BAKED JALAPENO POPPERS
Steps:
- Preheat the oven to 350 degrees F. Lightly grease a baking sheet and set aside.
- In a bowl, cream together the cream cheese, Monterey Jack cheese, cumin, and cayenne.
- In a small bowl, beat together the eggs, milk, and 2 teaspoons of the Essence. In a shallow dish, combine the panko crumbs and remaining 4 teaspoons of Essence. In a third dish, combine the flour and remaining 2 teaspoons of Essence. Spread 1 tablespoon of the cheese mixture into the middle of each jalapeno half. One at a time, dredge in the flour, dip into the egg mixture, then dredge in the panko crumbs, pressing to coat. If necessary, repeat the process. Place the coated peppers, cut side up, on the prepared baking sheet and bake until the filling is runny and the crust is golden, about 30 minutes.
- Remove from the oven and serve immediately with cold beer.
- Combine all ingredients thoroughly and store in an airtight jar or container.

BAKED CREAM CHEESE JALAPENO POPPERS
After a number of unsatisfactory attempts at making deep-fried poppers, I modified a recipe by Emeril that is much easier than frying and everyone in our family agrees that these are at least as good as -- if not better than -- any fried poppers they have had! We love hot peppers and always make a lot of these from the ones we grow in our garden every year.

- Heat oven to 375 degrees F.
- Carefully remove stems from chiles; cut each in half lengthwise and again horizontally to make 4 pieces.
- Remove and discard seeds.
- Spoon about 1 teaspoon cheese into each chile quarter.
- Wrap half slice of bacon around each.
- On cutting board, unroll dough; separate dough into 8 triangles.
- From center of longest side to opposite point, cut each triangle in half, making 16 triangles.
- Place chile, cheese side down, on dough triangle.
- Fold 1 point of triangle over filling; fold 2 remaining points over first point.
- Place on ungreased cookie sheet.
- Bake 12-15 minutes or until golden brown.
- Immediately remove from cookie sheet.
- Serve with salsa, if desired.
CHARRED JALAPENO POPPERS
Roast jalapeno peppers stuffed with cream cheese and wrapped in bacon. These are a little time consuming, but the results are delicious. Prep time includes time to grill the peppers. You can let your imagination go wild and adjust the recipe by adding anything you think sounds good. Cream cheese measurement is an estimate because of the difference in pepper sizes. Thanks to Chuck who makes these and takes them to all the neighborhood cookouts and potlucks. He often goes home with requests for more.

- Halve and seed the jalapenos.
- Roast on a hot grill just until skins start to turn dark.
- Slice the bacon strips in half.
- Fill the jalapeno halves with cream cheese.

UNBREADED JALAPENO POPPERS WITH DOUBLE CHEESE!
My friend Mandy made these for a holiday party and I could not stop eating them! With only 4 ingredients, they are a snap to make. I like them because they are not breaded and they are baked instead of being fried for a carb healthy snack. You can use light cream cheese and light cheddar cheese to cut some of the fat, too, but I'm posting the full fat version that I originally tasted. I promise that you will not be able to resist these little puppies!

- Preheat oven to 450.
- Cut stems off of peppers and cut them in half lengthwise.
- Remove the seeds and veins from the peppers (you may want to wear gloves to keep the oils off of your hands).
- When finished, make sure you rinse the peppers so the oils are removed from the outside of the pepper.
- Fill each pepper half with cream cheese. If using large peppers, you may have to use more cream cheese than listed above.
- Cut the slices of bacon to fit on top of each pepper.
- Place on a baking sheet and sprinkle the cheddar cheese on top. If you keep them next to each other in a bunch on the cookie sheet, it is easier to sprinkle the cheese on top and keep it there instead of having it fall off and burn on the cookie sheet. Just make sure you separate the cheese carefully when they are done baking and still warm.
- Bake until bacon is fully cooked, about 10-15 minutes.
- Remove and serve when cooled. (They can be made the night before and stored in an air tight container in the fridge).

Steps:
- Mix cream cheese with chopped garlic, sun-dried tomatoes and a dash of chopped basil. Add a pinch of salt. Mix until the mixture is soft and manageable.
- Slice each jalapeno lengthwise on 1 side, being careful not to cut the jalapeno in half. Remove the seeds if you don't want them too hot -- depending on your pepper, you may have to slice around the stem of the pepper to create a manageable opening to squeeze the filling inches.
- Fill either a pastry bag or tool of your choise with the filling. Use something that will allow you to squeeze the filling into the opening of the pepper with ease. Be careful not to overfill as the filling may spurt out while cooking.
- Wrap each pepper with 1 to 2 strips of bacon, securing the opening in the pepper. Secure the bacon with a toothpick (best to soak them first to prevent burning on the grill). This also helps prevent the peppers from falling into the grill! Long metal or wood skewers work well for large amounts.
- BBQ the peppers until they are lightly roasted, or until the bacon is fully cooked. Use some foil to cook on if your peppers are cooking too fast or beginning to burn on a hot grill.
- Serve immediately.

- Cut each jalapeno lengthwise. Use a spoon to scrape the seeds and membranes out of the halves. Place jalapeno halves on the prepared baking sheet.

- Heat oil in a large heavy skillet or deep fryer to 360 degrees F (180 degrees C).
- In a small bowl, mix together cream cheese, jalapenos, cheese, paprika, salt, and garlic powder.
- Place 1/2 to 1 teaspoon of the cream cheese mixture into the center of each wonton wrapper. Fold the won ton wrapper over the stuffing to make a triangle or a half moon, depending on the shape of the won ton wrappers you have purchased. Moisten the edges with a little water, and seal. Place prepared won tons under a slightly moist paper towel until ready for frying.
- Add 3 or 4 wontons to the hot oil, and cook until golden brown, turning once. Set aside on paper towels to drain. Repeat until all wontons have been fried. Serve hot.
