I didn't have any graham crackers so I decided to see what else I could use to make the crust. Who knew you could make a pie crust with cereal? I made mine with Captain Crunch. How fun is that! Recipe courtesy of The Joy of Cooking. Serving size is estimated.

6 cups breakfast cereal (flaked or puffed)
1/2 cup butter, melted
1/4 cup sugar (omit if the cereal if presweetened)
1/2 teaspoon cinnamon

Steps:

  • Roll or grind the breakfast cereal. There should be 1 1/2 cups after crushing.
  • Combine with the melted butter, sugar (if using), and cinnamon.
  • An easy way to form the crust is after mixing to press another pie pan of the same diameter firmly into the dough. When the top pan is removed a crust of even thickness is underneath.
  • Trim any excess that is forced to the top edge.
  • Crumb crusts need not be baked before filling, but if used unbaked, must be first chilled thoroughly or the filling will immediately disintegrate the crust.
  • If baked before filling, they require a 350 degree oven for about 10 minutes. It is best to cool the empty baked shell before filling.
  • Fill a prebaked shell with chiffon fillings, bavarian creams, or gelatin whips topped with sweetened whipped cream, or with custard or fruit filling, which may be covered with a high meringue.

3/4 cup all-bran cereal
1 cup flour
1/2 cup margarine
2 tablespoons milk

Steps:

  • Preheat oven to 400 degrees F.
  • Combine the bran and flour together in a small mixing bowl.
  • Add the margarine and cut in, until the mixture resenbles coarse oatmeal.
  • Add the milk and stir until all ingredients are moistened.
  • Do not over stir!
  • Press the crumbly mixture evenly around the sides and bottom of a 9-inch pie pan.
  • Prick the bottom and sides with a fork.
  • Bake for 12 minutes or until very lightly browned.
  • Bear in mind that this crust will be cooked again when you have filled it, although it does not need to be.
  • Cool your crust before filling.

4 cups (1 quart) rocky road ice cream
1 cup all-purpose flour
6 large eggs
6 cups cinnamon-flavored cereal, such as Cinnamon Toast Crunch
4 cups (1 quart) vanilla ice cream
1 cup all-purpose flour

6 cups fruit flavored cereal, such as Fruity Pebbles
4 cups (1 quart) strawberry ice cream
1 cup all-purpose flour
6 cups puffed grain cereal, such as Kix

Vegetable oil, for frying

Steps:

  • Freeze a baking sheet until very cold, at least 1 hour.
  • Use a 2-inch ice cream scoop and scoop 6 balls of ice cream from your desired flavor combination onto the cold baking sheet. Freeze until the ice cream is rock solid, about 1 hour.
  • Meanwhile, set up a breading station with 3 shallow dishes: Put the flour into the first dish. Beat the eggs together in the second dish. Put the cereal from your desired flavor combination into a third dish; use the bottom of a measuring cup to crush into fine crumbs.
  • Remove 1 scoop of ice cream from the freezer. Coat in the flour while using your hands to shape it into a perfect ball. Dip the ball in the egg, letting any excess drip off, then coat completely in the cereal. Repeat this breading process 3 more times, and return the ball to the baking sheet in the freezer. Bread the remaining ice cream scoops. Freeze until rock solid, about 2 hours of up to overnight.
  • For the fried ice cream: Fill a large heavy-bottomed pot with about 3 inches of oil and attach a deep-fry thermometer to the side. Bring to 375 degrees F over medium-high heat. Line a plate with paper towels. Remove the ice cream balls from the freezer and, careful of the hot oil splashing, gently slide them into the oil with a slotted spoon. Fry until the cereal is golden brown and crispy, about 30 seconds. The ice cream will still be frozen and easy to slice without melting. Use the slotted spoon to transfer the balls to the prepared plate and let drain. Transfer to a serving platter and serve immediately.

Steps:

  • To make the crust: Preheat the oven to 350 degrees F. In a food processor, pulse together the cereal, butter and brown sugar until crumbly. Pack about 1/4 cup of the crust mixture into each of six 5-inch mini pie plates and place on a baking sheet. Bake until the crusts are lightly toasted, about 10 minutes.
  • To make the filling: While the crusts bake, whisk together the condensed milk, sour cream, lime zest and lime juice in a bowl. As soon as the crusts come out of the oven, carefully pour in the filling (about 1/2 cup in each) and place them back in the oven. Bake until the filling starts to set, about 10 minutes. Carefully remove the pies from the oven and let cool to room temperature, then refrigerate until chilled all the way through, at least 1 hour, though overnight is best.
  • To make the whipped cream: Combine the heavy cream, confectioners? sugar, vanilla and lime zest in a bowl and beat with a whisk or an electric mixer until the heavy cream forms soft peaks when the whisk is lifted out of the bowl, about 4 minutes. (Or use a stand mixer with the whisk attachment?this will make things go much faster, so watch it carefully.) Spoon the whipped cream on top of the pies and top with more lime zest.

This pie's crunchy toasted cornflake crust and honey-sweetened pudding may inspire new pie-centric breakfast routines, especially when topped with juicy plums. Feel free to play around with nectarines or peaches, too. Because cornflakes (and other not-too-sweet cereals) don't have as much fat and sugar as packaged cookies and crackers, they need more sugar and butter to bind them into a sturdy crust. The extra butter here can sometimes cause the crust to puff or shrink while it bakes. If that happens, don't worry: gently press the crust back into place while still warm with a flat bottomed measuring cup and proceed.

1/4 cup/50 grams granulated sugar
5 tablespoons/40 grams cornstarch

1 cup/240 milliliters whole milk
1 cup/240 milliliters heavy cream
1 cup/240 milliliters heavy cream
1 pound/454 grams ripe plums, pitted and sliced
1 to 2 teaspoons honey (optional)

Steps:

  • Make the crust: Heat oven to 350 degrees with a rack in the middle position. Combine cornflakes, sugar and salt in a food processor and process until finely ground. (You should have about 1 1/2 cups). Add butter and pulse until the mixture looks like wet sand.
  • Transfer cornflake mixture to a standard 9-inch pie plate. Using the bottom of a flat-bottomed measuring cup, press the mixture up the sides and into the bottom of the pie plate. Bake on the middle rack until dry and deeper golden brown, 25 to 30 minutes. (If the crust slumps or puffs while it bakes, gently press it back into place while still warm with the measuring cup and proceed.) Let cool completely.
  • Make the filling: Whisk the egg yolks, egg, honey, sugar, cornstarch and salt in a medium saucepan. Whisk in milk and cream and place over medium-high heat. Cook, whisking continuously, until mixture thickens and starts to bubble, 4 to 7 minutes. Continue to cook, whisking continuously, for 1 minute more. Pour mixture into the cooled crust and spread in an even layer. Press plastic wrap directly onto the surface of the pudding and refrigerate until firm, at least 3 hours and up to overnight.
  • To serve: Beat cream using an electric mixer until soft peaks form. Dollop cream on top of pie, top with plums and drizzle with honey if desired.

  • Stir cereal, sugar, and cinnamon together in a bowl; stir in melted butter until mixture is thoroughly moistened. Press mixture onto bottom and up sides of a 9-inch pie plate using a small, dry measuring cup. Bake in preheated oven until crust is browned and crisp, about 17 minutes. Transfer to a wire rack and let cool 15 minutes.
  • Whisk whole eggs, yolks, lemon juice, butter, and sugar together in a heat-proof bowl set over a pan of simmering water. Whisk until egg mixture is as thick as honey, 5 to 8 minutes. Remove from heat and strain mixture through a fine-mesh sieve into a bowl. Let cool 30 minutes.

BASIC CRUMB CRUST

Crumb crusts are even easier than press-in cookie crusts. You don't even have to bake them-see the variation at right. The crumbs can be made out of cookies, crackers, cereal, pretzels, even potato chips! Sometimes sugar or other flavorings are added to the crumbs (here the sugar is optional), and then fat (usually melted butter) is added to bind the mixture to form a crust. The crumbs can be coarse, for a crunchier texture, or finer, for a smoother texture. Different base ingredients will behave differently, so the first time I test a crumb crust with a new ingredient, I always have a little extra on hand in case I need more crumbs, or a little extra melted butter, should it be needed. Crumb crusts don't generally require chilling before baking, but you can refrigerate for up to 1 hour or freeze for 15 minutes, if desired, to firm them up before baking.

Up to 50 g / ¼ cup granulated sugar (optional)
2 g / ½ teaspoon fine sea salt
85 g / 3 ounces / 6 tablespoons unsalted butter, melted, plus more if needed

Steps:

  • In a medium bowl, stir the crumbs, sugar, if using, and salt together to combine. Stir in the melted butter and mix to combine. The crust should easily hold together in clumps when you press it together between your fingers (if it doesn't, add a little more melted butter, 14 g / 1 tablespoon at a time, until it does).
  • Press the crust evenly into the bottom and up the sides of an ungreased 9-inch / 23-cm pie plate: First make an even layer in the bottom of the pan, then press the rest of the crumbs up the sides. Sometimes I use the bottom of a small dry measuring cup to help press the crust in evenly; this is especially helpful in the corners of the pan.
  • Preheat the oven to 350°F / 175°C (don't use a Baking Steel/stone when baking a crumb crust). To parbake the crust, bake (no docking or pie weights required) for 10 to 12 minutes, until it begins to lightly brown at the edges (or, for darker crumbs, smells lightly toasty). To blind-bake the crust, bake for 15 to 17 minutes, until it is deeply golden brown and/or smells toasty.
  • Do Ahead: This crust is best used the day it's made but can be parbaked or blind-baked up to 1 day ahead and stored at room temperature.
  • Variations:
  • Mini (Two-Bite) Crumb Crusts: Grease the cavities of a mini muffin pan with nonstick spray. Crumble or spoon 15 g / 1 tablespoon of the prepared crust mixture into each of the cavities. Press each portion with your fingers to be flush against the base and up the sides, taking care to press evenly all the way around. Chill the pan in the refrigerator for 15 to 20 minutes, before baking at 350°F / 175°C for 10 to 12 minutes. Cool completely, then use a small offset spatula to unmold the shells before filling. Alternatively, the mini crusts can be frozen for 2 hours after assembling before using a small offset spatula to unmold the pie shells. Keep frozen until ready to fill.
  • Unbaked Crumb Crust: For cream, chiffon, and cold-set pies, the crust doesn't need to be baked at all! After lining the pan with the crust, freeze it for at least 15 minutes before adding the filling.
  • Pie Pep Talk
  • What to do when a crumb crust shrinks: One of the most common problems I've seen with crumb crusts is that they can shrink or slump down the side of the pie plate when the crust is parbaked. Luckily, this is easily corrected. If you notice that your crust is starting to shrink, remove it from the oven and use a crust tamper or a small metal measuring cup to press the crust that slumped down back up the sides of the pie plate. If this happens consistently when you make crumb crusts, try tamping them down more aggressively and/or refrigerating for 30 minutes before baking.
