- In a large skillet, heat 1 tablespoon oil over medium heat. Add almonds and sunflower kernels; cook until toasted, about 4 minutes. Cool., In a large bowl, combine coleslaw mix, onions and red pepper. In a small bowl, whisk vinegar, sugar, pepper, contents of ramen seasoning packets and remaining oil. Pour over salad; toss to coat. Refrigerate until serving. Break noodles into small pieces. Just before serving, stir in noodles, almonds and sunflower kernels.

RAMEN NOODLE SLAW
This summer my son graduated from high school, and we attended over 20 graduation parties. Needless to say, we're now broke (lol), but I also got quite a few wonderful recipes. This is one of them. To make it a complete meal, just add chicken. While this does not have to be cooked, I added 30 minutes under "cooking time" because it does have to chill for 30 minutes.

Steps:
- Put the cole slaw in a large bowl.
- Open the Ramen noodles.
- Crumble the noodles and add to the cole slaw.
- Save the seasoning packets for the dressing.
- Add the onions, almonds, and sunflower seeds to the slaw mixture.
- Toss.
- In a separate bowl mix oil, vinegar, sugar, soy and seasoning packets from the Ramen noodles.
- Pour over the cole slaw mixture and toss.
- Chill 1/2 hour before serving.

This is nothing like the mayonnaise based coleslaws that most people think of.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, whisk together the oil, vinegar, sugar, ramen noodle spice mix, salt and pepper to create a dressing.
- Place sesame seeds and almonds in a single layer on a medium baking sheet. Bake in the preheated oven 10 minutes, or until lightly brown.
- In a large salad bowl, combine the cabbage, green onions and crushed ramen noodles. Pour dressing over the cabbage, and toss to coat evenly. Top with toasted sesame seeds and almonds.

This is a spiced up version of a quick and easy salad. This particular recipe won a prize at my office Luau themed pot-luck. Goes great with Kalua Pig Recipe #358671.

- Put the cole slaw in a large bowl.
- Open the Ramen noodles and take out the seasoning pack.
- Crumble the noodles and set aside.
- Add the cilantro, onions, almonds, and sunflower seeds to the slaw mixture and mix together.
- In a separate bowl mix oil, vinegar, soy, bitters and seasoning packets from the Ramen noodles.
- Pour over the cole slaw mixture,toss and chill at least 1/2 hour. (overnight is preferred).
- For a crunchier salad, add the crumbled noodles and chill 1/2 hour before serving. To have soft noodles, add the crumbled noodles and chill overnight.

I admit it, I still love ramen. In this yummy recipe, expect fast, easy, and spicy with salty, sweet, and sour flavors kicking in. The spiciness level can be adapted to your taste by adjusting the chili garlic sauce. This will make 4 side servings or 3 hearty main course servings.

- Whisk soy sauce, sesame oil, brown sugar, rice vinegar, chili garlic sauce, and ginger together in a small bowl. Add peanut butter, whisking until well combined, and set aside.
- Bring 4 cups of water to a boil in a pot. Discard the flavor packet and add ramen noodles to the boiling water. Cook until noodles are tender, 4 to 5 minutes. Drain noodles, reserving some of the noodle water in case you need to thin out the sauce later.
- Pour sauce over ramen noodles, tossing until well coated. If sauce is too thick, thin out with a small amount of the reserved noodle water until you reach your desired consistency. Your hot noodles will soak up the sauce. Garnish with peanuts and green onion, and serve.

SPICY PEANUT CHICKEN RAMEN DINNER COLE SLAW
A different and delicious take on the ramen coleslaw salad! I came up with this recipe when we found ourselves making and eating our other version so often (recipe#240922, it's so good!) that we wanted a slightly different kind. :) The recipe makes 4 main-dish portions, or 8-10 side dish portions. It's great as a dinner entrée, and fast and easy to make.

- Sauté the chicken pieces in olive and sesame oils until browned. Drain and set aside.
- In a very large bowl, stir together the dressing ingredients well.
- Add the browned chicken and coleslaw mix or shredded cabbage to the dressing and toss well to coat. Set aside.
- Into a bowl, break up the ramen noodles into smaller pieces. In a saucepan, heat the amount of water according to package directions to a brisk boil and add the seasoning packets. Add the bowl of noodles all at once to the boiling seasoned water and cook, stirring occasionally, for 90 seconds. (You want the noodles slightly cooked, but not as limp as ramen will get if you cook it fully.) When noodles have cooked for 90 seconds, remove from heat and immediately drain.
- Add the semi-cooked drained ramen noodles to the coleslaw and toss again to combine well.
- Place salad in a large container and chill in refrigerator for at least 2 hours (it helps to cool and chill them if you stir the slaw a couple of times during chilling).
- Garnish with chopped toasted peanuts. Makes 4 entrée-size servings.

STIR-FRIED SHIN RAMYUN (SPICY RAMEN)
Flavorful, Korean and contemporary -- a perfect snack or breakfast, especially with a fried egg or strips of sweet Korean barbecue pork. My directions are more extensive just for clarity, but it's the ideal easy fry-up with whatever you have in your fridge. I use leftover Asian sweet-and-spicy meat I have on hand. Leaving out meat-and-egg garnishes, it's automatically vegan.

- In a medium saucepan boil water.
- Add ramen noodles and cook for 2-3 minutes until chewy. Remember, you're going to be frying these, so they'll be soft by the time you're done.
- Drain the noodles and keep them close by.
- Add the oil and chopped onions, bell pepper, and carrots to a heated frying pan or wok. Cook, stirring every once in a while, over medium heat for 1 minute.
- The vegetables will still be crunchy, but it's time to add the noodles. Pour the noodles into the pan and stir to mix the noodles and vegetables. Cook, stirring frequently, until the noodles don't seem slick and wet anymore.
- Add the soy sauce, and let it sit and sizzle for a few seconds before stirring to incorporate. This makes it so that it caramelizes a bit and burns off any excess liquid, so that your noodles don't get wet. Stir to incorporate.
- Add the Shin Ramyun spicy seasoning packet to taste. I don't add the whole packet; some of this is reserved for another use because the flavor is just so darn delicious.
- Transfer noodles to a bowl, or fry for a minute or two more if you'd like. The vegetables will have steamed a bit to a soft al dente at their peak from the noodles' original wetness, and the whole dish is now dry and beautiful. This definitely isn't your soft, saucy ramen, and it lends a nice, distinct texture.
- Eat with a fried egg or sweet Korean barbecue, garnished with some green onions if you'd like. It's a perfect balance of flavor.
