1 medium onion, chopped
1 teaspoon olive oil
1 garlic clove, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini or tortellini of your choice
3 cups chopped fresh spinach
1 tablespoon balsamic vinegar
1/4 teaspoon pepper
Shredded Parmesan cheese, optional

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally., Add tortellini; cook for 7-9 minutes or until tender. Stir in the spinach, vinegar and pepper. Cook and stir until heated through and spinach is wilted. Sprinkle with cheese.

1 medium yellow onion, diced small
2 large carrots, diced small
2 large celery ribs, diced small
1 teaspoon fine sea salt
8 cups good low-sodium vegetable stock
5 ounces baby spinach
9 ounces tortellini
1/4 cup chopped flat-leaf parsley
Freshly ground black pepper
Grated parmesan or pecorino, for serving

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add onion, carrots, celery and salt and stir to coat with oil. Cook for about 5 minutes, stirring occasionally, until beginning to soften. If you happen to get distracted and the veggies brown a little bit, it'll add some nice depth of flavor.
  • Stir in stock, bring to a boil, then cover and reduce heat to simmer until veggies are tender. Remove lid and add spinach and tortellini. Cook according to tortellini package instructions (usually just simmering for a couple of minutes). Off the heat, stir in parsley and black pepper to taste.

4 ounces cheese-filled egg tortellini, dry
1 (10 ounce) package frozen spinach, chopped (no need to thaw or drain)
1 onion, chopped
1/4 cup red wine
2 teaspoons dried oregano
2 teaspoons dried basil
2 tablespoons parmesan cheese, grated
fresh ground black pepper, to taste

Steps:

  • In a large pot, combine all ingredients except the tortellini and parmesan cheese.
  • Bring to a boil.
  • Reduce heat and simmer, covered, for about 20 minutes.
  • While the tomato and spinach mixture simmers, prepare tortellini according to the package.
  • Do not overcook- I prefer to undercook the pasta by a minute or two so it stays firm.
  • Drain.

32 ounces chicken broth
6 ounces spinach, I use bagged spinach
1 tablespoon olive oil
1 medium onion, chopped

1 cup fresh parmesan cheese, shredded

Steps:

  • In a large pot heat olive oil. Add onion and garlic and saute until soft; about two minutes. Add chicken broth and bring to a boil. Reduce heat.
  • Add tortellini and cook according to package. About 7-8 minutes.
  • Rinse spinach and add entire bag to soup. Simmer 2-3 minutes or until spinach is wilted.
  • Add black pepper to taste.
