Number Of Ingredients 27

12 slices bacon
smoky
8 ounces cream cheese
brick
at room temperature
1 cup sharp white cheddar cheese
cubed
(Irish or American) plus 1 1/2 cups shredded
1 shallot
grated
1 clove garlic
grated
1/4 cup good quality Irish whisky
such as Jamesons
2 dashes bitters
such as Angostura
1 teaspoon Worcestershire sauce
About
1 teaspoon dry mustard
Salt and pepper
3/4 cup almonds
smoked
chopped or coarsely processed
1/4 cup chives
finely chopped
parsley
A handful finely chopped

Steps:

  • Preheat oven to 375°F
  • Arrange bacon on a slotted pan or wire rack-lined baking sheet and bake to crisp
  • Cool to room temperature then finely chop
  • In the bowl of a food processor, combine softened cream cheese, cubed Cheddar, shallot and garlic, and process until fairly smooth
  • Transfer mixture into mixing bowl
  • Using a rubber spatula, stir in shredded cheese, whisky, bitters, Worcestershire, mustard, salt, pepper and about two-thirds of the bacon bits
  • Reserve the rest of the bacon for topping
  • Lay a good amount of plastic wrap on a flat surface and transfer cheese mixture to the plastic
  • Twist up the four corners of the plastic and tighten to form a ball shape
  • Refrigerate at least 2 hours or overnight
  • In a shallow dish, combine chopped smoked almonds, reserved bacon bits and fresh chives and parsley
  • Roll the cheese ball in the mixture until the ball is completely and evenly coated
  • Serve with your favorite crackers, pretzel rods or veggie planks such as carrots, parsnips, red peppers and/or celery

16 ounces Cream Cheese (, softened (2 packages))
1 cup Cheddar Cheese
0.5 ounce Ranch Dressing Mix ( (1/2 package or @ 1 1/2 tablespoons - or to taste))
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Paprika
fresh cracked Black Pepper
4 Green Onions (, sliced thin (divided in half))
4 slices cooked, crispy Bacon (, cut into very small pieces)
1/4 cup chopped roasted Nuts ((pecans, almond, walnuts etc...))

Steps:

  • In bowl, combine cream cheese and cheddar cheese. Microwave cheeses for about 45 seconds (depending on microwave) or just until the they are soft and cheddar is slightly melted. Stir to combine.
  • Add ranch dressing mix, garlic powder, onion powder, Worcestershire sauce, paprika, black pepper and half of the green onions. Stir the mixture until everything is combined. Chill in fridge for about 5 minutes if necessary so it can be formed into a ball.
  • Lay plastic wrap on surface and transfer cheese mixture on top. Wrap the plastic wrap around cheese mixture and shape the mixture into a ball. Chill until the cheese ball is firm.
  • Combine the bacon bits, nuts and remaining green onions in a plate. Roll the chilled cheese ball in the bacon/nuts mixture. Refrigerate covered until ready to serve. The cheese ball tastes better the next day after all the flavors are combined.

1 pound bacon
2/3 cup sweet onion, minced fine*
2/3 cup sweet red bell pepper, minced fine*
1 tablespoon garlic, minced fine*
1 tablespoon granulated sugar
1 tablespoon champagne vinegar
2 tablespoons apricot jam (or other favorite jam or preserves)
½ cup pecans, divided
8 ounces cream cheese, softened
¼ cup sour cream
1 cup swiss cheese, shredded on large holes of a box grater
3 cups sharp white cheddar cheese, shredded on large holes of a box grater
½ teaspoon kosher salt
¼ teaspoon white pepper
¼ cup fresh flat leaf parsley, chopped fine
Crackers for serving

Steps:

  • Cook bacon to crisp and drain on paper towels. Crumble into small pieces or chop on a cutting board. Divide in half and set aside.
  • Reserve two tablespoons of the bacon fat and save the rest for other recipes, or discard.
  • In a clean pan, heat the two tablespoons of bacon fat and add onions, bell peppers and garlic and saute about four minutes over medium high until soft.
  • Lower heat to medium and add sugar, vinegar and jam and cook for another minute, then remove pan to cool.
  • In a small dry pan over medium heat, toast pecans for about 2-3 minutes until browned. Remove to a cutting board and chop fine. Take half the nuts and set aside into a medium bowl.
  • In the bowl of a stand mixer with paddle attachment, beat cream cheese until smooth then beat in the sour cream. Scrape and beat again.
  • Add the swiss, cheddar, salt, pepper, half of the chopped nuts, half of the chopped bacon and all of the contents from the pan with the onions and peppers.
  • Mix with paddle just long enough to incorporate, don't over mix.
  • Refrigerate for one hour.
  • Lay out a big piece of plastic wrap or parchment paper and sprinkle half the bacon and nut mixture out.
  • Use a rubber spatula to gather up the cheese mixture and using your hands, form into a ball shape then set in the center of the topping mixture.
  • Pour the rest of the topping over the top of the cheese ball then use the plastic or parchment to lift the sides to get the topping all the way around the ball. Roll the ball into the mixture until it is all used.
  • Place on a serving dish and refrigerate again for another hour.
  • Serve with crackers.

¼ cup green onions (diced (can sub 1/3 cup diced chives))
6 strips bacon (cooked and crumbled)

Steps:

  • Use a silicone spatula to mix all ingredients until well combined. Transfer to saran wrap and use it to help you mold it into a ball.
  • Refrigerate for a minimum of 30 minutes in order to allow the flavors to blend. Remove saran wrap and transfer to a serving platter. Serve with crackers, vegetables, Pita chips, or crusty breads.

2 (8 oz.) blocks cream cheese, softened at room temperature
1/4 cup sour cream
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 1/2 cups cheddar cheese, shredded
1/2 cup green onions, sliced
1/2 cup bacon bits
1 cup pecans, chopped
1 teaspoon poppy seeds

Steps:

  • In a large mixing bowl, combine cream cheese, sour cream, garlic powder, and black pepper with a hand mixer until smooth and well combined. Stir in half of the cheddar cheese, green onions, bacon, and pecans. Set the other half aside on a plate. Mix with a spatula until evenly distributed.
  • Add the cheese mixture onto a clean cutting board and use your hands to shape it into a ball. To prevent the cheese from sticking too much, apply some oil to your hands or wear disposable gloves.

My girlfriend loves swiss and cheddar cheese balls, and I couldn't find them for our sixth month anniversary, so I invented my own as a present to her. She said they were the best ones she had ever had.

1 (8 ounce) package cheddar cheese
1 (8 ounce) package cream cheese
8 ounces of freshly grated swiss cheese
1 1/2 ounces bacon bits (more or less to taste)
Club crackers

Steps:

  • Mix the cheddar cheese, cream cheese, and swiss cheese thoroughly and then sprinkle in the bacon bits and mix more.
  • When thoroughly mixed, use hands to form balls.
  • The recipe should make about four good sized balls.
  • Refrigerate for one to two hours until cheese has better consistency.
  • Store in ziplock bags if not using immediately as they keep for several days.

2 tbsp sour cream
2 cups cheddar cheese (grated)
1/4 tsp garlic powder
1/4 tsp onion powder
1 cup bacon crumbles

Steps:

  • Place softened cream cheese into a medium sized mixing bowl.
  • With an electric mixer, mix cream cheese.
  • Then, add the liquid smoke, sour cream, cheddar cheese, garlic powder, and onion powder. Mix until well combined.

After looking at many cheese ball recipes that didn't fit my family's tastes, I made one up to serve on New Year's Eve. Everyone loved and it was super simple to put together. I didn't roll my cheese ball in chopped nuts, but you could certainly do that or even roll it in additional crumbled bacon.

8 ounces cream cheese, softened (I used light cream cheese)
1 -1 1/2 cup shredded extra-sharp cheddar cheese (I used Cabot's Seriously Sharp)
5 -6 slices bacon, cooked and crumbled
1 teaspoon parsley flakes
1 1/2 teaspoons dried chives (or 1 tbl or so snipped fresh chives)
1 dash hot sauce
1 dash garlic powder
chopped pecans (optional) or walnuts (optional)
additional crumbled cooked bacon (optional)

Steps:

  • Combine all ingredients in a med-large size bowl.
  • If your cream cheese is soft enough, you can stir this by hand or you can use a hand-mixer until well combined.
  • Spoon out onto plastic wrap big enough to fold over top and form cheese mixture into a smooth bowl, wrapping plastic wrap around ball to seal.
  • (If desired, roll cheese ball into chopped nuts or additional cooked and crumbled bacon before wrapping.).
  • Place in refrigerator for 1-2 hours so flavors blend.
  • Serve with crackers, bagel chips, veggies, etc.

8 slices thick-cut bacon, cooked & crumbled
3 cups shredded sharp cheddar
8 ounces cream cheese, softened to room temperature
¼ cup beer of choice (see Recipe Notes, below)
4 green onions, finely chopped
¼ teaspoon garlic powder
¼ teaspoon smoked paprika
optional: pinch cayenne pepper

Steps:

  • Transfer the chilled cream cheese mixture to a large piece of plastic wrap. Use the plastic wrap to form the mixture into a ball - this will be a little messy, so just be patient & keep working until it comes together! Roll the ball in the bacon & cheddar mixture from Step 1, coating the entire surface with shredded cheese & crumbled bacon.

8 ounces cream cheese, softened
1 cup cheddar cheese (shredded)
1 cup cheddar cheese (for outside of ball)
1/3 cup mayonnaise
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 cup onion, chopped (you can use green onion or whatever you have)
1 teaspoon parsley flakes
1/3 cup bacon, crumbled and cooked

Steps:

  • Mix all items together except the additional 1 cup of cheddar cheese that you will use to roll the ball inches.
  • With a spoon pull mixture toward middle of the bowl and try to form a ball.
  • Then cover and place in refrigerator until chilled and firm.
  • After it has chilled, it will be easier to work with.
  • Roll the cheese mixture into a ball and roll in additional cup of grated cheddar cheese.
  • Roll until all sides are coated and press the cheese into the ball.
