This is a quick and easy kid-friendly recipe I found years ago in a Better Homes & Garden cookbook. The kids never know they are eating their carrots.

1 lb lean ground beef or 1 lb ground pork
1 garlic clove, minced
1 cup long grain rice
2 tablespoons butter
3 cups water
1 cup carrot, shredded
2 teaspoons beef bouillon granules
1 teaspoon parsley flakes
1/2 teaspoon dried onion flakes
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2-1 cup cheddar cheese, shredded (use more or less as desired)

Steps:

  • In large saucepan, cook ground beef or pork and garlic until meat is browned.
  • Drain off fat.
  • Remove from pan and set aside.
  • In same saucepan, cook uncooked rice in butter until golden brown, stirring frequently.
  • Stir in water, carrot, bouillon, parsley, onion, salt and basil.
  • Bring to boil.
  • Reduce heat; cover and simmer for 5 minutes.
  • Stir in meat mixture.
  • Turn half into a 1 1/2 quart casserole.
  • Sprinkle with a layer of cheese.
  • Top with remaining meat mixture.
  • Bake at 325°F oven for 45 minutes, stirring twice.
  • Sprinkle with remaining cheese.
  • Bake, uncovered, 5 minutes longer or until cheese melts.

Bring to a boil. reduce heat; cover and simmer for 5 minutes. Stir in beef. Transfer to a greased 9-in. square baking dish. Cover and bake at 325° for 45 minutes, stirring twice. Uncover; sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

An easy quick one skillet recipe with lots of taste, which makes this perfect for a weeknight meal, also a great recipe to use up any leftover rice, if you don't have 3 cups leftover cooked rice just add in what ever you have! All ingredient amounts can be adjusted to suit taste. If you really want to intensify this skillet dish even more, omit the seasoned salt and hot sauce in this recipe and add in a couple tablespoons of recipe#186029 I keep this handy to use in many recipes!

1 medium onion, chopped
1 -2 tablespoon fresh minced garlic
1 small green bell pepper, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped (optional)
1 tablespoon oxo beef bouillon powder (or use 2 small packages bouillon powder)
seasoning salt or white salt, to taste
black pepper, to taste
3 cups cooked rice
1 (10 ounce) can cream of mushroom soup, undiluted
1/3 cup green chili (or to taste)
1/2 cup beef broth or 1/2 cup water
hot sauce or Tabasco sauce
1 1/2 cups grated cheddar cheese
1 -2 cup coarsley crushed corn chips

Steps:

  • In a large skillet cook the beef with onion, garlic, bell pepper and jalapeno pepper (if using) until the meat is browned drain fat.
  • Add in beef bouillon powder; mix to combine then season with seasoned salt and black pepper.
  • Stir in the cooked rice, cream of mushroom soup, green chiles and beef broth or water and hot sauce or Tabasco to taste; stir over low heat until combined and heated through.
  • Remove from heat and stir in the grated cheddar cheese until melted and combined.
  • Top with crushed corn chips just before serving.

1 medium onion, chopped (1/2-cup)
1 1/2 teaspoons garlic powder
Salt and black pepper, to taste
1 (8-ounce) can tomato sauce (I use Hunt's)
1/2 cup chicken broth (I dissolved 1/2 teaspoon chicken bouillon granules in 1/2 cup boiling water)
1 1/2 cups cooked rice
1 cup cooked whole kernel corn
1 (8-ounce) package shredded cheddar cheese (2-cups), divided

Steps:

  • Lightly spray an 8x8-inch casserole dish with cooking spray. Set aside. Partially brown ground beef seasoned with half the garlic powder, salt, and pepper in a large skillet over medium-high heat. When meat starts to brown, stir in the onions and continue to cook until onions are tender, stirring constantly. Remove from heat and drain off any excess fat. Preheat oven to 350°F. Set the skillet back on the warm burner (no need to turn it on) and stir in the tomato sauce until incorporated, then stir in the broth. Stir in the rice, corn, additional seasonings to taste, and 1 cup of the shredded cheese. Pour mixture into the prepared casserole dish. Bake for 20 minutes.
