauce over the top, and top the whole thing with mozzarella cheese.
  • Bake pasta for 30-40 minutes. If the cheese starts to brown, cover with tin foil and move casserole to a lower rack.

400 g dried pasta shapes ((I used rigatoni))
1 tbsp vegetable oil
3 large chicken breasts (cut into bitesize chunks)
1 large onion (peeled and chopped)
1 red bell pepper (de-seeded and chopped)
1 yellow bell pepper (de-seeded and chopped)
pinch of salt and pepper
2 cloves garlic (peeled and minced)
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
800 g tinned chopped tomatoes
120 ml double (heavy) cream
100 g fresh baby spinach
6 rashers cooked bacon (chopped)
100 g strong cheddar cheese (grated)
100 g mozzarella (grated)
Small bunch parsley (roughly torn)

Steps:

  • Preheat the oven to 190c/375f. Boil a large pan of water and cook the pasta for 1 minute less than recommended on the pack. Drain.
  • Whilst the pasta is cooking, heat the oil on a medium heat, in a large frying pan. Add the chicken, and cook until just sealed - about 5 minutes.
  • Add the onion and cook for a further 3-4 minutes until the onion is softened.
  • Add the chopped peppers, salt, pepper, garlic, tomato puree, oregano and thyme. Stir and cook for 2-3 minutes.
  • Stir in the tinned tomatoes and cream, bring to a gentle bubble, then add the pasta, spinach and cooked bacon. Stir everything together, then transfer to a large baking dish.
  • Top with the cheddar and mozzarella, and place in the oven for 20-25 minutes, until the cheese is golden brown.
  • Take out of the oven and top with parsley before serving.

Steps:

  • Cook Pasta: Cook the pasta in a large salted pot of boiling water according to package instructions, until al-dente. Reserve ½ cup of pasta water. Drain, rinse with cold water and set aside.
  • Make the sauce: In a large skillet, add the bacon and cook it until it starts rendering some fat. Add the chicken, onion, garlic and cook until chicken is no longer pink and is cooked through. Add diced tomatoes, pasta water, basil, hot sauce, and cook for 10 minutes. Add sour cream and stir. Taste for seasoning and adjust with salt and pepper as needed.
  • Finish the dish: Stir in the pasta, add the mozzarella cheese and toss it all together to make sure all pasta is covered in the cheese and sauce.
  • Garnish with Parmesan and serve: Garnish with fresh Parmesan cheese and serve warm.

Add the leeks, celery, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the vegetables are softened and just starting to caramelize, 5 to 6 minutes. Stir in the garlic until softened, about 1 minute. Add the rigatoni and white wine and cook, stirring occasionally, until the wine has almost evaporated and is thickened, 2 to 3 minutes.
  • Add the lemon juice, 1 1/2 cups water, 1/2 teaspoon salt and a few grinds of pepper and stir to combine. Cook, stirring frequently, until the liquid has almost evaporated and the pasta is al dente, 14 to 16 minutes. Add the lemon zest, peas, mozzarella, Parmesan, heavy cream, capers, rosemary, thyme, 1/2 teaspoon salt and a generous amount of pepper and cook, stirring, until the cheese is melted and the peas are warm, about 2 minutes. Divide between 2 serving bowls and garnish with celery leaves.

Steps:

  • Fill a stockpot with about 6 quarts of water, for the pasta. Heat on high until boiling.
