This is my own recipe that won First Place in a Quiche Bake-Off that we held in my department today. I used a blend of mild and extra sharp cheddar cheeses. But use any cheese that suits your concept of "Philly Cheesesteak." This recipe fills a 9-inch foil pie pan.

BASIC CUSTARD
3 eggs (large-ish), beaten
1 1/2 c whole milk
1 pinch freshly grated nutmeg
freshly ground black pepper
1/2 tsp salt
FILLING - TO BE COOKED IN A 10-12" SKILLET
1/2 large onion, thinly sliced
1 green bell pepper, quartered, seeded & thinly sliced
4 oz deli roast beef, cut into thin strips
1 Tbsp worcestershire sauce
1 tsp minced garlic
oil or butter for cooking
salt & pepper to taste
REMAINING INGREDIENTS
1 unbaked pie shell
1 c grated cheddar cheese

Steps:

  • 1. Prepare the unbaked pie shell. Preheat the oven to 375F. Preheat a 10-12" skillet on medium heat.
  • 2. Grease the skillet with oil/butter (your choice, but I prefer butter) and add the sliced onion and green pepper. Cook the onions and peppers until they are tender (not mushy) - about 10 minutes.
  • 3. While the skillet is busy, beat the eggs and milk together, and blend in the nutmeg, 1/2 tsp. salt and some ground black pepper.
  • 4. Add the deli roast beef, worchestshire sauce and garlic to the skillet and stir while continuing to cook another 3-5 minutes. (Taste the filling and check the seasoning!) Remove the filling from the skillet when finished and allow to cool for 5 minutes before adding to the custard mixture.
  • 5. Add to the custard mixture the meat/veggie filling and grated cheese. Mix well and pour into the pie shell.
  • 6. Bake the quiche for 45 minutes at 375F. Use a clean sharp knife to test for doneness (poke the center and see if it comes out clean). The center should not jiggle. (If not done - continue cooking another 5-10 minutes.)

8 to 10 ounces beer
1 teaspoon Chicken Seasoning Blend, recipe follows
1 teaspoon chipotle steak seasoning
2 cups shredded melting cheese blend
2 tablespoons olive oil
1 white onion, chopped
1 1/2 pounds shaved chicken breast
1 to 2 teaspoons Chicken Seasoning Blend
1/4 cup chicken stock, beer or water
4 hoagie rolls, split
Mayonnaise
Cherry pepper relish
2 teaspoons chicken seasoning
1 teaspoon kosher salt
1/2 teaspoon garlic salt
Freshly ground black pepper

Steps:

  • For the cheese sauce: Combine 8 ounces of the beer, the Chicken Seasoning Blend and the chipotle steak seasoning in a saucepan over medium heat and bring to a simmer. Gradually whisk in the cheese; cook just until the cheese is melted, adding more beer if the sauce is too thick. Keep warm.
  • For the chicken: Heat a cast-iron griddle over medium-high heat. Add 1 tablespoon of the olive oil and the onions and cook for 3 to 5 minutes. Add the chicken, drizzle with the remaining tablespoon olive oil and sprinkle with the Chicken Seasoning Blend. Cook until the chicken is browned, 5 to 8 minutes. Pour the chicken stock over the chicken and cook for another minute.
  • To build sandwiches: Coat the bottom half of each hoagie roll with mayonnaise. Divide the chicken and onions among the rolls. Drizzle with cheese sauce and top with a bit of relish.
  • In a small bowl combine the chicken seasoning, kosher salt, garlic salt and a few grinds of black pepper.

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls
American mustard and ketchup, to serve

Steps:

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.

2 tablespoons grapeseed oil
2 cups thinly sliced yellow onions
Salt and freshly ground black pepper
4 tablespoons unsalted butter, softened
Four 9-inch sub rolls
2 pounds shaved beef steak, such as rib-eye or sirloin
12 thin slices provolone

Steps:

  • In a large saute pan or griddle, heat the oil over medium-high heat for 1 minute, and then add the onions, 1 tablespoon salt and 1 teaspoon pepper. Cook the onions until caramelized, stirring throughout the process, 5 to 6 minutes. Remove and keep warm.
  • Spread the softened butter on the interiors of the rolls and cook, butter-side down, on a griddle until browned, 1 to 2 minutes. Remove the rolls, add the raw steak to the griddle and sprinkle with salt and pepper. Cook briefly, shredding the meat into small pieces with two metal spatulas. Add the onions and cook for 2 minutes.
  • Portion the meat into four piles, and top each pile with 3 slices of the provolone. Continue to cook until the cheese melts (putting on the lid and adding a little water to the pan can help with this step). Cover each pile with a browned roll, and slide a spatula under the meat to pick it up with the roll.

2 tablespoons vegetable oil, divided
1 green bell pepper, chopped
1 onion, chopped
1 pound ground chicken
salt and ground black pepper to taste
4 slices American cheese
2 long sandwich rolls, halved lengthwise

Steps:

  • Heat 1 tablespoon oil in a nonstick skillet over medium-high heat. Add green bell pepper and onion; cook and stir until tender, 8 to 10 minutes.
  • Heat remaining 1 tablespoon oil in another nonstick skillet over medium-high heat. Add chicken; cook and stir until chicken is crumbly and no longer pink, 8 to 10 minutes. Stir in green bell pepper, onion, salt, and black pepper. Top with cheese slices and cook until melted, 2 to 3 minutes.
  • Spread chicken mixture evenly over halved rolls.
