Everyone's favourite side dish, using mature cheddar and a hint of onion for extra flavour - the perfect accompaniment to a roast

100g mature cheddar, grated
50g fresh white breadcrumbs
handful flat-leaf parsley, roughly chopped
1 large cauliflower, cut into florets
1l full-fat milk, plus a splash
1 small onion, halved
85g butter
85g plain flour

Steps:

  • In a small bowl, mix the cheese with the breadcrumbs and parsley, and set aside. Put the cauliflower florets in a large saucepan, cover with water and a splash of milk (this stops the cauliflower smelling) and bring to the boil. Cook for 2-3 mins until tender, then drain.
  • In a separate saucepan, pour in the milk, add the onion and some seasoning, bring to the boil, then take off the heat. In a small saucepan, make a roux by melting the butter slowly, then adding the flour, stirring to make a paste. While still over a low heat, add the boiled milk, discarding the onion. Using a whisk, beat the milk together with the roux and bring to the boil. Cook for 2 mins until the sauce is lovely and thick - make sure the heat is not too high, otherwise it will catch on the bottom and burn.
  • Heat oven to 200C/180C fan/gas 6. Transfer the cooked cauliflower to a casserole dish, pour over the sauce and top with the cheese and breadcrumb mix. Bake in the oven for 20 mins until golden and bubbling.

1 tsp Butter
1 tsp Olive Oil
2 tsp Garlic (Minced)
1/4 cup Onion (Chopped)
1 head Cauliflower (Medium Size)
2 cups Vegetable Broth
Milk (As required)
1/4 cup Cheddar Cheese (Grated)
1/4 cup Gouda Cheese (Grated)
Salt to taste
1/2 tsp Freshly Cracked Black Pepper

Steps:

  • Heat butter and olive oil in a pan.
  • Add garlic and fry for a minute.
  • Add onion and fry until it turns slightly pinkish in colour.
  • Now add cauliflower florets and saute for a minute.
  • Add vegetable broth and cover and cook the cauliflower for 7-8 minutes.
  • Remove the pan from heat and let it cool.
  • Transfer the ingredients in a blender and blend to make a smooth sauce.
  • Transfer the sauce back in the pan.
  • Add milk to thin the sauce as required.
  • Add cheddar cheese and gouda cheese and cook until the cheese melts and sauce is nice and cheesy.
  • Now add salt to taste and black pepper and mix well.
  • Use the sauce as required.

1 large cauliflower (leaves cut off), broken into pieces
500ml milk
4 tbsp flour
50g butter
100g strong cheddar, grated
2-3 tbsp breadcrumbs, if you have them

Steps:

  • Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
  • Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
  • Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
  • Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
  • Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
  • Put in the oven and bake for 20 mins until bubbling.

Any strong-flavored cheese will work in this recipe, such as cheddar, but if you are looking for an authentic Dutch flavor, choose either Edam or Gouda. The servings, cook & prep time are estimates.

4 ounces cheese, grated
1 head cauliflower
2 tablespoons butter
2 tablespoons flour
1 cup milk
1 pinch salt
1 pinch black pepper
1 pinch nutmeg, fresh grated if possible

Steps:

  • Remove the leaves from the cauliflower, rinse it well and then cut out the core. Cut the rest into four pieces.
  • Bring a large pot of salted water to a boil and then add the cauliflower. Cook for 5-6 minutes, or until tender. Drain and put it into an ovenproof casserole dish.
  • Meanwhile, melt the butter in a saucepan, over low heat.
  • Add the flour and stir with a wooden spoon to make a smooth paste.
  • Cook the mixture gently for a minute, then take the pan off the heat.
  • Stir in the milk, a little at a time.
  • Return the pan to the heat and let it cook on low for 5-10 minutes, stirring occasionally.
  • Stir most of the grated cheese into the saucepan to melt. Season it with pinches of the salt, pepper and nutmeg.
  • When the sauce has melted, pour over the cauliflower and sprinkle the reserved cheese on top.
  • Place under the broiler for a few minutes and until the top starts to bubble and brown.

This is my easy cauliflower cheese, super simple and its gluten free too. Less effort, less washing up but still with creamy, cheesy flavour!

1 medium cauliflower (broken into small florets)
240 ml (1 cup) double (heavy) cream
150 g (1 1/2 cups) Mature/strong Cheddar cheese, ( grated (use a vegetarian version if required))
1/4 tsp salt
1/2 tsp black pepper
1 tbsp fresh parsley (finely chopped)

Steps:

  • Preheat the oven to 200C/400F.
  • Bring a pan of water to the boil
  • Place the cauliflower florets in a steam basket over the top and place a lid on the pan, or place the cauliflower directly in the boiling water if you don't have a steam basket.
  • Turn the water down to a simmer and simmer for 5 minutes until the cauliflower is tender but not soggy.
  • Drain the cauliflower.
  • Pour 2 tbsp of the cream in a baking dish and sprinkle on 2 tbsp of the grated cheese.
  • Add half of the cauliflower, then top with half of the remaining cream and quarter of the remaining cheese.
  • Sprinkle on half of the salt and pepper.
  • Top with the remaining cauliflower, then pour on the remaining cream. Sprinkle on the rest of the cheese, salt and pepper.
  • Place in the oven for 15-20 minutes until the cheese is golden and bubbly.
  • Remove from the oven and sprinkle with the chopped parsley before serving.

1 head cauliflower, broken into large florets
40g/1½oz butter
40g/1½oz plain flour
400ml/14fl oz milk
1 tsp English mustard
100g/3½oz mature cheddar, grated
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 190C/170C Fan/Gas 5.
  • Wash the cauliflower thoroughly and place in a large saucepan of salted water. Bring to the boil and cook for 3-5 minutes, until the cauliflower is almost tender, but still fairly firm. Tip into a colander and leave to drain.
  • To make the sauce, melt the butter in a heavy-based saucepan and stir in the flour. Cook over a gentle heat for 1 minute. Remove the pan from the heat and gradually add the milk, a little at a time, stirring well between each addition. Return the pan to a medium heat and bring the mixture to the boil, stirring constantly. Simmer for 2 minutes, then remove from the heat. Stir in the mustard and two thirds of the cheese and set aside.
  • Arrange the cauliflower in an ovenproof baking dish. Carefully pour over the sauce, ensuring the cauliflower is completely covered. Scatter over the remaining cheese and bake for 25-30 minutes, until the top is golden brown and bubbling.
