Categories     Dessert

Time 22m

Number Of Ingredients 14

3/4 cup salted butter (not too soft (1 and 1/2 stick))
1 & 1/2 cups dark brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
1 cup all purpose flour (spooned and leveled)
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup old fashioned oats
1 & 1/4 cup quick oats
1 cup dried tart cherries (coarsely chopped)
4 ounces bittersweet chocolate (3/4 cup, chopped)
1 cup pecans (toasted and chopped)
dark chocolate chips (to top cookies)

Steps:

  • Preheat oven to 350 degrees F. Prepare baking sheets with parchment paper or silicone baking mats.
  • Let your butter sit out of the fridge for like 10-15 minutes.
  • In a large bowl or stand mixer, beat together the butter and brown sugar until lighter and fluffy, about 1-2 minutes. Scrape down the sides and bottom of the bowl.
  • Add the egg and vanilla extract. Beat well.
  • Add 1 cup of flour to the bowl but don't mix it in. Use a small spoon to stir the baking powder, baking soda, and salt into the flour. Then use the spoon or mixer to mix in the flour until it is not quite combined.
  • Add the old fashioned oats, quick oats, cherries*, chocolate, and chopped pecans.
  • Gently fold in the mix ins. Make sure all the flour streaks are gone. Don't over mix, once it comes together you're good to go.
  • Fill a 1/4 cup measuring cup with dough. Shape the dough into balls and place them on the cookie sheet. You can only fit about 8 cookies per sheet. Make sure there are about 2 inches in between the cookies.
  • Bake at 350 for about 12-13 minutes, or until the edges are set. There can be a little bit of shine in the center of the cookie, but it shouldn't look completely shiny.
  • Top immediately with dark chocolate chips.
  • Let the cookies cool on the rack for about 5 minutes, then remove them to a cooling rack.

OUTRAGEOUS OATMEAL (FLOUR) CHOCOLATE CHIP COOKIES

OUTRAGEOUS Oatmeal (flour) Chocolate Chip Cookies image

In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

  • With electric mixer, blend butter with both sugars, egg and vanilla extract.
  • Add dry ingredients to mixture- blend well.
  • Stir in chocolate chips.
  • Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).

DARK CHOCOLATE NO BAKE COOKIES

Dark Chocolate No Bake Cookies image

These cookies are an old childhood favorite. I changed the ingredients over the years and use Hershey's special dark cocoa and madagascar bourbon vanilla. I also eliminated the nuts (do to a nut allergy in our house) and I use 1% milk. Neither 1% or fat free milk interfere with the texture of these awesome cookies!

Add the eggs and mix on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla and molasses and mix on high until combined. Set aside.
  • In a separate bowl, whisk the flour, baking soda, cinnamon, and salt together. Add to the wet ingredients and mix on low until combined. Beat in the oats and chocolate on low speed. Dough will be thick, yet very sticky. Chill the dough for 30-60 minutes in the refrigerator (I always chill this dough for only 30 minutes). If chilling for longer (up to 2 days), allow to sit at room temperature for at least 30 minutes before rolling and baking. The cookies won’t spread as much if chilled for longer than 1 hour.
  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Roll balls of dough (about 1 and 1/2 Tablespoons of dough per cookie) and place 2 inches apart on the baking sheets. I recommend using a cookie scoop since the dough can be sticky. Bake for 11-12 minutes or until lightly browned on the sides. The centers will look soft and under-baked. Remove from the oven, immediately sprinkle each with sea salt (if using), then let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will continue to “set” on the baking sheet during this time.

  • Add the coconut oil, brown sugar, vanilla extract and egg to a large mixing bowl. Cream them together until smooth. If you have a stand mixer (fan-cay!), you may use it. You can also use an electric hand mixer, or a regular old whisk. Just make sure that you get the mixture as smooth as possible. You may notice there are some lumps of coconut oil. I recommend using a spatula to smoosh them. (I know that “smoosh” is not proper culinary terminology, but you know what I mean.)
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and ½ teaspoon of sea salt.
  • Stir the flour mixture into the coconut oil/sugar mixture until just combined. Add the oats, chocolate chunks, cherries and pecans (if using) and mix until well incorporated.
  • Cover the dough with plastic wrap and pop it in the freezer for at least 20 minutes. Yes, you can skip this step, but your cookies will end up slightly less thick, and that’s on you.
