2 tart cooking apples, cored,peeled,and chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Grease a 12 cup muffin tin.
  • In a mixing bowl, lightly beat eggs; add milk and oil, stirring until just blended.
  • Stir in flour, oats, sugar, baking powder, salt, nutmeg, and cinnamon, mixing until only just moistened (do not overmix).
  • Gently fold in the apples.
  • Spoon batter into the muffin tin, dividing evenly among the cups.
  • Bake in a preheated oven for 15-20 minutes or until a toothpick inserted comes out clean.

2 eggs
1 cup full-fat greek yogurt
⅓ cup honey
2 teaspoons vanilla extract
2 ½ cups rolled oats
2 teaspoons baking powder
1 pinch salt
1 tablespoon ground cinnamon
1 cup almond milk
¼ cup blueberry, as desired
¾ cup dried cranberries, as desired
sliced almond, as desired
rasberry, as desired

Steps:

  • Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside. (To prevent browning, place grated apples in a bowl and cover with lemon juice and water. Drain before adding to the batter.)
  • Preheat oven to 350°F/180°C.
  • In a large bowl, beat the eggs with a whisk until foamy and pale.

Steps:

  • In a large bowl, combine oats and buttermilk; let stand 5 minutes. Stir in eggs. 1 apple, chopped

Steps:

  • Preheat oven to 425 degrees.
  • Mix together the dry ingredients in a big bowl ( this does not include the apples).
  • In a separate bowl, mix the wet ingredients (this also doesn't include the apples).
  • Pour the wet ingredients into the dry, stir until just moist.
  • Add the apples, stir only until they're well distributed.
  • Pour into greased muffin tins, fill almost to the top (these don't rise much).
  • Bake at 425 degrees for 15 minutes.

1 1/2 teaspoons cinnamon
1 cup apple, finely cubed
1/2 cup raisins
2 tablespoons boiling water

Steps:

  • Preheat oven to 350 degrees. Line a 12 cup muffin pan with liners.
  • In a medium bowl mix the buttermilk and oatmeal together with a fork. Set aside for 10 min; then blend in egg, oil and sugar.
  • Sift together the flours, baking powder, baking soda, salt and cinnamon into a large bowl. Make a well in the center and stir in the oatmeal mixture. Using a wooden spoon to mix the ingredients together until smooth. Do not beat. Stir in apple, raisins and boiling water.

I usually make these in paper-lined muffin tins, cool completely and put into a heavy-duty zip top freezer bag, then rewarm in the microwave.
