- Remove from heat and let stand for 5 minutes. Stir to combine. Recipe Tips Pretend you're at your favorite burger place by serving this meal with everybody's favorite burger toppings. Try chopped tomatoes, sliced green onions, pickles, shredded lettuce, bacon, sautéed mushrooms or anything else you think your family will love! If you don't have any beef on hand, substitute ground turkey, chicken or meatless ground for the beef. If you have leftovers from this meal, simply reinvent them as something new. To turn this into chili, combine leftovers in a saucepan with 1 can (15 oz) of diced tomatoes, 1 can (8 oz) of tomato sauce, 1 can (16 oz) of kidney beans and 2 tablespoons of chili seasoning. Stir to combine and bring to a boil. Leftovers can also be turned into stuffed peppers or tomatoes. Simple hollow out bell peppers or large tomatoes, fill with the leftovers and bake at 350°F for 20 minutes.

BACON CHEESEBURGER RICE
My husband and I thought the original skillet dish lacked pizzazz, so we created this tastier version. I've had teenage nieces and nephews request the recipe after their first bite. -Joyce Whipps, West Des Moines, Iowa

This is my version of a favorite childhood recipe that my friend's mother used to make for us. I had to try to recreate from memory over the years and this version is the best. If you like fried rice, I don't think you will be disappointed.

Steps:
- For the awesome sauce: Add egg yolks and pickle relish to a food processor and pulse until incorporated. Add your garlic and mushroom seasoning and pulse again.
- Now, go for it: Slowly drizzle your oil into the mix while all the flavors are spinning around and mingling (like you did at last year's holiday party). Don't go too fast though! The sauce may break, and there's no return from that. Be gentle. But make it thick. Thick is good. Transfer to a mixing bowl and fold together all of that mayo goodness with your ketchup.
- You're done! Make the fried rice now, and everything will be okay. (See Cook's Note.)
- For the cheeseburger fried rice: Add oil and onions to a hot wok and cook until golden brown and delicious. Add cooked bacon and browned ground beef. Bring some of the reserved bacon fat into the wok and add the jasmine rice.
- With an aggressive approach, mix, stir, rake, swirl, toss... whatever it takes to bring that rice back to life. Make sure every grain has been given some bacon-fat lovin' and nothing is sticking to the wok, until the rice has been fried and is completely alive again. Show it some respect by seasoning with mushroom seasoning and sugar. Not too much? but not too little. Taste this beautiful creation. It is delicious. If desired, add more mushroom seasoning. Toss in lettuce and tomatoes and mix just until incorporated; not wilted but not raw.
- For the garnish: Build this beauty like you would any other cheeseburger. Smother with nacho cheese, 3 ounces awesome sauce and mustard. Sprinkle some sesame seeds over the top (what's a burger bun without sesame seeds?) and last, but very certainly not least, the pickle chips. ENJOY.

- Heat a large skillet or wok over medium high heat. Add the ground beef, pressing down and searing crispy and deeply browned. Flip and cook the other side and when brown, break up into small bits.
- If the skillet is dry, add a bit of oil and then add the rice. Turn the heat up to high and fry, stirring occasionally until the rice is crispy and heated through. If you’re using rice from the fridge, it’s best to break it up with slightly wet hands before putting in the pan.
- Mix in the green chiles, chopped lettuce, and tomato. Stir in the cheese and toss everything together so that everything is evenly distributed. Season with salt and pepper to taste.

- Heat a wok over medium high heat. Stir in the bacon, cooking until crisp, and stirring occasionally. Stir in the mustard, and continue cooking until it's become soft and almost translucent, about 3-5 minutes. Stir in the mustard, and lower the heat to a simmer, cooking for another 60 seconds. Transfer the mustard mixture to a small mixing bowl, and set aside.
- To the already seasoned wok, stir in the ground beef, stirring & breaking up as it cooks. Continue cooking until completely browned. Stir in salt & pepper, to taste. Transfer to a strainer, but save 1 1/2 tbsp worth of the rendered fat, while straining the rest completely. Transfer the meat to a bowl, set aside.
- Heat the wok over medium heat, and stir in the slightly beaten eggs. Stir them almost continuously across the pan until the eggs are scrambled and set.
- Add the reserved, still warm fat back to the beef and stir to combine. Add the beef to the mixing bowl with the mustard mixture and whisk together to evenly combined. Then add that mixture to the work, stirring to incorporate the egg. Stir in the rice, tossing until everything's completely combined and evenly incorporated.

- Heat a wok or very large skillet over medium-high heat. Add the bacon pieces and cook until crispy, about 4 minutes. Add in the onion and cook until soft, about 3 to 5 minutes more. Lower the heat and stir in the mustard and cook 1 minute. Mixture will be gloopy, but that’s right – transfer to a small bowl.
- Without cleaning the pan, add the beef and cook over medium heat, breaking up pieces with a wooden spoon, until browned and cooked through, about 5 to 7 minutes. Season with salt and pepper to taste. Transfer to a small bowl and drain off all but about 2 tablespoons of fat.
- Return the pan to medium heat and add the beaten eggs, stirring constantly around the pan until the eggs are cooked through and dry. Add the beef back to the pan. Add the mustardy bacon and onion mixture back to the pan. Add the rice.

- Press a pound of ground beef onto the bottom of a 12-inch stainless steel or cast-iron skillet or wok over medium high heat. Sprinkle the salt and pepper over the beef and leave it alone. Do not stir or break up the beef.
- Carefully lift the edge of the burger to confirm it's browned and crisp in places on the bottom, you reach the spatula underneath it and flip it over in large sections. Again, leave it alone and do not stir.
- When the bottom side is once again deeply browned and crispy, use the spatula to break it up into small bite-sized pieces. Add in the minced garlic and the white parts of the scallions and fry, stirring until fragrant, about 2 minutes.

- Combine the warm beef stock or water, soy sauces, oyster sauce, sesame oil, and black pepper in a small bowl.
- Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). Try to break up any clumps as best as possible.
- Heat your wok until just smoking, and coat your wok with 2 tablespoons vegetable oil. A seasoned carbon steel wok or a non-stick pan is good for this hamburger fried rice, since the rice in this dish is prone to sticking.
- Add your ground beef and stir-fry until browned and fragrant. Break the hamburger meat up, but don’t be obsessive about it. It’s ok to have small delicious chunks of ground beef with the rice. Next, add the onions, minced garlic and Shaoxing wine. Reduce the heat to medium high and continue to cook until the onions are translucent.
