Steps:
- Combine all the ingredients for the BBQ Blend.
- In a shallow glass or ceramic casserole whisk together the beer, sugar, salt, oil, vinegar, tarragon, allspice berries, and several grinds of the All-American BBQ Blend. Mix well and add the pork chops, massaging and turning them once in the marinade to coat well. Cover and place in the refrigerator for 4 to 5 hours, turning once half way through.
- Remove the meat about 30 minutes before putting on the barbeque to come up to room temperature. Place the apple wood chunks and rosemary sprigs on to soak and start about 15 pounds of charcoal. Place a hotel pan with water in it under the grill where the meat will be smoking to add moisture to the smoke and catch the drips of fat. When the coals are good and white hot, and you have blown on them a few times to stoke the fire, spread them out and add a few drained wood chunks at a time to the hot coals. Be careful not to put the fire out. You should start with only half of the total amount of wood chunks. Stoke the fire some more and close the top to the BBQ. Open the flue and chimney cap.

Steps:
- Whisk the eggs in a pie plate to blend. Place the bread crumbs in another pie plate. Place the cheese in a third pie plate. Sprinkle the pork chops generously with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.
- Heat 3 tablespoons of oil in a very large skillet over medium heat. Add pork chops, in batches if necessary, and cook until golden brown and the center reaches 150 degrees, about 6 minutes per side. Transfer the chops to plates and serve with lemon wedges.
CANADIAN PORK LOIN CHOPS
I came up with this recipe as I love maple and mustard. We wanted to add more flavor and not dry out the boneless loin chops. Spice rub marinade, lightly breaded with a maple-mustard glaze, and cooked in garlic-flavored oil - a great Canadian recipe! This is also great on the BBQ. Perfect with roasted potatoes and a coleslaw.

Steps:
- Whisk brown sugar, sea salt, 1/2 teaspoon garlic powder, onion powder, 1/2 teaspoon paprika, 1/4 teaspoon black pepper, dry mustard, and fennel seeds together in a small bowl.
- Pat pork loin chops dry with a paper towel. Score the meat on both sides, 1/8-inch deep in cross-hatch lines spaced 1/2-inch apart, with a sharp knife; rub spice mixture onto all sides of pork chops and into scored lines. Cover chops; refrigerate for 4 to 6 hours.
- Whisk maple syrup, brown mustard, pinch of garlic powder, pinch of paprika, pinch of black pepper, and cayenne pepper together in a small bowl; set aside.
- Coat pork chops on all sides with seasoned bread crumbs.
- Heat olive oil and canola oil in a large skillet over medium-high heat. Stir garlic into pan, and cook until lightly browned and fragrant, about 1 minute; remove garlic from pan and discard.
- Place pork chops into skillet in batches to avoid crowding; cook chops until lightly browned, 2 to 3 minutes per side. Return all pork chops to skillet; reduce heat to medium. Drizzle half the maple syrup mixture over pork chops. Turn chops and cook until glazed, 1 to 2 minutes. Drizzle remaining maple syrup mixture over pork chops; turn and cook until glazed, 1 to 2 minutes.
- Reduce heat to low; cover pork chops and cook until slightly pink in the center, about 5 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

BREADED CENTER CUT PORK CHOPS
I usually prepare this recipe for 300 plus senior citizens where I work, but I've scaled it down for home use. The recipe is for freshly seasoned and breaded pork chops that come out nice and moist.

Steps:
- - For this recipe I used a 6-qt crock pot that comes equipped with a meat thermometer that plugs into the unit and provides continuous monitoring of the meat temperature. (See "BACKGROUND" below for further explanation.) I also used a metal oval cooking rack that fits perfectly into the crock pot which raises the roast up and keeps it from sitting in the liquid at the bottom of the pot. To simplify cleaning I also used a disposable slow cooker liner.
- - BACKGROUND: We have been using crock pots to cook beef and pork roasts for more than 40 years. We would always follow the recommended cooking times of 8 to 12 hours on LOW heat. (I believe the instructions for today's newer crock pots have lowered the recommended cooking time down to about 6 to 10 hours.) But the roast always turned out tough and dried out regardless of how much spice, sauces, and liquids were added or not added to the meat. We now know this long duration cooking just removed all the meat's nutrients and natural flavors. This is why they all came out tasting about the same with that proverbial "crock pot flavor/aftertaste". So we invested in a crock pot that has an attached meat thermometer which continuously monitors the meat temperature then shuts the cooker off when the correct temperature is reached. This way you are not always removing the lid to use a hand-held meat thermometer which also adds to the cooking time due to the loss of heat, or so says the owner's manual. Now back to the cooking instructions.
- - Place the roast on the cooking rack and pour the 13 ounces (1 1/3 cups) of pre-packaged slow-cooker sauce of your choice over the meat. In this recipe I used a 2.5 pound boneless pork loin center cut.
- - Place the lid on the crock pot and insert the attached meat thermometer through the access hole in the lid into the thickest part of the roast and turn the heat onto LOW.
- - This particular crock pot took 2 hours and 45 minutes to raise the meat's internal temperature from 32 degrees to 140 degrees. Upon reaching 135 to 140 degrees immediately remove the roast and wrap it in aluminum foil and allow it to rest for 15 to 30 minutes. The meat will continue to cook and redistribute its nutrients and natural flavors. (If you use a hand-held meat thermometer when you first remove the roast from the slow cooker you will see the smaller end pieces are already past 145 degrees. Serve these sections to your guests who like their meat well done and dried out.).
- - Now remove the metal cooking rack from the crock pot but leave it on LOW in order to keep the sauce at the bottom hot.
- - Skim off any fat that may be floating on top of the sauce and then stir it up.
- - Slice the roast to the thickness desired and spoon the sauce over the slices.
- - Now ENJOY!

BAKED BACON-WRAPPED CENTER-CUT PORK CHOPS
We get these beautiful little 4 ounce bacon-wrapped center-cut pork chops in our meat order each month. This is Elswet's recipe for the perfect baked chop, and it is written for 2. The Ingredients list will undoubtedly state 8 ounces of pork chop because I've never been able to master this submitting a recipe thing. I've tried it without any marination time, and you can DEFINITELY tell the difference. It's not horrible, but it's nowhere near as good. DO NOT allow the pan to be rattled. You want the onions and apples to remain loosely piled atop the chops. It acts as a natural basting process as these cook and the juices run into the meat. I've never had apples with pork before, but it's fantastic! We hope you enjoy these like we do! NOTE: The pictured photo submitted by me was accomplished using this recipe served on a bed of my own "Better Than Instant, Instant Stuffing."

Steps:
- Wrap your center cut pork chops with bacon and fix into place. Line a loaf pan with aluminum foil and grease the bottom with a tiny bit of oil or cooking spray. Place your chops into the center of the pan, neither touching the sides, nor one another.
- Directly onto each chop, deposit 1/4 teaspoon no MSG unseasoned meat tenderizer, flip chop and repeat. Both sides are now tenderized and oiled. Add thyme, salt, pepper, sage, ground celery seed, and garlic.
- Using a medium grater, grate small onion equally right onto each chop, repeat with small apple. Split white wine vinegar and Worcestershire sauce evenly, pouring over onion and apple.
- Cover and let marinade in refrigerator overnight if possible. 4 hours should do the trick, if you don't have the time.
- Preheat oven to 350°F and bake, covered, for 1 1/2 hours. When done, the apple and onion should still be on top of the pork chop. Leave them as garnish and remove to serving plate. Serve hot over a bed of pork dressing. Enjoy!
