POTATO NESTS WITH PEAS, HAM AND CREAM CHEESE

Potato Nests with Peas, Ham and Cream Cheese image

This elegant appetizer comes together easily with simple, time-saving ingredients. Frozen hash browns are pressed into mini muffin tins and baked into crispy nests filled with ham, lemony cream cheese, and peas. Serve them at your Easter dinner or spring cocktail party.

Provided by Food Network Kitchen

Categories     appetizer

Time 1h5m

Yield 36 nests

Number Of Ingredients 10

Nonstick cooking spray
2 thick slices deli ham (about 4 ounces total)
16 ounces (about 3 1/2 cups) frozen shredded hash browns, thawed (about half of a 30-ounce bag)
Kosher salt and freshly ground black pepper
8 ounces cream cheese, at room temperature
Finely grated zest of one lemon
2 tablespoons milk
1/4 cup frozen peas
2 tablespoon chopped chives (1/2-inch pieces)
Paprika, for serving

Steps:

  • Position two racks in the top and bottom thirds of the oven and preheat to 425 degrees F. Spray a 12-cup and a 24-cup mini muffin tin with cooking spray and set aside.
  • Cut the ham into small matchsticks similar in size to the hash browns. Set aside and reserve 1/3 cup of the ham. Mix the remaining ham, hash browns, 1 teaspoon salt and some pepper in a large bowl. Divide the mixture evenly among the sprayed cups, using about 1 rounded tablespoon each. Press the mixture in a thin layer across the bottom and up the sides of each cup to make a nest, leaving the edges uneven and jagged.
  • Bake, rotating the pans halfway through, until the nests are dark brown around the tips and golden and crisp on the outside, about 25 minutes.
  • Meanwhile, beat the cream cheese, lemon zest, milk 1/2 teaspoon salt, and some pepper together in a medium bowl with an electric mixer on medium-high speed. Scrape the mixture into a resealable plastic bag, cut off the tip and set aside.
  • When the nests are ready, remove them from the oven and let sit until they are cool enough to handle, about 10 minutes. Carefully lift the nests out of the tins using a small offset spatula or butter knife and transfer to a cookie sheet. Pipe the filling evenly among the nests. This may be done ahead; the nests can be set aside at room temperature until ready to serve, up to two hours.
  • When ready to serve, heat the filled nests until the cream cheese is warm and the potatoes are crisp, about 7 minutes. Meanwhile, bring a small pot of water to a boil. Add the frozen peas and cook until they are warm but not shriveled, 5 to 6 minutes. Drain the peas in a colander, shaking to remove excess water.
  • Transfer the nests to a serving platter. Top each with 1/4 teaspoon of the reserved ham, 3 peas and about 1/4 teaspoon chopped chives. Sprinkle with paprika and serve immediately.

HAM & MUSHROOM POTATO NESTS WITH FRIED QUAIL'S EGGS

Ham & mushroom potato nests with fried quail's eggs image

Brunch with a difference, bake these addictive, mini spiralized potato nests ahead of time then crack in the eggs and cook when your guests arrive

Provided by Sophie Godwin - Cookery writer

Categories     Breakfast, Brunch

Time 55m

Yield Serves 12, as a snack or canapé

Number Of Ingredients 7

10g butter , plus extra for greasing
200g chestnut mushrooms , sliced
2 garlic cloves , crushed
500g waxy potatoes , peeled, ends trimmed and spiralized into thin noodles
120g pack of ham , torn into pieces
125g ball mozzarella , drained and grated
12 quail's eggs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Generously grease 12 holes of a non-stick muffin (or cupcake) tin with butter.
  • Heat the butter in a frying pan over a medium to high heat. Add the mushrooms. Fry for 4-5 mins until they begin to brown. Stir in the garlic, cook for 1 minute, then tip the mushrooms into a large bowl. Stir in the potato, ham and mozzarella. Season with salt and pepper.
  • Divide the mixture among the muffin holes and bake in the oven for 25 mins or until golden brown. Remove from the oven and run a cutlery or palette knife around the edges of the nests to make sure they are not sticking to the pan. Then use the back of a teaspoon to press down the centre of each to make an indent large enough to hold a quail's egg. Crack a quail's egg into each nest and return to the oven for 8-10 mins, until the egg white is set and the yolk runny. Cool in the tin for 1-2 mins, then carefully lift out with a palette knife.

I must confess that I didn't make mine in muffin cups--I just used an 8 1/2 x 11" pan for the hash browns and egg and added the cooked bacon at the end. This is a simple recipe kids could help make. If you don't have savory seasoned hash browns--add your own seasonings. Recipe courtesy of Ore-Ida Foods.

Provided by Brandi Milloy

Categories     side-dish

Time P1DT1h

Yield 4 servings

Number Of Ingredients 3

Vegetable oil, for frying
1 large russet potato
Kosher salt

Steps:

  • Fill a large, heavy-bottomed pot with about 4 inches of oil. Heat the oil to 350 degrees F over medium heat.
  • Peel the potato and grate it with a mandoline, making strings about 2 millimeters thick. Rinse the potato strings in a strainer under cold running water. Line a baking sheet with paper towels and spread the potato strings on the towels. Top with more paper towels to dry.
  • Place the potato strings in a spider strainer, filling the bottom and going up the sides creating a "nest." Place a slotted spoon on top of the strainer to keep the potato strings in place and carefully lower the strainer and spoon together into the hot oil. Fry until golden brown, 3 to 4 minutes. Drain on a baking sheet lined with a paper towel. Sprinkle with salt. Continue with the remaining potato strings.

POTATO NESTS WITH SAUTEED SHIITAKE MUSHROOMS

Potato Nests with Sauteed Shiitake Mushrooms image

Yield Serves 6

Number Of Ingredients 9

3 large russet (baking) potatoes
vegetable oil for deep-frying the nests
a 3 3/4-inch potato nest fryer
coarse salt for sprinkling the nest
1/2 stick (1/4 cup) unsalted butter
1 pound fresh shiitake mushrooms, stems discarded and the caps sliced thin
1/4 cup medium-dry Sherry
2 tablespoons heavy cream
2 tablespoons finely chopped fresh parsley leaves

Steps:

  • Peel the potatoes, transferring them as they are peeled to a bowl of cold water, and grate them coarse, returning them as they are grated to the bowl of water. Drain the potatoes well and pat them dry thoroughly with paper towels. In a deep-fat fryer or deep kettle heat 4 inches of the oil until it registers 375°F. on a deep-fat thermometer. Dip the larger basket of the potato nest fryer into the oil, remove it, and line the bottom and side with some of the potatoes, being careful not burn your fingers. Dip the smaller basket into the oil, press it into the potato-lined larger basket, and clamp the basket handles together firmly. Plunge the fryer into the oil and fry the potato nest for 1 to 3 minutes, or until it is crisp, golden, and cooked through at the bottom. Remove the fryer from the oil, detach the larger basket, and let the potato nest cool on the smaller basket for 3 minutes. Using a small sharp knife, pry off the potato nest carefully from the smaller basket, inserting the knife tip between the wires to loosen the nest. Make 5 more nests in the same manner with the remaining potatoes, sprinkle all the nests with the salt, and keep them warm. The nests may be made 3 hours in advance and reheated in a 350°F. oven.
  • In a large skillet heat the butter over moderately high heat until the foam subsides and in it sauté the mushrooms, stirring, until they are tender. Stir in the Sherry, boil the mixture for 1 minute, or until the liquid is evaporated, and stir in the cream, the parsley, and salt and pepper to taste.
  • Divide the mushroom mixture among the potato nests.

  • Preheat oven to 200C (390F) fanbake. Lined a 12 hole muffin pan with a little square of baking paper in the bottom of each hole, and lightly brush each hole with olive oil.
  • Grate the potatoes onto a clean tea towel, then use the tea towel to wring out all the excess moisture over your kitchen sink. Quite a surprising amount of liquid will be released. Tip the grated potato into a mixing bowl and sprinkle over the rice flour, salt and a good grind of black pepper. Stir to coat everything evenly, then press the potato mixture evenly into the greased muffin pan. Make a little depression in the middle of each - all the better to hold the aioli which will come later.
  • Bake for 20-25 minutes, until golden brown and crisp. Remove from the oven and pop each potato nest out onto a serving platter.
  • Top each potato nest with about 1 tsp of eggless aioli (or aioli/mayonnaise of your choice), and matchsticks of beetroot, radish and apple. Sprinkle freshly grated lemon zest over the top, and garnish with a sprig of fresh thyme.
