3 pounds potatoes, thinly sliced
salt and pepper to taste
9 tablespoons all-purpose flour, divided
6 tablespoons butter, diced
1 quart whole milk, or as needed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.
  • Arrange one layer of potatoes in the bottom of the prepared baking dish. Sprinkle the potatoes with salt and pepper, 3 tablespoons flour, and 2 tablespoons butter. Repeat layering 2 more times, until all of potatoes have been used. Slowly pour milk over the potatoes until the dish is 3/4 full of milk.
  • Bake until the milk comes to a boil (check after 15 minutes), then reduce heat to 375 degrees F (190 degrees C) and bake until potatoes are tender, 45 to 60 minutes more.

5 large potatoes, optionally peeled (see note below)
1 medium yellow onion, chopped
3 tablespoons dairy-free buttery spread or margarine
¼ cup all-purpose or white-wheat flour (can sub your favorite gluten-free flour blend)
¼ cup mayonnaise or vegan mayo (for egg-free)
1¾ cups chicken broth, no chicken broth (for vegan), or water
¾ teaspoon salt
⅛ teaspoon white pepper
Paprika or herbs, for topping

Steps:

  • Preheat your oven to 350ºF and grease a deep baking dish.
  • Slice the potatoes very thin. A mandolin is very helpful here (I use this one).
  • Toss the potato slices and onion together in a large bowl, and then spread in your prepared baking dish.
  • Melt the buttery spread in a saucepan over medium-low heat. Whisk in the flour to make a thick paste. Whisk in the mayonnaise, and then slowly whisk in the broth or water to prevent any lumps. Add the salt and pepper.
  • Increase the heat to medium, and cook, whisking constantly as it bubbles, until the mixture is thick, just a few minutes.
  • Pour the sauce over the potatoes. Sprinkle the top with paprika or herbs.
  • Bake for 90 minutes, or until the potatoes are fork tender and lightly browned on top.

1/3 c butter or non dairy margarine for those of you looking for a totally non dairy margarine earth balance has no milk products in it.
3 c boiling chicken broth
1/3 c all purpose flour
salt, pepper and paprika to taste

Steps:

  • 1. In 2 shallow, well greased 2 Qt. Casserole dishes layer, Potatoes and Onions sprinkling with salt and pepper between each layer.
  • 2. In a medium sauce pan melt Butter or Margarine over medium heat. Stir in flour until well blended. Wisk in chicken stock; cook stirring constantly until it boils and thickens.
  • 3. Pour sauce over potatoe casserole and sprinkle with paprika to taste.
  • 4. Bake uncovered at 350 degrees for about 50 minutes or until potatoes and tender and golden brown

  • Preheat oven to 350°F with a rack in upper third of oven.
  • Peel potatoes and thinly cut into 1/8 inch thick slices, using slicer if desired.
  • Discard dark green part of leek and halve white and light green part lengthwise. Rinse layers under running water to remove any dirt and grit and pat dry. Thinly slice crosswise.

Steps:

  • Position a rack in the upper third of the oven and preheat to 425 degrees F. Generously brush a large skillet with butter, then rub with the garlic. Heat the skillet over medium-high heat. This is a great slow cooker recipe for your leftover ham. The rich flavor of this dish is sure to make this dish a favorite.

leftover ham - cubed
1 onion - adjust to quantity of potatoes
1/2 pint half & half
cream
salt and pepper - to taste

Steps:

  • Peel and slice enough potatoes to fill the slow cooker three quarters full. Cube leftover ham and add to the potatoes. Add as much ham as you feel is adequate. Add the chopped onion. Add 1/2 carton of Half & Half and then pour in enough cream to just cover the potatoes. Add salt and pepper to taste. Cook on high for one hour and then reduce the heat to low. Cook them for 5 to 6 hours on low or until the potatoes are tender. Place the cover on the slow cooker so that it is a little crooked to allow the steam to escape as the potatoes are cooking. This will keep the cream from curdling. Note: This recipe is easily adjusted according to the amount you want to make. Determine what you have for leftovers or how many people you are feeding and choose the size of slow cooker and amount of potatoes accordingly. Adjust the amount of cream so that it covers the amount of potatoes you are using.

2 1/2 Tbsp olive oil or avocado oil ((if avoiding oil, sub water))
4 cloves garlic ((minced // 4 cloves yield ~2 Tbsp or 12 g) )
1/4 tsp each sea salt and black pepper ((plus more to taste))
2 1/2 Tbsp cornstarch or arrowroot
1 1/2 cups unsweetened plain almond milk
1/2 cup vegetable broth ((or store-bought))
1/8 tsp ground nutmeg
4-5 Tbsp nutritional yeast
2-3 medium Yukon gold potatoes ((very thinly sliced))
1/4 cup vegan parmesan cheese ((divided))
1/4 tsp paprika ((optional))
Fresh parsley ((optional))

Steps:

  • Preheat oven to 350 degrees F (176 C). Heat a large rimmed, oven-safe cast-iron (or metal) skillet over medium heat. We used a 10-inch cast-iron and found it to be perfect for this recipe.
  • Once skillet is hot, add olive oil, garlic, salt, and pepper. Sauté for 1-2 minutes, stirring frequently, until just lightly golden brown.
  • Add cornstarch or arrowroot and whisk to incorporate. Cook for 1 minute.
  • Add almond milk a little at a time, whisking to incorporate. Be sure not to flood pan. Whisk and go slowly to prevent clumps from forming. Continue until all of the almond milk has been added. Then add vegetable broth. Whisk to incorporate.
  • Reduce heat to low. Let simmer for 4-5 minutes to thicken, whisking frequently.
  • Turn off heat and remove skillet from burner. Transfer sauce to blender and add nutmeg, a pinch more salt, pepper, and nutritional yeast.
  • Blend on high until creamy and smooth. Taste and adjust seasonings as needed, adding more nutmeg, salt, pepper, or nutritional yeast to taste. Mixture should be very cheesy and savory to season the potatoes well, so don't be timid.
  • Lightly rinse out skillet (or grab a similar size baking dish) and generously grease with oil or vegan butter all the way up the sides. Lay down half the sliced potatoes and season with salt and pepper. Toss to coat. Then lay flat and sprinkle on 2 Tbsp (10 g) vegan parmesan cheese (amount as original recipe is written // use half of total if altering batch size). Add remaining potatoes, season with a bit more salt and pepper, and loosely toss.
  • Pour sauce over the potatoes and add remaining 2 Tbsp (10 g) vegan parmesan cheese (amount as original recipe is written // use half of total if altering batch size). Push down with your fingers to submerge the potatoes. The sauce should just cover the potatoes, so remove any potatoes that are well above the surface.
  • Cover with foil and bake on middle rack of oven for 20 minutes. Then remove foil and bake for another 40-45 minutes (a total of 1 hour - 1 hour 5 minutes). Potatoes are done when knife inserted into the potatoes comes out without effort and the top is golden brown and bubbly.
  • Remove from oven and let cool for 10 minutes before serving. As an optional garnish, top with fresh parsley and a dash of paprika for extra color. Store leftovers covered in the refrigerator up to 2-3 days or in the freezer up to 1 month. Reheat in a hot oven and rehydrate with more almond milk as needed.

1 tablespoon dairy free butter (- to grease the bottom and sides of a 9"x13" casserole or butter two smaller casseroles)
6 cups russet potatoes (- peeled and sliced)
4 tablespoons dairy free butter
4 tablespoons flour
3 cups dairy-free milk (- unsweetened)
1 1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh thyme

Steps:

  • Peel and slice potatoes to measure 6 to 7 cups.
  • Place in a large bowl of water as you go along slicing. This will keep the potatoes from turning brown.
  • Melt the dairy free butter in a large saucepan.
  • Add the flour and stir over medium-heat for a few minutes. Keep stirring so that it is all blended well.
  • Pour in the dairy free milk.
  • Bring to a low boil stirring often.
  • After the sauce comes to a boil turn down the heat to medium and cook until it is smooth and thickens a bit. About 10 to 15 minutes. Add salt and pepper and stir.
  • Layer the potatoes in a large 9" x 13" casserole dish, overlapping in a staggered type of style. This lets the sauce get down in between the nooks and crannies.
  • Pour the sauce all over the top. Cover with a lid or foil.
  • Bake at 350° for 30 minutes.
  • Uncover and bake another 60 minutes.
  • Remove from oven and sprinkle fresh herbs over the top.
  • Let stand for 10 minutes. The sauce will thicken.
