SAUSAGE AND CHEESE CRESCENT SQUARES
Sausage and two kinds of cheese turn crescent dough into a rich and tasty appetizer.

Steps:
- Heat oven to 375°F.
- If using crescent rolls: Unroll 1 can of dough into 2 long rectangles. Place in ungreased 13x9-inch (3-quart) glass baking dish; press over bottom and 1/2 inch up sides to form crust. If using dough sheets: Unroll 1 can of dough. Place in ungreased 13x9-inch (3-quart) glass baking dish; press over bottom and 1/2 inch up sides to form crust.
- In 12-inch skillet, cook sausage over medium heat, stirring frequently, until no longer pink. Remove sausage from skillet; discard drippings. To same skillet, add cream cheese. Cook over low heat until melted. Add cooked sausage; stir to coat. Spoon evenly over crust in baking dish. Sprinkle with cheese.
- If using crescent rolls: Unroll second can of dough on work surface. Press to form 13x9-inch rectangle; firmly press perforations to seal. Carefully place over cheese. If using dough sheets: Unroll second can of dough on work surface. Press to form 13x9-inch rectangle. Carefully place over cheese.
- Bake 21 to 26 minutes or until golden brown. Cool 15 minutes. Cut into small squares.

Steps:
- Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray with cooking spray.
- In large bowl, mix sausage, cheese and rosemary; mix well using hands or spoon.
- Unroll crescent dough on work surface; coat each side of dough with 1 tablespoon flour. Using pizza cutter or knife, cut dough into about 1/4-inch pieces. Mix crescent dough pieces into bowl of sausage mixture in small amounts until well blended.
- Shape mixture into 42 (1 1/4-inch) balls. Place in pan. Bake 15 to 17 minutes or until golden brown.

CHEDDAR SAUSAGE CROISSANT WRAPS
Steps:
- Preheat oven to 350 degrees
- Unroll and lay out 8 croissant dough triangles
- Cut 1/3 off of each sausage end and put 2 ends together to make a new sausage until you have 8 total (if package only comes with 6)
- Line baking sheet with aluminum foil and spray with non-stick spray
- Roll each sausage onto the triangles starting at the wide end and place on baking sheet
- Melt butter and brush onto tops of croissant wraps
- Sprinkle everything bagel seasoning onto tops of croissant wraps
- Bake for 15-20 minutes to your desired doneness (I did 17 minutes for pictured croissant wraps)
CRESCENT SAUSAGE ROLLS
This is my version of a recipe that was printed in recent magazine. I couldn't get that recipe to work for me; however, with a little patience this was the end result. The sausage I used was a pork and turkey sausage blend.

Steps:
- Preheat oven to 350 degrees.
- Brown the sausage and garlic, drain well.
- Stir the snipped chives, basil and cheddar cheese into the drained sausage.
- Line a cookie sheet with parchment paper and separate the crescent rolls into 4 rectangles.
- Lightly roll the cresent rolls out, sealing at the perforations.
- Brush each lightly with a portion of the beaten egg, top with sausage mixture and roll up from a long side.
- If necessary, pinch seams to seal, brush with remaining egg, sprinkle with seasame seeds if desired and bake for 15 to 20 minutes.

Steps:
- Place all ingredients in a food processor and process until thoroughly combined but still chunky.
- Place the mixtrure in a piping bag.
- Spread a sheet of large plastic wrap out on a just moistened work surface and pipe out a large bead of the sausage filling.
- Leave several inches of platic wrap empty on either side of the sausage.
- Roll up the plastic wrap carefully,try to avoid forming any air bubbles inside the plastic.
- Grasp both ends of the plastic wrap and twirl the works repeatedly until the plastic tightens around the sausage.
- If any air pockets form prick them with a pin.
- Tie off both ends of the plastic then tie off the sausage at regular intervals forming links.
- Poached the plastic wrapped links in simmering water for 5-7 minutes,depending on their thickness.
- Just cook them through then cool the sausages by immersing them in ice water for a few minutes.
- Cut off the plastic wrap and squeeze out the sausage.
- When ready to serve quickly reheat them by browning them in a bit of butter until heated through.
- Serve immediately.

SAUSAGE CREAM CHEESE CRESCENTS

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium skillet, lightly brown sausage and drain. While sausage is still hot, add cream cheese and stir until cheese is melted and mixture is creamy. Cool completely.
- Separate crescent rolls and arrange into two rectangles. Form log of sausage mixture lengthwise down center of each rectangle. Fold over the long sides of pastry to cover sausage log. Place on ungreased cookie sheet, seam down. Brush with egg white and sprinkle with poppy seeds.
- Bake 20 minutes until crust is golden. When completely cooled, slice into one and one-half inch slices.
