This recipe I received from an elderly lady who, with her daughters, catered homecooked food for large parties. My 11yr old daughter fell in love with these and I was able to get the recipe because of this.

3 (8 ounce) bags frozen Brussels sprouts
1 cup sugar
1 medium onion
1 (4 ounce) jar diced pimentos
1 (8 ounce) package mushrooms
1/2 cup butter
2 cups shredded mild cheddar cheese
2 cups shredded sharp cheddar cheese (this is more cheese than the original recipe, but my family LOVES cheese!)

Steps:

  • Fill large pan with water and stir in sugar. Bring to boil. Add brussel sprouts. (the sugar takes the bitterness out of the brussel sprouts.) Cook until brussel sprouts are tender when stuck with fork. Drain and put into large casserole dish. (I use one that measures 9 x 13).
  • Dice onion and slice mushrooms. Place in large skillet with butter. Saute until onion and mushrooms are both tender. Dump (with the butter) onto the brussel sprouts.
  • Add pimentos to brussel sprouts. Then add about half of both cheeses. Toss to evenly mix ingredients. Spread evenly through dish. Sprinkle with remaining cheese. Cover with aluminum foil and bake at 350 degrees for about 40 minutes or until cheese is throughly melted.

Our family really likes brussels sprouts, and adding cheese and bacon makes this an irresistable side vegetable.

1 1/4 lbs Brussels sprouts, cut in half (about 5 cups)
6 slices bacon, cut into 1-inch pieces
1 tablespoon butter or 1 tablespoon margarine
1 large onion, finely chopped (1 cup)
1 tablespoon all-purpose flour
1/4 teaspoon dried thyme leaves
1/4 teaspoon pepper
3/4 cup half-and-half
2 teaspoons chicken bouillon granules
1/3 cup shredded parmesan cheese
1/2 cup shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees. Remove any discolored outer leaves and trim stem portion of brussels sprouts. In a 3-quart saucepan, place brussels sprouts; add enough water just to cover. Heat to boiling; boil 6-8 minutes or until crisp-tender. Drain and return to saucepan; set aside.
  • Meanwhile, in a 10-inch skillet, cook bacon over medium heat, stirring occassionally, until crisp. Remove bacon and drain on paper towels; set aside. Drain all but 1 tablespoon bacon fat from skillet.
  • Add butter to bacon fat in skillet. Heat over medium-high heat until butter is melted. Add onion; cook 2-3 minutes, stirring frequently, until crisp-tender. Add flour, thyme and pepper; cook and stir until well-blended. Gradually stir in half-and-half and bouillon granules. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat and stir in Parmesan cheese.
  • Pour sauce over brussels sprouts in saucepan; mix gently. Spoon into 2-quart casserole. Bake uncovered 25-30 minutes, sprinkling with crumbled bacon and Cheddar cheese for last 10 minutes of baking, until hot and bubbly. Serve right away.

I don't know why I love brussels sprouts, but I do. I always challenge myself to find new ways to cook it. And I planted brussels sprouts seeds in my mini garden for the first time...I can't wait to see if they actually grow!

10 slices turkey bacon, cut into 1/2 inch pieces
3 garlic cloves, minced
4 shallots, thinly sliced
1 1/2 lbs small Brussels sprouts, washed, trimmed and halved
1 1/2 cups chicken stock
12 ounces pasta, I like to use a rigatoni or 12 ounces a cavatappi pasta
1/3 cup parmesan cheese, fresh grated
1/3 cup romano cheese, fresh grated
1/3 cup sage, fresh and roughly chopped

Steps:

  • Season the bacon liberally with black pepper. I love Turkey Bacon but it needs the extra kick of pepper.
  • Heat a large skillet over medium heat. Add bacon, and cook until crisp (about 6-8 minutes). Watch the bacon and turn frequently. I find that Turkey bacon burns much easier than regular as it has less fat.
  • Once the bacon is finished cooking, remove bacon from the pan with a slotted spoon and drain on paper towels. Add enough olive oil to the skillet to total about 2 Tablespoons. Add garlic, shallots, and sprouts. Season with salt and pepper.
  • Cook for about 3 minutes, or until the sprouts begin to brown. Add the stock. Season again with salt and pepper. Cook about 10-12 minutes or until most of the liquid has been absorbed.
  • In the meanwhile, bring a large pot of water to a boil, add salt, and cook the pasta according to the manufacturer's directions. Be careful not to over cook.
  • Drain but reserve about 1/2 cup of the cooking water. Return pasta to the pot. Stir in brussels sprouts mixture, cooking liquid, cheese, sage, and bacon. Drizzle with a bit of olive oil. Stir until well combined.
  • Serve along side your favorite main dish or as a main dish on its own.

A turkey or prime rib dinner just can't go without this! This can be doubled if desired. To save some time cook the sprouts hours in advance or a day ahead.

2 1/2 lbs Brussels sprouts
1/4 cup butter
1 onion, chopped
1/4 teaspoon dried thyme (rub between fingers to release flavor)
1 -2 tablespoon fresh minced garlic (optional or to taste)
1/4 cup flour
2 cups half-and-half cream (I use 1-3/4 cups half and half and 1/4 cup whipping cream, unwhipped)
1 1/2-2 cups gruyere cheese (or similar cheese like Swiss or Gouda, but it is better using the gruyere cheese)
seasoning salt (can use regular salt)
pepper
2 cups fresh breadcrumbs
1/2 cup gruyere cheese, shredded (can use Gouda also)
3 tablespoons butter, melted

Steps:

  • Set oven to 350 degrees.
  • Grease a baking dish large enough to hold the mixture (about an 8-cup).
  • To make the topping: stir together the bread crumbs and melted butter, add in the cheese, mix well until combined; set aside.
  • Wash and trim the sprouts and cut an "X" in the bottom.
  • Cook the sprouts in boiling water for about 7-8 minutes, or until fairly tender.
  • Drain and plunge into ice water or very cold water (squeeze out any excess water with hands).
  • Place into prepared baking dish.
  • In a saucepan, melt butter over medium heat.
  • Add in the thyme, fresh garlic (if using) and chopped onion; saute for 3-5 minutes until soft.
  • Add/whisk in flour, cook whisking for 5 minutes.
  • Add in half and half cream, seasoning salt and pepper; bring to a very light boil, and whisk continuously for about 6-7 minutes until mixture is smooth and thick.
  • Remove from the heat.
  • Add in the gruyere cheese; stir until melted.
  • Pour the creamed mixture over the sprouts in the dish.
  • Sprinkle with the topping mixture.
  • Bake for about 30 minutes, or until golden brown and bubbly.
  • Delicious!
