BAKED CAVATAPPI WITH SAUSAGE

- Preheat the oven to 500˚ F. Bring a large pot of salted water to a boil. Add the pasta and cook 2 minutes less than the label directs for al dente. Reserve 1 cup cooking water, then drain.
- Meanwhile, cook the sausage in 1 tablespoon olive oil in a large skillet over medium-high heat, breaking up the meat, until browned, 5 to 6 minutes. Remove to a plate using a slotted spoon.
- Heat 1 more tablespoon olive oil in the skillet over medium-high heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and herbes de Provence and cook 30 seconds. Stir in the tomatoes, sausage and 1/4 cup of the reserved cooking water; season with salt and pepper. Bring to a gentle boil, then reduce the heat and simmer until thickened, 3 to 5 minutes. If the sauce is too thick, add a bit more cooking water. Stir the pasta into the sauce.
- Whisk the ricotta, 1/4 cup cheese blend, the lemon zest, 1/2 teaspoon each salt and pepper and 3 tablespoons cooking water in a bowl. Layer half of the pasta and ricotta mixture in an 8-inch square baking dish, then top with the remaining pasta, ricotta mixture and cheese blend. Bake until bubbly, 8 to 10 minutes.
- Toss the lettuce with the lemon juice and remaining 2 tablespoons olive oil; season with salt and pepper. Serve with the pasta.
CARRABBA'S CAVATAPPI AMATRICIANA (SIDE DISH PASTA)
This is an approximate verision of Carrabba's. This is served in the restaurant as a side dish but would be just fine as a main dish when pancetta is added in. Cavatappi pasta is a short tubed corkscrew or S-shaped pasta. It can be hard to find but I was able to find it called "Twists" by the pasta brand DaVinci (blue bag).

- Cook cavatappi according to package directions; drain.

- Add white wine and cook till nearly evaporated.

- Taste, and add salt and pepper as desired.
- Mix into cooked cavatappi.
- Toss with cheese.
- Add cooked pancetta (optional).

Steps:
- 1. Boil pasta, drain. Set aside. Meanwhile, sauté onions, garlic and red pepper flakes in oil over medium heat til onions are soft.
- 2. Add white wine and cook until nearly evaporated. Stir in tomatoes with their juice plus a little water (to clean out the can) till slightly thickened. ( 3 to 5 minutes)
- 3. Taste and add salt and pepper to your liking.
- 4. Add drained pasta, toss with cheese and pancetta, if using.

- Make the sauce by melting 1 tablespoon of butter over medium heat in a large sauce pan. Once completely melted add pancetta and cook until a light golden brown, about 5 minutes. Stir in onions and garlic and cook for 8 minutes or until it becomes a rich, deep golden color. Make sure to occasionally stir while cooking the pancetta and onions.
- While the onions are cooking, crush or chop the whole tomatoes from the can, do not discard the juices. Add them into the sauce pan along with the leftover juice from the can. Stir in one cup of water and hot pepper flakes. Bring to a boil, once boiling reduce heat to medium-low and simmer for 20 minutes. Remove from heat and stir in the remaining 2 tablespoons of butter. Season with salt to taste.
- Cook noodles according to package directions. Drain and return pasta to cooking pot. Add the sauce and Romano cheese, stir until combined.
