CANDY PORK

Candy Pork image

Large chunks of pork shoulder are braised in a Vietnamese-style caramel sauce (made from a combination of fish sauce and palm sugar) that's laced with Thai chilies, ginger, garlic, and shallots. Serve the fork-tender meat with plenty of rice and some sautéed pea shoots or greens.

Provided by Jessica Battilana

Yield 6 servings

Number Of Ingredients 10

8 ounces palm sugar, finely chopped (dark brown sugar can be substituted)
3/4 cup fish sauce
3 tablespoons canola oil
4 pounds boneless pork shoulder, cut into 2-inch-by-3-inch chunks
Kosher salt and freshly ground black pepper
1 cup thinly sliced shallots
1 (2-inch-by-1-inch) piece fresh ginger, peeled and julienned
2 cloves garlic, peeled and crushed
2 to 3 Thai chilies (substitute 1 serrano chile), stemmed and crushed
3 cups coconut water

Steps:

  • Put the palm sugar in a medium heavy-bottomed saucepan over medium-low heat. Cook until the sugar melts, about 8 to 10 minutes, stirring frequently so the sugar doesn't scorch. When the sugar is smooth and completely melted, remove the pan from the heat and slowly stir in the fish sauce. The mixture may seize; if it does, return it to low heat and continue stirring until smooth.
  • Preheat the oven to 300°F. In a large Dutch oven over high heat, heat the canola oil. Season the pork pieces on all sides with salt and pepper. When the oil is hot, add some of the pieces of pork and sear until well browned on all sides, about 8 minutes. Transfer to a rimmed baking sheet and repeat with the remaining pork. When all the pork has been browned, reduce the heat to medium and add the shallots. Cook, stirring, until the shallots are softened, about 2 minutes, then add the ginger, garlic, and chilies and cook 1 minute more. Return the pork and any accumulated juices to the pot and add the caramel sauce and coconut water. The pieces of meat should poke up above the level of the liquid; if they're completely submerged, transfer the meat and liquid to a different pot. Bring to a boil, then reduce the heat so the liquid is simmering. Cover the pot and transfer to the oven.
  • After 15 minutes of cooking, uncover the pot; the liquid should be simmering gently. If it's bubbling too vigorously, reduce the oven temperature to 275°F. Cook for 70 minutes-the meat should be tender but not falling apart. Uncover the pot and continue cooking for 30 minutes more, until the exposed bits of pork are caramelized and the meat is tender. Remove from the oven and serve with steamed rice.

VIETNAMESE/CHINESE PORK CHOPS

Vietnamese/Chinese Pork Chops image

My mom and I developed this recipe together. We call it Vietnamese/Chinese because the fish sauce is from Vietnamese cuisine and 5 spice powder from Chinese cuisine. It is our favorite marinade for pork chops. If you buy your pork chops from an Asian market, let them know what you're cooking. Generally, the thinner the chop, the better.

Categories     World Cuisine Recipes     Asian

Time 8h25m

Yield 6

Number Of Ingredients 17

2 tablespoons brown sugar
2 tablespoons honey
2 tablespoons fish sauce
3 tablespoons vegetable oil
2 tablespoons soy sauce
½ teaspoon Worcestershire sauce
½ teaspoon minced fresh ginger root
1 teaspoon Chinese five-spice powder
1 teaspoon sesame oil
1 teaspoon minced shallot
6 cloves garlic, minced
½ onion, chopped
2 lemon grass, chopped
¼ teaspoon salt
½ teaspoon ground black pepper
6 thin, boneless center-cut pork chops
¼ cup vegetable oil

Steps:

  • Whisk together the brown sugar, honey, fish sauce, 3 tablespoons of vegetable oil, soy sauce, Worcestershire sauce, ginger, five-spice powder, sesame oil, shallot, garlic, onion, lemon grass, salt, and pepper in a bowl, and pour into a resealable plastic bag. Add the pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours.
  • Heat 1/4 cup of vegetable oil in a large skillet over medium-high heat or preheat an outdoor grill for medium-high heat, and lightly oil the grate. Cook until the pork chops are no longer pink in the center, about 4 minutes on each side.

MICHAEL BAO HUYNH'S VIETNAMESE CARAMELIZED PORK

Michael Bao Huynh's Vietnamese Caramelized Pork image

Thit kho to - a sticky-sweet pork dish with funky undertones of nuoc mam - is often served on Tet Nguyen Dan, the Vietnamese New Year and the nation's most important holiday. This recipe is adapted from Michael Bao Huynh, a chef and restaurateur who came to the United States as a refugee in 1982. Thit kho to is traditionally made with pork belly, but it can also be made with pork shoulder butt (as shown in the photo) - a lighter though no less delicious alternative. Serve the meat over a pile of snowy white rice with a bottle of hot pepper sauce nearby.

Provided by Dana Bowen

Categories     main course

Time 45m

Yield 4 servings

Number Of Ingredients 10

1 1/2 cups sugar
2 1/2 pounds pork belly or butt, sliced into thin, inch-long strips
1 tablespoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup fish sauce
2 heaping teaspoons minced garlic
1 dash sesame oil
1 medium Vidalia onion, sliced
4 scallions, sliced, green part only
Rice for serving

Steps:

  • Cover bottom of a large, heavy skillet with one cup sugar and place over medium low heat. As soon as it melts and turns golden, add pork, raise heat to medium, and stir until coated. (Sugar will become sticky and may harden, but it will re-melt as it cooks, forming a sauce.)
  • Stir in remaining sugar, salt, pepper and fish sauce. Cover and cook 2 minutes. Uncover, stir in garlic and oil and lower to simmer to reduce sauce for about 20 minutes.
  • Stir in Vidalia onions and cook until translucent, 5 to 7 minutes. Pork should be caramelized; if not, raise heat and sauté while sauce further reduces. Transfer to serving bowl, and sprinkle with scallion greens.

CLAY POT PORK

Clay Pot Pork image

Provided by John Willoughby

Categories     dinner, weekday, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 11

1/3 cup sugar
3/4 cup chicken stock, more if necessary
3 tablespoons fish sauce
3 shallots, thinly sliced
2 cloves garlic, thinly sliced
2 teaspoons minced ginger
1 teaspoon black pepper
1 small fresh chili, minced optional
3 scallions, trimmed and thinly sliced on the bias, green and white parts separated
1 1/2 pound boneless pork shoulder or pork belly cut into 1-inch cubes
Steamed white rice for serving

Steps:

  • Put the sugar in a medium-size heavy-bottomed pot and cook over medium heat, shaking gently every once in a while, until it starts to melt. Start stirring with a fork and continue, crushing clumps of sugar so that the sugar melts evenly. When the sugar is liquid, continue to cook for another minute or so until it darkens, then remove from heat.
  • Combine the chicken stock and fish sauce and carefully add at arm's length to the sugar (it will splutter and pop). Turn heat to medium high, return sugar mixture to the heat, and cook, stirring constantly, until well combined. (If the sugar clumps when you add the liquid, don't worry, it will melt again.)
  • Add the shallots, garlic, ginger, pepper, chili if using, and the white portion of the scallions. Cook, stirring frequently, until the shallots are nicely softened, 2 to 3 minutes.
  • Add pork to the pot and bring the liquid to a boil. Reduce the heat to low, partly cover and simmer gently, stirring occasionally and adding a splash of stock or water if the pan looks too dry, until the pork is very tender and the liquid has reduced to a medium-thick sauce, about 1 hour.
  • Remove from heat, add the green part of the scallions, and serve over steamed white rice.

VIETNAMESE CLAY POT PORK

Vietnamese clay pot pork image

One of our everyday dish. If you don't have a clay pot, use a normal saucepan, big enough to hold about 1 1/2 lbs. pork and some sauce. I prefer pork tender loin with a bit of fat, but many people like pork shoulder or pork chops. If you use pork chops, change to about 1 3/4 - 2 lbs.

Provided by Nolita_Food

Categories     One Dish Meal

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 12

2 tablespoons canola oil
1/4 cup sugar
2 -3 cloves garlic, minced
2 whole shallots, chopped
1 tablespoon minced ginger
1 -2 chili, chopped
2 tablespoons fish sauce (or change depending on your taste)
1 1/2 lbs pork tenderloin, cubed about 1 1/2 inch in size
1 pinch salt, to taste
1 pinch pepper
4 -6 hard-boiled eggs, peeled (optional)
1/2 cup water

Steps:

  • Put oil in pot or pan over medium heat, add sugar and cook, stirring frequently till it dissolves.
  • Add ginger, garlic, shallots, chili, cook for about 4-5 minutes Turn up the heat to high, add pork, stir till the meat has browned a little, then add water.
  • When it comes to a boil, lower heat to simmer.
  • Cut hard boil eggs in half and put into pot.
  • This step is optional, but the eggs will absorb all the sauce and taste heavenly!
  • Cover the pot and let it simmer.
  • I find the longer you leave it, the better it taste.
  • But after 30-35 minutes it's done.
  • Serve with cooked white rice or basmati, and that's a meal there.
  • Normally we just steam cabbage or water spinach for vegetables.

CLAY POT PORK

Clay Pot Pork image

From Gourmet's "Diary of a Foodie," episode 219, "Vietnam: The Taste of Simplicity." You don't actually need a clay pot to make this; any heavy bottomed saucepan will do. The fish sauce (nam pla) is crucial to get the right flavor; do not attempt to substitute.

Provided by DrGaellon

Categories     Pork

Time 1h55m

Yield 4 serving(s)

Number Of Ingredients 8

1/3 cup sugar
3/4 cup chicken broth or 3/4 cup water
1/3 cup vietnamese fish sauce (nam pla)
3 shallots, thinly sliced
2 garlic cloves, thinly sliced
3 scallions, thinly sliced on the bias with white and green parts kept separate
1 lb trimmed boneless pork shoulder, cut into 1-inch cubes
1 teaspoon finely ground black pepper

Steps:

  • Place sugar in a heavy-bottomed saucepan over medium heat. Allow to remain over heat until fully melted, and approximately the color of a US copper penny.
  • Carefully add broth. It will steam and bubble wildly, and the caramel WILL seize. This is expected, and as you continue to apply heat, the caramel will dissolve back into a nice syrup.
  • Add fish sauce, shallot, garlic, and white parts of scallions. Bring to a simmer until vegetables soften.
  • Sprinkle pork with ground black pepper. Toss to coat, and add to pot. Simmer very low for 75-90 minutes. Serve with rice and top with scallion greens.

VIETNAMESE CLAY POT CHICKEN

Vietnamese Clay Pot Chicken image

This is a delicious and well known Vietnamese dish which you can prepare in your own home. Many traditional Vietnamese recipes are prepared in a clay pot, which is first soaked in water before being placed in a cold oven. As the pot heats up in the oven, tiny water particles are released, causing a pressure-steaming effect to cook the food. The result? Intensified flavour and tenderness, retention of nutrients and vitamins, and a wonderful aroma when the lid is removed. If using your clay pot for the first time, submerge it and the lid overnight in cold water, then proceed with the recipe. Thereafter the pot and lid need only be soaked for 15 minutes prior to using. It is important to use an unglazed clay pot, not a terra cotta baking pot with glazed interior and unglazed exterior. When removing the hot clay pot from the oven, always set it on a cloth pad or towel rather than a cold surface, or the sudden change in temperature may crack the pot. Preparation time for this recipe does not include soaking the pot or the time needed to marinate the chicken.

VIETNAMESE BRAISED PORK IN COCONUT

Vietnamese Braised Pork in Coconut image

Take note that this Vietnamese classic pork dish uses coconut juice, not to be confused with coconut milk. Your local Asian market should carry this product. The addition of hard-cooked egg as a garnish is a good way to introduce extra protein. From "Home Cooking Around The World."

Provided by Xexe383

Categories     Lunch/Snacks

Time 2h10m

Yield 4 serving(s)

Number Of Ingredients 10

2 tablespoons sugar
3 tablespoons cold water
1 (14 ounce) can coconut juice (See Note)
3 tablespoons vietnamese fish sauce (nuoc mam)
4 shallots, thinly sliced
2 tablespoons chopped fresh ginger
1/2 teaspoon Chinese five spice powder
1/4 teaspoon black pepper
4 hardboiled egg, peeled and cut into wedges
1/2 lb pork shoulder, with some fat,cut into 1 inch cubes

Steps:

  • In a clay pot or large saucepan, stir together the sugar and water.
  • Over low heat, cook until it's a golden color, 5 to 10 minutes; watch closely, since as soon as the color begins to change, the sugar mixture can darken very quickly and burn.
  • Remove from heat.
  • Carefully stir in the coconut juice and fish sauce-- there may be a little spattering.
  • Return to very low heat and stir until well blended, scraping up any caramelized pieces stuck to bottom of pan.
  • Stir in the pork.
  • Then stir in the shallots, ginger and five-spice powder.
  • Simmer, partially covered, until pork is very tender, about 2 hours, stirring from time to time and checking to make sure liquid is not simmering too hard.
  • When done, stir in the pepper.
  • To serve, bring the clay pot to the table and serve from that, or spoon the stew into bowls.
  • Garnish with the wedges of hard-cooked egg.
  • Note: Do not substitute coconut milk.
