CHEDDAR BACON RANCH CHICKEN PASTA
Cheddar Bacon Ranch Chicken Pasta is a delicious baked pasta recipe loaded with crumbled bacon, shredded chicken and cheddar cheese all in a creamy sauce made with cheddar cheese soup, cream of bacon soup and ranch dip mix.

Steps:
- Preheat oven to 400F.
- Cook penne according to the directions on the package. Drain.
- Pour the cheddar soup, cream of bacon soup, milk, ranch dip mix, salt and pepper into a large mixing bowl.
- Whisk until all of the ingredients are fully combined.
- Add the cooked penne noodles to the bowl.
- Stir until all of the noodles are coated in the soup mixture.
- Add the shredded chicken, bacon bits and shredded cheese to the mixing bowl.
- Stir well.
- Dump the pasta into a greased 9 x 13 inch baking dish and spread it out evenly.
- Sprinkle the the remaining shredded cheese and bacon bits on top.
- Place the dish in the oven and bake the pasta until it bubbling and the cheese is starting to brown around the edges. 22-25 minutes.
- Remove the dish from the oven and let the pasta sit for a few minutes before scooping and serving.
- Enjoy!

- Cook pasta according to package directions. Meanwhile, in a small nonstick skillet coated with cooking spray, saute onion until tender. Add garlic; cook 1 minute longer. Set aside. , In a small saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in 1 cup cheese until melted. , Drain pasta. Add pasta, bacon and onion mixture to the sauce; stir to coat. Transfer to a 3-cup baking dish coated with cooking spray. - Cook bacon, onion, and garlic in a large straight-sided skillet over medium heat, stirring occasionally, until bacon is browned, about 10 minutes. Stir in chopped thyme. Remove from heat.
- Meanwhile, in a large pot of salted boiling water, cook pasta until al dente, about 2 minutes less than according to package instructions. Drain, reserving 2 cups pasta water.
- Melt butter in a small saucepan.Whisk in flour; cook until melted and smooth, about 1 minute. Slowly whisk in milk and 1/2 cup pasta water until smooth. Bring to a boil, remove from heat, and whisk in cheeses.
- Return skillet to medium-high heat; add 1/2 cup pasta water and cook, scraping up browned bits, 1 to 2 minutes. Add cooked spaghetti and cheese sauce. Stir, adding remaining pasta water, 1/4 cup at a time, until sauce is creamy and evenly coats pasta. Taste and season as needed. Serve, sprinkled with pepper and thyme leaves.

- Bring a large saucepan of water to a boil. Then add pasta and cook according to package directions.
- Meanwhile, cut bacon into bite-size pieces.
- Heat a large, wide frying pan, preferably non-stick, over medium heat.
- Add bacon and stir often until bacon is browned and crispy, from 4 to 5 minutes. Drain fat from pan, if you wish.
- Then stir in drained tomatoes.
- Using a wooden spoon, break up tomatoes and cook until hot and bubbly, about 2 minutes.
- Drain pasta well, then add to bubbling sauce in pan.
- Sprinkle in cheese, onions and pepper.
- Turn off heat but leave pan on stove.
- Stir pasta until cheese is almost melted and pasta is evenly coated with sauce, about 1 minute.

- Sprinkle with additional grated cheese, if you like.
- Serve immediately with a leafy green salad and a few tomato slices.

- 1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
- 2. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.
- 3. Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
- 4. Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted.
- 5. Serve each plate of pasta with more bacon sprinkled over the top.
