CHAR-GRILLED ROAST BEEF

Want to master grilled roast beef - with tender juicy slices? This is my favorite method for grilled beef over charocal - with just a hint of smoke and a thick herb and umami crust. Perfect every time!

3 lbs Round Roast
1 tbsp olive oil
6 6 garlic cloves (minced)
4 sprigs fresh rosemary (minced)
1 tbsp GirlCarnivore Ooomami (or other umami spice blend)
1 tbsp White Tux Horseradish Blend (or another horseradish spice blend)
Salt

Steps:

  • Combine the minced garlic, minced rosemary, Ooomami, horseradish spice blend and salt in a bowl.
  • Mash the ingrediants with the tines of a fork until almost a paste.
  • Pat the beef dry with a paper towel and place on a clean work surface.
  • Rub the beef all over with the oil.
  • Coat the beef with the garlic blend on all sides.
  • Wrap the roast in plastic wrap and place in fridge overnight.
  • When ready to grill, allow the beef to sit out for 1 hour.
  • If you are using a grill-safe thermomteter insert it now.
  • Using a chimney starter or other desired method, allow charcoal to become ashen before pouring it to one side of the grill to create an eoffset heat source.
  • Place your diffuser plate, if your grill has one, and grilling grate on the grill and oil grate for smoking.
  • Add hickory chunks or chips to the grill and allow to smoke.
  • Place the roast over the cooler side of the grill and close the lid.
  • Grill for 1 hour to 1 1/2 hours, or until the beef reaches an internal temperature of 125 degrees F, rotating once 180 degrees, halfway through cooking.
  • Remove the roast from the grill and a cover with foil.
  • Allow to rest for 20 minutes.
  • When ready to serve, slice into even portions for as many servings as needed. Do not slice additional portions ahead of time.
  • Sprinkle with a little salt and serve hot.

Char-Grilled Rib Eye with Roasted Shallot and Herb Butter image

There is nothing like a Rib Eye: it is the most flavorful steak you can buy. The thin streams of fat running through this cut of steak create outstanding flavor. You'll only need to season this with salt and pepper, because we're going to make a shallot-and-herb butter to slap on top of this baby once it's off the grill. As with any good steak, let this one rest for a few minutes before digging in. It will be moist and tender. SERVES 4 GENEROUSLY

Olive oil
Four 12-ounce rib-eye steaks, bone in, about 1 1/2 inch thick
Kosher salt and freshly ground black pepper
1 recipe roasted shallot and herb butter (recipe follows)
1 medium shallot, peeled
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1 stick salted butter, room temperature
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh tarragon
1 teaspoon grated lemon zest
Pinch of crushed red-pepper flakes

Steps:

  • Take your steaks out of the fridge 30 minutes before you want to start grilling, so they can come to room temperature. Prepare the charcoal grill to medium-high heat on one side of your grill, and medium-low heat on the other. You will need just a few briquettes on the cooler side of the grill to maintain the low heat. (If using a gas grill, heat one side of the grill to medium-high heat and the other to low.)
  • When the grill is hot and ready to go, brush the grill grates with some olive oil. Season the steaks generously with salt and pepper. Place the steaks on the hot side of the grill for 3 to 4 minutes, then flip and grill for another 4 minutes. Once the steaks have a nice caramelized crust, move them to the cooler part of the grill, and continue cooking for 6 to 7 minutes for medium rare, or 8 to 9 minutes for medium. Remove the steaks from grill, and tent loosely with foil to keep warm. Let the steaks rest for 5 minutes, so the juices can redistribute throughout the meat. Spread steaks with the roasted shallot and herb butter.
  • GINA: Roasting the shallot gives it a deep, sweet flavor, and the lemon zest lightens the whole thing up. This butter would also be an excellent topping for fish or chicken.
  • Preheat the oven to 350 degrees F. Place the shallot on a square of foil, drizzle lightly with olive oil, and season with salt and pepper. Fold up the foil into a little packet, and place in the oven for 1 hour. Let cool completely. Pulse the roasted shallot and remaining ingredients in a food processor until combined but still coarse. Scrape the butter onto a piece of plastic wrap, spread it across lengthwise, and roll into a log. Twist the ends to seal. Place in the fridge to firm up for at least 35 minutes before serving.

Spice Rub
2 tablespoons dark brown sugar
1 tablespoon sweet smoked paprika*
1 tablespoon coarse kosher salt
1 1/2 teaspoons chipotle chile powder or ancho chile powder
1 teaspoon ground black pepper
Chimichurri sauce
3/4 cup olive oil
3 tablespoons Sherry wine vinegar or red wine vinegar
3 tablespoons fresh lemon juice
3 garlic cloves, peeled
2 medium shallots, peeled, quartered
1 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried crushed red pepper
3 cups (packed) stemmed fresh parsley
2 cups (packed) stemmed fresh cilantro
1 cup (packed) stemmed fresh mint
Beef tenderloin
1 3 1/2-pound beef tenderloin
2 tablespoons olive oil

Steps:

  • For spice rub:
  • Combine all ingredients in small bowl.
  • Do ahead: Can be made 2 days ahead. Store airtight at room temperature.
  • For chimichurri sauce:
  • Combine first 8 ingredients in blender; blend until almost smooth. Add 1/4 of parsley, 1/4 of cilantro, and 1/4 of mint; blend until incorporated. Add remaining herbs in 3 more additions, pureeing until almost smooth after each addition.
  • Do ahead: Can be made 3 hours ahead. Cover; chill.
  • For beef tenderloin:
  • Let beef stand at room temperature 1 hour.
  • Prepare barbecue (high heat). Pat beef dry with paper towels; brush with oil. Sprinkle all over with spice rub, using all of mixture (coating will be thick). Place beef on grill; sear 2 minutes on each side. Reduce heat to medium-high. Grill uncovered until instant-read thermometer inserted into thickest part of beef registers 130°F for medium-rare, moving beef to cooler part of grill as needed to prevent burning, and turning occasionally, about 40 minutes. Transfer to platter; cover loosely with foil and let rest 15 minutes. Thinly slice beef crosswise. Serve with chimichurri sauce.
