FOIL-PACK CHICKEN AND BROCCOLI DINNER

What more could one want. Chicken, stuffing, Broccoli, cheese, no mess and easy to make.

1 pkg stuffing mix, chicken flavored
1-1/4 c water
24 oz bonless skinless chicken breasts, 6 ounces each
4 c broccoli florets (fresh)
1 c cheddar cheese (i like sharp)
4 slice cooked bacon crumbled
4 Tbsp ranch dressing

Steps:

  • 1. preheat oven to 400
  • 2. spray 4 large sheets of heavy-duty foil with oil or nonstick spray.
  • 3. combine stuffing mix and water.
  • 4. Spoon 1/4 of the stuffing mixture onto the center of each foil sheet.
  • 5. top stuffing with a 6oz. chicken breast half.
  • 6. top chicken with 1 c. broccoli.
  • 7. sprinkle with 1/4 of the cheese and 1 slice of bacon, crumbled.
  • 8. drizzle with 1 tablespoon ranch dressing
  • 9. bring up foil sides and fold to seal, leaving room for heat circulation inside
  • 10. place packets on a cookie sheet and bake 25-30 mins
  • 11. remove packets and let stand 5 mins
  • 12. cut slits in foil for steam before opening
  • 13. serve and enjoy

1 cup(s) water
6 small (1-1/2lb) boneless skinless chicken breast
4 cup(s) broccoli florets
1 1/2 cup(s) kraft shredded cheddar cheese
1/4 cup(s) oscar mayer real bacon bits
1/2 cup(s) kraft ranch dressing

Steps:

  • HEAT OVEN TO 400F. COMBINE STUFFING MIX AND WATER; SPOON ONTO CENTERS OF 6 LARGE SHEETS HEAVY-DUTY FOIL. TOP WITH REMAINING INGREDIENTS.
  • BRING UP FOIL SIDES. DOUBLE FOLD TOP AND BOTH ENDS TO SEAL EACH PACKET, LEAVING ROOM FOR HEAT CIRCULATION INSIDE. PLACE IN 15X10X1-INCH PAN.
  • BAKE 30 TO 35 MINUTES OR UNTIL CHICKEN IS DONE (165F) FEMOVE PACKETS FROM OVEN; LET STAND 5 MINUTES. CUT SLITS IN FOIL TO RELEASE STEAM BEFORE OPENING PACKETS. TO PREVENT STUFFING FROM STICKING TO FOIL, SPRAY FOIL WITH COOKING SPRAY.

  • Pre-heat oven to 400F. Line a baking sheet with 4 sheets of foil (about 6-8 inches) and set aside.
  • Combine the brown rice, and water in a medium bowl and soak for 5 minutes. DIvide rice (and it's water) into 4 sheets of foil.
  • Pound chicken breasts with a meat tenderizer or a rolling pin until they are even. Place the chicken breasts and broccoli florets on the rice. Seasoning each chicken breast generously with 1 teaspoon of chili powder, Italian seasoning, black pepper, and salt to taste. Drizzle each packet with olive oil and fold the sides of the foil over the chicken, covering completely; seal the packets closed.
  • Bake for 40-45 minutes, or until chicken's internal temperature reaches 165F. Remove from oven and carefully open up the foils. Serve immediately.
