EASY THAI SHRIMP SOUP

- In a large saucepan of 1 1 /2 cups water, cook rice according to package instructions; set aside. Melt butter in a large stockpot or Dutch oven over medium high heat. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside. Add garlic, onion and bell pepper to the stockpot. Cook, stirring occasionally, until tender, about 3-4 minutes. Stir in ginger until fragrant, about 1 minute. Whisk in curry paste until well combined, about 1 minute. Gradually whisk in coconut milk and vegetable stock, and cook, whisking constantly, until incorporated, about 1-2 minutes. Bring to a boil; reduce heat and simmer until slightly thickened, about 8-10 minutes. Stir in rice, shrimp, lime juice and cilantro. Serve immediately.

SPICY ASIAN CHICKEN AND SHRIMP SOUP
This is an excellent chicken soup recipe with an asian flair. The lime and cilantro really stand out. However, this soup needs to be eaten fresh. Does not reheat/store well.

Steps:
- Combine broth, soy sauce, brown sugar, chili sauce, lime juice and ginger and boil for 5 minutes.
- Meanwhile, toss chicken with cornstarch until it is completely coated.
- Add the chicken, Shrimp and shiitakes to the broth and simmer for 15 minutes.
- Remove pan from heat and stir in snap peas, red pepper, bean sprouts, lime zest and cilantro.
- Let soup stand 5 minutes before serving.

- Combine oil, garlic and white parts of scallions in a 2 1/2-quart dish. Cook at 100 percent power in a 650- to 700-watt oven, uncovered, for 3 minutes.
- Stir in bell peppers. Cook, uncovered, for 2 minutes.
- While peppers are cooking, place cornstarch and mirin in a small bowl and mix well. Stir in tamari sauce, vinegar, ginger and water chestnuts. Reserve.
- Remove dish from oven. Push vegetables toward the center of the dish and arrange shrimp around the vegetables. Place mushrooms over shrimp and vegetables. Place tomatoes over mushrooms. Pour cornstarch mixture over all. Cover tightly with a lid or microwave plastic wrap. Cook for 3 minutes 30 seconds. Prick plastic to release steam.
- Uncover and stir in coriander and scallion greens. Re-cover and cook for 2 minutes. Prick plastic to release steam.
- Remove from oven. Uncover and stir in pepper mixture and salt.

CHINESE SEAFOOD SOUP
You'll need both chopsticks and a spoon for this soup! I think of this recipe as a basic from which you can add, detract or do whatever. It is great to serve during Christmas week for a change of pace.

- In a saucepan heat the oil, add garlic& stir until golden about 1 minute.
- Add cabbage & 1/4 of the chicken stock.
- Bring to a simmer and cook until the cabbage is wilted, about 1 minute.
- Add remaining stock, shrimp, scallops soy & rice wine and cook about 1 minute or just until the shrimp & scallop are opaque.
- Before you do this final step bring a pot of water to a rolling boil and cook the noodles until just tender 2-5 minutes (depends on type of noodle you use).
- Drain and place noodles in 4 large soup bowls. Ladle soup over the noodles dividing the seafood & cabbage evenly.
- Sprinkle with scallions.
DELICIOUSLY EASY FAUX PHO/ORIENTAL CELLOPHANE NOODLE SHRIMP SOUP
This was so fast for me to throw together and surprisingly tasty. If you like cellophane noodle soups & bean sprouts you might just love this! If you do this according to the directions the noodles and vegetables will come out right. If you do it out of order you may end up with mushy noodles. - Chop vegetables as directed above.
- Soak the bean threads in very hot water in a sauce pan for four minutes. Place the pan on a burner and heat to just about boiling. Remove from heat.
- In a medium sized soup pan, sautee the garlic, onion, carrots, and celery with salt to taste, until the onion is soft and the other vegetables are tender crisp. Add chicken broth, drained bean threads (cellophane noodles), shrimp, mushrooms with liquid, and bean sprouts.
- Heat briefly until the shrimp is well cooked.
- Serve each bowl topped with cilantro and green onion and the optional ingredients below.
- HIGHLY Suggested but Optional: Bottle of red habanero sauce, plate of: lime wedges, fresh basil, and raw bean sprouts instead of the canned sprouts - serve the soup boiling hot and have each diner drop the fresh sprouts in their own bowl.

- Heat the sesame oil in a large soup pot over medium heat. Add the sliced leeks, and sauté them for 4 to 5 minutes, stirring frequently, until they are soft and translucent.
