Cheesy Bacon and Pecan Dip - (Charleston Cheese Dip) cream cheese, mayonnaise, cheddar, bacon, ritz crackers, and pepper jelly pecan glaze - This is crazy good. I have absolutely no self-control around it. I could eat it as a meal. Can make the dip ahead of time and refrigerate until ready to bake. Great for parties. It is always the first thing to go!!

Ingredients

1 (8-oz) package cream cheese (softened)
½ cup mayonnaise
1 cup shredded cheddar cheese
8 slices bacon, (cooked and chopped)
6 Ritz crackers, (crushed)
½ cup pepper jelly glaze

Steps:

Preheat oven to 350ºF. Lightly spray 9-inch pie plate with cooking spray.
Combine cream cheese, mayonnaise, cheddar cheese and bacon. Spread in pie plate. Top with crushed Ritz crackers.
Bake for 20 minutes. Remove from oven and top with pepper jelly glaze.
Serve warm with additional Ritz crackers.

Recipe video above. This warm dip is really creamy, super cheesy and loaded with bacon. It takes minutes to make in the microwave! Serving it in a bread bowl is optional - I love it because I love tearing into the dip soaked bread. This makes around 4 1/2 - 5 cups of dip. Plenty!

350 g / 12 oz bacon (, chopped)
250 g / 8 oz cream cheese (, softened)
1 cup sour cream ((preferably full fate))
3/4 cup mayonnaise
1 tsp garlic powder ((or sub with onion powder))
1 cup shredded tasty or cheddar cheese ((Note 1))
1 cup shredded mozzarella cheese ((Note 1))
1 cup shallots / scallions (, chopped (~4 - 5 stalks))
1 round cob bread ((sourdough works best))
5 Jatz / Ritz or other plain savoury cracker (, crushed (Note 2))
Oil spray
Crackers (, chips, toasted bread)

Steps:

Cook bacon in a non stick skillet / fry pan over high heat until browned. Transfer to paper towel lined plate to drain.
Mix cream cheese, mayonnaise, sour cream and garlic powder together in a heat proof bowl.
Stir through most of the bacon, all the cheese and most of the shallots. Microwave on high for 3 minutes. The dip may look like the oil from the cheese has separated. Just stir well and it will come (and stay) together.
If serving as is, pour into a serving bowl, top with remaining bacon and shallots.
Serve with crackers, chips and the bread you pulled out to create the bread bowl (I toast it).

1/2 Cup Mayonnaise
8 Oz. Package Of Cream Cheese
1 Cup Grated Sharp Cheddar Cheese
2 Green Onions, Chopped 6 Ritz Crackers (Crushed)
8 Slices Of Bacon, Cooked AND Crumbled
1/2 Cup "Rose & Ivy" Southern Pecan Pepper Glaze*
Or Pepper Jelly and 2 Tablespoons of toasted pecans.

Steps:

Mix mayonnaise, cream cheese, cheddar and onions in greased quiche pan.
Top with crackers and bake at 350 degrees for fifteen minutes.
Top with bacon and "Rose & Ivy" Southern Pecan Pepper Glaze (or "Rose & Ivy" Southern Pecan Pepper Jelly). See note

4 slices bacon
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
8 ounces Swiss cheese, shredded
2 green onions, finely chopped
4 buttery round crackers, crushed

Steps:

Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
In a small bowl, mix the cream cheese with mayonnaise until smooth. Stir in Swiss cheese, onions, and bacon. Place bowl in microwave, and cook 2 minutes. Remove, and stir well. Return to microwave, and cook 2 to 4 minutes more. Sprinkle crushed crackers on top. Serve warm with crackers.

Steps:

Bring cream cheese to room temperature. Preheat oven to 400 degrees.
In a bowl, combine all ingredients. Place in 1-quart baking dish. Cover. Heat 25-30 minutes or until hot.
Serve with assorted fresh vegetables, crackers and/or chips. Makes 3 cups.
