If you have trouble shaping buns you may wish to do it this way- to add the cheese roll dough out as you do for cinnamon rolls, sprinkle with cheese. Roll up, slice into 1 inch pieces, place on grease cookie sheet. Let rise for 1 hour.

1/2 cup of lukewarm water
1 teaspoon sugar
1 tablespoon yeast
3 1/2 cups lukewarm water
1/2 cup sugar
1/2 cup lard
1 teaspoon salt
2 tablespoons vinegar
8 -10 cups all-purpose flour
1/2 of a 907 gram block old cheese, grated

Steps:

  • Mix first amount of water and sugar together, sprinkle on yeast. Let stand 10 minutes, stir.
  • In the bowl of your standing mixer, place water,sugar,lard, salt and vinegar. Mix until lard has melted. Add proofed yeast and continue mixing.
  • Add the flour 1 cup at a time, to form a soft, smooth dough.Add the grated cheese, just to blend. The dough should stick just slightly to your fingers when touched, but not overly sticky. Knead for 5-7 minutes, roll in a ball, place in slightly oiled bowl turning dough to coat. Cover with a clean T- towel and let rise in a warm place for 2 hours. Knead down, let rise 1 hour. Shape into buns, dough will be sticky so grease your hands first.
  • Places on greased cookie sheet.Let rise for 1 hour. Bake at 350 for 15 to 20 minutes, until golden brown.

These savory buns-think cinnamon rolls, but with cheese and bacon instead of a sweet sugary filling, are the perfect solution to those few pieces of leftover cooked bacon hanging out in the fridge. You can prep the dry mix up to one month ahead of time, and store it in a container at room temperature. Just give it a shake before using to re-mix the ingredients.

2 cups all-purpose flour, plus more for rolling out dough
1 tablespoon granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 cup buttermilk
8 tablespoons (1 stick) butter, melted
1 1/2 cups shredded Monterey Jack
6 slices cooked bacon, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.
  • In a separate bowl or measuring cup, whisk together the buttermilk and 6 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it forms a shaggy dough.
  • Dump the dough onto a lightly floured surface. Using your fingertips, gently press the dough out into a 12-by-8-inch rectangle. Sprinkle the cheese on top, leaving a 1/4-inch border. Evenly sprinkle the bacon over the cheese. Roll the dough into a log, starting from the longest (12-inch) side nearest you. Pinch the ends closed. Cut into 8 equal pieces.
  • Using a pastry brush, use 1 tablespoon of the butter to coat the bottom and sides of an 8-inch round cake pan. Arrange the rolls, cut-side down, in the pan. Gently press them down with your fingertips to flatten slightly. Brush the tops of the buns with the remaining melted butter.
  • Bake until golden brown and the cheese is bubbly, 23 to 25 minutes. Cool in the pan for 5 minutes before serving.

2 1/4 teaspoons active dry yeast (one 1/4-ounce package)
2 tablespoons sugar
4 tablespoons unsalted butter, melted, plus more for the bowl and plastic wrap
1 large egg yolk
2 3/4 cups all-purpose flour, plus more for the work surface
1 teaspoon kosher salt
5 slices bacon, cut into 1/4-inch pieces
2 tablespoons all-purpose flour
3/4 cup milk
1 large egg yolk
1 cup shredded Cheddar
2 tablespoons chopped fresh chives
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, at room temperature, for the pan
4 tablespoons unsalted butter, at room temperature
2 tablespoons chopped fresh chives

Steps:

  • For the dough: Warm the milk and 1/2 cup water in a medium saucepan over low heat until it is about 100 degrees F (but no more than 110 degrees F). Remove the saucepan from the heat, and sprinkle the yeast over the the liquid. Sprinkle a pinch of the sugar over the top, and set aside without stirring until foamy, about 5 minutes. Then whisk in the butter and egg yolk.
  • Whisk together the flour, remaining sugar and salt in a large bowl. Make a well in the center, and stir in the yeast mixture with a wooden spoon until you have a thick and slightly sticky dough. Turn the dough onto a floured work surface, and knead until soft and elastic, about 6 minutes. Shape the dough into a ball.
  • Brush the inside of a large bowl with butter. Add the dough ball, turning to coat lightly. Cover the bowl with plastic wrap, trace a circle the size of the dough ball on the plastic and note the time. Let the dough rise in a warm place until doubled in size, about 1 hour 30 minutes.
  • Turn the dough out of the bowl, and knead briefly to release excess air; re-form it into a ball, and return it to the bowl. Lightly butter a large piece of plastic wrap, and lay it on the dough. Cover the entire bowl tightly with the rest of the plastic, and refrigerate for 4 hours or overnight to let the dough proof.
  • For the filling: Cook the bacon in a large nonstick skillet over medium heat until browned and crisp, about 5 minutes. Transfer the bacon to a small bowl, and remove all but 1 tablespoon of the fat from the skillet. Return the skillet to medium heat. Whisk the flour into the bacon fat, and cook, whisking, until light brown, about 1 minute. Slowly whisk in the milk, and continue whisking until thickened, about 1 minute more. Transfer the mixture to a medium bowl, add the egg yolk, Cheddar, chives, cooked bacon, 1/2 teaspoon salt and a few grinds of pepper and stir to combine. Let cool completely. (The filling will firm up a bit, but if it's too warm, it will be difficult to form the buns.)
  • To fill and form the buns: Butter a 9-by-13-inch baking pan with 2 tablespoons softened butter. Turn the dough onto a floured work surface, and press it flat. Roll it into a 10-by-18-inch rectangle, with a long edge facing you. Spread the filling evenly over the dough, leaving a 1-inch border on the side opposite you. Starting from the side facing you, roll the dough up into a tight roll. Lightly brush the 1-inch border with water, and continue rolling to seal the roll. Fold the ends in just a bit, and if any spots look thicker than others, even out the roll with your hands.
  • Cut the roll every 1 1/2 inches with a serrated knife, to make 12 buns. Place the buns cut-side down (except for the end pieces) in the prepared pan, spacing them 1 inch apart. Cover the buns loosely with plastic wrap, and set aside in a warm place to rise until the buns double in size, leaving no gaps in between, 1 hour 30 minutes to 2 hours.
  • For the topping: Stir the butter, chives and Parmesan in a small bowl; set aside.
  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Bake the buns until they're golden brown and the tops spring back when pressed lightly, 25 to 30 minutes. Spread the topping evenly over the buns, and return them to the oven for 5 minutes more. Let them cool in the pan for 10 minutes before serving.

1 medium leek, white and light greens chopped (about 1 cup)

1/2 cup shredded Gruyere cheese

Steps:

(The filling will firm up a bit, but if it's too warm, it will be difficult to form the rolls.)
  • For the rolls: Butter a 9-by-13-inch baking pan with the 2 tablespoons softened butter. Turn the dough onto a floured work surface, and press it flat. Roll it into a 10-by-18-inch rectangle, with 1 long edge facing you. Spread the cooled filling evenly over the dough, leaving about a 1-inch border on the side opposite you. Sprinkle the ham over the filling. Starting from the side facing you, roll the dough up into a tight roll. Lightly brush the 1-inch border with water, and continue rolling to seal the roll. Fold the ends in just a bit, and if any spots look thicker than others, even out the roll with your hands.
  • Cut the roll every 1 1/2 inches with a serrated knife, to make 12 pinwheel slices. Place the slices flat in the prepared pan (put the end pieces cut-side up), spacing them 1 inch apart. Cover the pan loosely with plastic wrap. Set in a warm place to rise until the slices double in size with no gaps in between, 1 hour 30 minutes to 2 hours.
  • Position the rack in the center of the oven and preheat to 350 degrees F. Bake the buns until they're golden brown and the tops spring back when pressed lightly, 25 to 30 minutes. Let cool in the pan for 10 minutes.

1/4 cup sugar
One 1/4-ounce packet active dry yeast
1/4 cup warm water (about 110 degrees F)
1 1/4 cups whole milk, at room temperature
2 teaspoons fresh thyme, minced
2 sticks (16 tablespoons) plus 2 tablespoons unsalted butter, melted and cooled
2 large eggs, slightly beaten, plus 1 egg for egg wash
2 1/2 teaspoons salt
5 cups all-purpose flour, plus extra for kneading
2 tablespoon olive oil
3 cups grated sharp Cheddar cheese

Steps:

  • Place the sugar and yeast in a large bowl or in the bowl of a stand mixer fitted with a dough hook. Pour in the warm water, stir, and allow the yeast to activate and bubble, 2 to 4 minutes. Add the milk, thyme, 2 sticks melted butter, 2 eggs and 2 teaspoons salt. Mix until combined. Slowly add the flour a little at a time and mix until a dough forms and starts to release itself from the sides of the bowl. Transfer the dough to a floured work surface and knead by hand for about 1 minute.
  • Coat a large bowl with 1 tablespoon olive oil. Transfer the dough to the bowl. Place a towel over the bowl and allow to rise in a warm place until the dough has doubled in size, 1 to 2 hours.
  • Preheat the oven to 200 degrees F. Coat a 9-by-13-inch baking dish with the remaining 1 tablespoon olive oil.
  • Flour a work surface and, using a rolling pin, roll out the dough into a rectangle roughly 18 by 24 inches. Brush the dough with the remaining 2 tablespoons melted butter, sprinkle on the remaining 1/2 teaspoon salt, and generously sprinkle with 2 cups of the grated Cheddar. Roll up the dough starting at the long side of the rectangle until it is one large log. Cut the log into 2-inch-thick pieces. Arrange the pieces tightly packed, side-by-side in the baking dish.
  • Bake for 30 minutes.
  • In a small bowl, whisk the remaining egg with one tablespoon of water.
  • Take the rolls out of the oven. Raise the heat to 350 degrees F. Brush the rolls with the egg wash and sprinkle on the remaining 1 cup Cheddar. Bake until the rolls are golden brown and the cheese is melted and slightly brown, 15 to 20 minutes.
  • Let rest for 5 minutes before serving.

  • mix flour, onion, and spices.

  • knead until smooth and elastic and not too sticky, adding more flour if needed. cover with a dish cloth and leave in a warm place (like your oven that was left on the lowest setting for 5 min but be sure to put an oven mitt under the bowl) for about 30 min or until doubled in size.
  • punch down dough and place on a lightly floured surface. roll out into about a 1/4 inch thick rectangle and sprinkle about 1 1/2 cups of the cheese over top.
  • roll up lengthwise like a jelly roll and cut into 1 1/2 inch slices (these tend to spread sideways rather than up). place into a greased pan, about an inch apart so when they spread they'll be just touching. i used the bottom of a roasting pan since my lasagna pan was a bit too small. return to the warm place until doubled again (probably more like 20 min this time).
  • top with the remaining cheese now that there's enough surface area to put it.
  • bake at 325 for about 30 min or until exposed bread bits are starting to turn a bit golden, cool and pull apart carefully.

These meat buns have all of the components of a cheeseburger, but are much easier for little kids to eat! Plus: They store well in the fridge and freezer so can be made ahead of time.

2 1/4 teaspoons instant yeast
1 teaspoon sugar ((or honey))
1 cup whole wheat flour
2 cups all purpose flour
1 egg
1 tablespoon olive oil
1/2 pound ground beef
1 teaspoon oregano
1/2 teaspoon onion powder
1/2 teaspoon salt
1 1/2 cups shredded cheddar cheese

Steps:

  • Stir the yeast and sugar into 1 cup warm water. Let sit for 5 minutes or until puffy.
  • Add the flours, salt, egg, and water-yeast mixture to the bowl of a stand mixer fitted with a dough hook. Mix on medium-low for 10 minutes. Remove dough hook. Cover with a clean towel and let rise for 1-2 hours or until about doubled in size. It should look puffy.
  • Heat the olive oil in a medium skillet. Add the beef and stir to break. Sprinkle with salt and spices cook for 8-10 minutes or until fully cooked through. Remove from heat.
  • Divide the dough into 8 even sections. (I use a paring knife to cut it in half, then in half again and again, etc to make a pinwheel shape with 8 even triangles.)
  • Working with one piece of dough at a time, coating with flour as needed if sticky, flatten into a disc that's about 6 inches wide. (It doesn't need to be precise!)
  • Place 2 heaping tablespoons each cooked meat and cheese into the center and fold in the dough to enclose the fillings. The seams should press and hold together with slightly pressure and a little gentle pressing.
  • Place roll onto a parchment-lined baking sheet and repeat to make all 8. Set aside and cover with a towel while the oven preheats.
  • Preheat the oven to 400 degrees F. Bake the buns for 20-22 minutes or until firm to the touch. Let cool slightly and serve warm.

2/3 cup boiling water
2/3 cup all-purpose flour
1 tbsp active dry yeast
3/4 cup warm water (105-115 F)
2 and 2/3 cups all-purpose flour
1/3 cup sugar
1 tsp salt
1 large egg
1/4 cup butter (melted)
1 egg (beaten, for egg wash)
1 and 1/2 cup cheddar cheese (shredded)
1/2 cup parmesan cheese (shredded)
1 tsp garlic powder
1/4-1/2 cup cheddar cheese (shredded)
sesame seeds (for sprinkling on top)

Steps:

  • In a medium bowl, combine flour and boiling water. Stir until the mixture gathers into a shaggy mass. Shape the dough into a ball. Wrap this in plastic and refrigerate overnight.
  • In a mixing bowl, sprinkle the yeast over warm water and let it sit for about 5 minutes, or until the yeast is soft and dissolved. Add in the sugar, egg, salt, and melted butter. Stir everything with a wooden spoon.
  • Add the overnight dough. Add the flour gradually and stir the mixture until it gathers into a soft and shaggy dough. Turn the dough over on a floured board and knead until it is elastic and smooth (You may need to sprinkle just a bit of flour to help with the stickiness of the dough).
  • Shape the dough into a ball. Place it in a bowl, cover with a clean kitchen towel and let rise for 1 and 1/2 hour or until doubled in size.
  • Deflate the risen dough. Divide it into 14 or so portions. Flatten a portion using your palms until it is about 1/4 inch thick. Place about a tablespoon of shredded cheddar cheese in the center of the dough. Pull the sides over to the center to cover the filling, then shape the dough into a smooth ball. Tuck the ends under to seal. Repeat with the rest of the dough portions. Place the dough balls on a greased muffin pan. You will need another muffin pan ( or two muffin molds) because this batch makes 14.
  • Cover loosely and let the dough rise for an hour, or until they are doubled in size. Preheat oven to 350 F. Brush the dough balls with beaten egg. Sprinkle a pinch or two of garlic powder in each of the balls. Top with shredded cheeses. Sprinkle some sesame seeds on each bun. Bake at 350 F for 18-22 minutes, or until the cheese has melted and tops are golden.

  • PREHEAT oven to 375ºF (190ºC). Grease a 10" tube pan.
  • Combine 3 cups flour, yeast, sugar and salt in large mixer bowl.
  • Mix well; toss in cheddar cheese.
  • Add warm milk, water and oil.
  • Beat on medium speed 3 minutes.
  • Gradually stir in remaining flour using enough flour to make a soft dough.

Actually to make it even easier if you have a breadmaker make a 2pd loaf on dough cycle and use that, saves seven steps. I found this online and am sorry i don't know what the site was b/c kudos to the person who put this on it.

Number Of Ingredients 9

1 (15 ml) package fast rising yeast
1 teaspoon salt
2 tablespoons melted margarine
3 cups flour
1 1/8 cups hot water
1/4 cup sugar
1 egg, beaten
2 cups grated cheddar cheese
4 slices black forest ham or 4 slices honey-roasted ham (works best)

Steps:

  • Place flour in large bowl, add salt, sugar and yeast.
  • In another bowl measure hot water, add marg.
  • Stir tog till marg is melted.
  • Add liquid ingred's to dry ingred's then add beaten egg.
  • Mix until moistened.
  • Using hands, mix dough in bowl.
  • Continue kneading for 5 minutes.
  • Shape dough into a ball, place in a greased bowl.
  • Cover with a damp cloth and then a clean, dry cloth and put in a warm place until it doubles in size, approximately 1 hours.
  • After it has doubled in size:.
  • Roll dough out into a 10" by 15" rectangle.
  • Place ham down middle of dough overlapping them slightly.
  • Sprinkle 3/4 of the cheese over all of the dough.
  • Roll like a jellyroll.
  • Cut into 1" slices, place in a greased cake pan, cut side down.
  • Sprinkle remaining cheese on top of buns.
  • Put in a warm spot till double in size.
  • Bake for approximately 15-20 mins at 375 degrees F.
  • Tip pan over and let buns fall onto a plate.

  • Mix the flour, yeast and 2 tsp salt in a big bowl. Make a well in the centre and pour in the milk. Mix with a wooden spoon, then your hands, to a soft dough. Knead for 10 mins, then put back in the bowl. Lightly cover with oiled cling film and leave somewhere warm-ish until doubled in size – about 30 mins.
  • Tip the dough onto a lightly floured surface and knead in most of the cheese. Dust a large, flat baking sheet with flour. Shape the dough into 12 round buns and arrange on the sheet with a 2-3cm gap between each. Loosely cover with another sheet of lightly oiled cling film and leave to prove until nearly doubled in size.
  • Heat oven to 200C/180C fan/gas 6. Mix the 5 tbsp flour for the crosses with the Parmesan and 5 tbsp water. Spoon into a disposable piping bag and pipe a line along each row of buns, then repeat in the other direction to make crosses. Scatter with the remaining cheddar and bake for 20-25 mins until golden. To reheat from frozen, warm in a low oven before serving.
