- Heat oven to 425ºF.
- Cook chorizo in large skillet on medium heat 5 to 7 min. or until done, stirring occasionally; drain. Add red peppers and onions; cook 3 min., stirring occasionally. Stir in mushrooms and jalapeño peppers; cook 4 to 5 min. or until mushrooms are tender.
- Place pizza crust on baking sheet; brush edge with oil. Spread crust with sauce; top with 3/4 cup cheese, chorizo mixture, tomatoes and remaining cheese.
- Bake 12 to 14 min. or until crust is golden brown and cheese is melted. Sprinkle with cilantro.

CHAMORRO CHORIZO PIZZA

- Method - Dough Mix all ingredients in a mixer, except the yeast, on low for 2 minutes or until ingredients are combined. Let sit for 20 minutes Add the yeast to the mixture Mix on high for 6-8 minutes Cover bowl and the dough rise until it doubles in size. 2-4 hours depending on the temperature of the room Punch down dough and let rise a second time for 2-4 hours. Punch dough down and form into 4 equal balls. Let sit a least 2 hours. Cover and let sit covered until needed. Method Preheat oven for at least 30 minutes at the highest temperature Flatten dough ball into pizza shape by hand or with rolling pin. Use additional flour if need Add sauce Add cheese Add topping Bake in middle of oven on pizza stone or on baking sheet for 10-15 minutes.

- Make up the pizza base following pack instructions and put on a baking sheet. Spread over the tomato pizza sauce. Leave to rise in a warm place for 5 mins.
- Heat oven to 240C/220C fan/gas 9. Put the chorizo in a cold frying pan over a low heat, then gradually increase it - the chorizo should give off enough oil so that you don't need to add any more. Cook for 2-3 mins until it releases its oil and starts to crisp.

- Prepare the dough following the instructions in our basic pizza dough recipe in 'goes well with', right.
- Thickly slice the chorizo and pan-fry until crisp. Remove and set aside. Cook one side of the pizzas.
- Crush 2-3 of the tomatoes with your hands and drain in a sieve, then spread on the cooked side of the pizzas. Top with both cheeses, the pepper and chorizo. Season and add chilli flakes if you like it hot. Grill, covered, until the cheese is melted. Finish with the spinach leaves and shavings of manchego.

- In the bowl of a stand mixer fitted with the dough hook attachment, stir together the warm water with the yeast. Allow the mixture to sit for about 10 minutes, or until the yeast starts to foam up (proofing the yeast). If this doesn’t happen, your yeast may be dead. Start again with new yeast and water.
- Add 1 cup of the flour, the honey, salt and olive oil. Mix together on low for 1 minute, before adding the last cup of flour. Once the dough starts to form together, increase the speed to medium-high and run the mixer for about 5-6 minutes; if the dough continues to stick to the sides of the bowl, add an additional tablespoon of flour at a time, until the dough pulls away from the sides of the bowl (you may need to use up to 1/4 cup more flour in total). After 5-6 minutes, remove the dough from the bowl, and shape it into a round ball. Place the dough into a large bowl that has been sprayed with non-stick spray or lightly greased with olive oil. Turn the ball of dough around in the bowl to lightly coat all surfaces. Cover the bowl tightly with plastic wrap or a damp towel and leave it to rise at room temperature (away from cold drafts) for about 1 1/2 hours, or until the dough has doubled in size.
- While the dough is rising, caramelize your onion. Melt the butter in a large skillet (cast iron or stainless steel is best) over medium heat. Add the sliced onion, and stir to coat. Cook the onion for 40-55 minutes, stirring them every 8-10 minutes with a wooden spoon, ensuring that all bits (fond) that collects on the bottom of the pan is scraped up and stirred. Taste a golden onion around 40 minutes, and if it tastes good to you, add the wine/vinegar/water to deglaze the pan. Stir/scrape up all of the remaining fond that has collected on the bottom of the pan. Turn off the heat and allow the onions to cool.
- When your pizza dough is ready, punch it down lightly to release some of the air. Place it on a floured surface and roll the dough into a 12″ circle. Pour the oil into the bottom of a 12″ cast iron skillet* and swirl it around to coat. It will seem like a lot of oil, but trust me – it really helps to deliver that deep-dish flavour to your crust. Sprinkle some cornmeal over top of the oil (if desired). Place the circle of dough into the skillet, and fold up the sides slightly to create a bit of a crust around the edge.

- ** Cured chorizo sausage is not fresh sausage. It has been cured and/or smoked and is semi-dried, like Kielbassa, so could be sliced up and eaten out of hand, if you liked. It is often found in the deli section of your grocery, in sweet or hot versions. Either one is fine, depending on your taste. Try to find one that isn't rock hard (should give a little if squeezed), or you'll have a heck of a time pulling it apart. If you can't find, you could use fresh chorizo sausage (often seen in the meat department, with other fresh sausages), but you would need to remove the sausage from the casing, crumble and pan fry before adding to your pizza.
- For the pizza dough: In a medium bowl, thoroughly blend the flour, yeast, and salt. Add the water and, with a wooden spoon and/or your hands, mixing thoroughly. Cover the bowl with plastic wrap or a kitchen towel and allow it to rise at room temperature (about 72°) for 18 hours or until it has more than doubled.
- Flour a work surface and scrape out the dough. Divide it into 2 or 4 equal parts (for 2 large or 4 small pizzas, as you like) and shape them. For each portion, start with the right side of the dough and pull it toward the center, then do the same with the left, then the top, then the bottom. (The order doesn't actually matter; what you want is four folds.) Shape each portion into a round and turn seam side down. Mold the dough into a neat circular mound. The mounds should not be sticky; if they are, dust with more flour.
- If you don't intend to use the dough right away, wrap the balls individually in plastic and refrigerate for up to 3 days. Return to room temperature by leaving them out on the counter, covered in a damp cloth, for 2 to 3 hours before needed.
