SPICY CAYENNE TOASTS WITH SUN-DRIED TOMATO SPREAD
From the "California Sizzles" cookbook. A California twist on tapenade and a little "kick" to boot. On my list of appetizers to try. Prep times does not include refrigeration time.

Steps:
- Prepare the sun-dried tomatoes if dried. To re-hydrate sun-dried tomatoes, place them in boiling water for 5 minutes, then drain.
- Place the tomatoes and remaining ingredients; except goat cheese, in a container and refrigerate for 4 hours. Process in a food processor until smooth.
- Prepare cayenne toasts by preheating oven to 200 degrees F. Combine ingredients, other than bread, in food processor, mixing well. Lay bread slices on a cookie sheet. Brush tops lightly with spread. Cook 1 hour until crisp. Cool.
- To serve, place sun-dried tomato spread on cayenne toasts and top with a sprinkle of goat cheese.
GIANT GARLIC-CILANTRO TOASTS

Steps:
- Place the butter, cheese, salt, black pepper, cayenne pepper and garlic in a processor. Process until well blended, scraping down the sides of the bowl occasionally. Add the cilantro and green onions. Process with on/off turns until just combined (do not puree the cilantro or onion).
- Preheat the oven to 375 degrees F.
- Cut the bread crosswise into as many slices as needed, each should be 1/2-inch thick and 7 to 8 inches long. Arrange the bread slices directly on the oven rack. Bake until the slices are crusty outside but still soft inside, 10 to 12 minutes. Transfer the bread to a large rimmed baking sheet. Spread 1 tablespoon of the seasoned butter on each slice. Bake the toasts until very hot and crisp, 10 to 12 minutes. Serve hot.
CRAB WITH DILL ON CAYENNE TOASTS

- Make toasts:
- Preheat oven to 350°F.
- Stack bread slices and cut off crusts. Quarter slices to make twenty-four 1 1/2-inch squares and arrange squares on a baking sheet. In a small saucepan melt butter and stir in cayenne and salt. Brush tops of squares with butter mixture and bake in middle of oven until pale golden, about 10 minutes. Cool toasts on a rack. Toasts may be made 1 day ahead and kept in an airtight container at room temperature.
- Make crab:
- Pick over crab meat to remove any bits of shell and cartilage (being careful not to break up lumps). In a small bowl stir together remaining ingredients with salt to taste and gently stir in crab. Crab mixture may be made 6 hours ahead and chilled, covered.
- Just before serving, mound about 1/2 tablespoon crab mixture on each toast and garnish with dill.
CRUNCHY CHEESE TOASTS
This is an easy Taste of Home recipe that my family really likes. I love the zing from the cayenne and will sometimes use pepper jack cheese if I want a little more heat. I like to serve this with a bowl of soup.

- Slice the bread about 1/2" thick and place on an ungreased baking sheet.
- Combine the oil, thyme and cayenne in a bowl; whisk to blend and brush on the bread slices.
- Sprinkle with cheese and bake at 300 degrees until the bread is golden brown and the cheese is melted and bubbly.
- Serve immediately.
PARMESAN-BLUE CHEESE TOASTS WITH GREEN ONIONS

- Combine mayonnaise, garlic, ground pepper, and cayenne pepper in medium bowl and whisk to blend. Mix in cheeses; season with salt. (Can be made 2 days ahead. Cover and refrigerate.)
- Preheat oven to 400°F. Brush 1 side of each bread slice with oil. Place oiled side down on large rimmed baking sheet. Bake bread slices until almost golden, about 5 minutes. Spread 1 generous tablespoon cheese mixture on each bread slice on sheet. Bake until cheese topping starts to bubble and toasts are golden at edges, about 10 minutes.
- Transfer toasts to large platter. Sprinkle with chopped green onions and serve warm.
RED PEPPER ROUILLE AND SHRIMP TOASTS

- Preheat oven to 425°F. Finely chop garlic cloves with cayenne pepper and saffron in mini processor. Add roasted red pepper and vinegar to processor; blend until almost smooth. Blend in mayonnaise. Season rouille to taste with salt and pepper.
- Transfer 1/3 cup rouille to medium bowl. Add shrimp and toss to coat. Arrange sourdough baguette slices on baking sheet. Spread each slice with rouille. Bake until bottoms of toasts are crisp and rouille is darker in color, about 10 minutes.
- Heat large nonstick skillet over medium-high heat. Add shrimp, spreading in single layer. Cook until just browned and opaque in center, about 2 minutes per side. Arrange toasts on plate. Place 2 shrimp on each toast; sprinkle toasts with capers.
EASY SPICY PARMESAN TOASTS
These are a favorite in my house, they are incredibly easy to make and so good!. A good olive oil and Parmesan cheese is a must with this. Purchase the long narrow French baguette for this and make certain that it is a day old, it makes slicing easier. I have even made these using melted butter in place of olive oil, and added in some garlic powder with the cayenne/cheese mixture. If you like super spicy just increase the cayenne slightly. These make a great late-nite or weekend snack! Yield is only estimated depending on the size of the baguette.

- Set oven to 375 degrees (oven rack to second-lowest position).
- Prepare a one or two large baking sheets.
- Slice the baguette into 1/4-inch slices and arrange in a single layer on baking sheet/s.
- brush one side with olive oil and sprinkle with salt.
- Bake for 8-10 minutes.
- Toss the cheese with the cayenne pepper.
- Remove the toasts from oven and sprinkle with the cheese/cayenne mixture.
- Place back into the oven and bake for 6-8 minutes more, until the cheese melts and the toasts are golden.
- Cool completely.
